This quick and easy one-pan pork tenderloin and roasted butternut squash will have your weeknight dinner done in no time and hassle free!

3 tablespoons olive oil, divided
2 tablespoons honey
2 teaspoons salt, divided
2 teaspoons dried sage, divided
1 teaspoon ground black pepper, divided
1 pork tenderloin
5 cups (1-inch) cubes peeled, seeded butternut squash
2 Granny Smith apples, cut into 1-inch wedges
1 white onion, cut into 1/2-inch slices

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a rimmed 13x18-inch baking sheet with cooking spray.
  • Whisk 1 tablespoon olive oil, honey, 1 teaspoon salt, 1 teaspoon sage, and 1/2 teaspoon pepper in a bowl.
  • Place tenderloin on the prepared baking sheet; rub honey mixture onto pork.
  • Mix butternut squash, apples, and onion in a bowl; drizzle with remaining 2 tablespoons olive oil, 1 teaspoon salt, 1 teaspoon sage, and 1/2 teaspoon pepper; toss until well coated. Place around pork tenderloin.
  • Bake in the preheated oven until vegetables are tender and pork is cooked, 30 to 35 minutes; baste pork with honey mixture several times during roasting. An instant-read thermometer inserted into the center of the pork should read at least 145 degrees F (63 degrees C).

This makes a massive batch of pulled pork that is great for cook-outs, potlucks, parties for a sizable group, or for lunches and dinners with plenty of extras to freeze and reheat. Substitute any other diet soda; the soda is used as a substitute for brown sugar. Dish can be served by itself or 'sloppy joe' style on hamburger buns.

3 (1 1/2 pound) pork tenderloins
4 cups chopped onions
1 (18 ounce) bottle hickory smoke-flavored barbecue sauce
1 (14.5 ounce) can crushed tomatoes
½ (12 fluid ounce) can or bottle diet pepper-type soda (such as Diet Dr Pepper®)
¼ cup reduced-sodium Worcestershire sauce
2 tablespoons minced garlic
2 tablespoons liquid smoke flavoring
1 teaspoon paprika
½ teaspoon red pepper flakes
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Cut each pork tenderloin into 4 pieces and place into a slow cooker; set to High.
  • Stir onions, barbecue sauce, crushed tomatoes, diet soda, Worcestershire sauce, garlic, liquid smoke flavoring, paprika, red pepper flakes, cinnamon, and nutmeg in a bowl; pour mixture over pork tenderloin pieces. Cover and cook until tenderloin pieces begin to shred at the edges, 3 to 4 hours.
  • Shred meat using 2 forks; reduce slow cooker setting to Low and cook 1 more hour.

2 scallions
2 tablespoon mayonnaise
5 teaspoon white wine vinegar
4 ounce shredded carrotes
24 ounce yukon gold potatoes
24 ounce pork tenderloin
2 tablespoon Smokey Cinnamon Paprika Spice
1 Apple
6 tablespoon Cherry Jam
4 tablespoon Sour Cream

Steps:

  • Adjust rack to middle position and preheat oven to 450 degrees. Wash and dry all produc. Trim and thinly slice scallions. In a medium bowl, combine mayonnaise and 4 tsp vinegar. Add carrots and toss to coat. Set aside.
  • Dice potatoes into 1/2 inch pieces. Place in a large pot with enough slated water to cover by 2 inches. Cover and bring to a boil over high heat. Once boiling, lower heat to medium. Cook until potatoes are tender, 15-20 minutes. Reserve 1/2 cup potato cooking liquid, then drain and return potatoes to pot
  • Meanwhile, rub pork with a large drizzle of olive oil. Season generously all over with salt and pepper. reserve 1/4 tsp Cinnamon Paprika Spice in a small microwave-safe bowl for the next step; rub pork all over with remaining spice. Place pork on a baking sheet and roast on middle rack until cooked through, 18-20 minutes. Let rest 5 minutes after removing from oven.
  • while pork roasts, quarter, core, and thinly slice apple; add to bowl with carrots and toss to combine. Stir in half the scallions and season with salt and pepper. To bowl with reserved Cinnamon Paprika Spice, add jam and remaining vinegar; stir to combine. Microwave until warm, 45 seconds. Stir in 2 tbsp butter until melted. Season with salt and pepper.
  • Mash drained potatoes until smooth; stir in sour cream, 2 TBSP butter, and remaining scallions. If needed, add reserved potato cooking liquid a splash at a time until potatoes are creamy. Season with salt and pepper.
  • Slice pork crosswise. Divide pork potatoes, and slaw between plates. Drizzle sauce over pork and serve.

1 (1 1/2 pound) pork tenderloin
1 tablespoon olive oil for brushing
ground black pepper to taste
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon minced onion
1 clove garlic, minced
1 teaspoon crushed red pepper flakes
1 teaspoon prepared horseradish

Steps:

  • Preheat an outdoor grill for medium-high heat. Cut tenderloin into 9 slices and brush with olive oil. Season to taste with freshly ground black pepper.
  • Place the meat onto preheated grill. Grill until no longer pink in the center, 3 to 4 minutes per side. When finished, place pork on a plate, and allow to rest for 5 minutes.
  • While pork is cooking, stir together sugar, Worcestershire sauce, vinegar, Dijon mustard, onion, garlic, red pepper flakes, and horseradish in a small saucepan. Bring to a simmer over medium heat, and stir until smooth. Pour sauce over sliced tenderloin to serve.
