1/4 lb potato, sliced
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon pepper
1/2 cup mushroom, sliced
2 center-cut pork chops
oil
1 1/2 tablespoons water
1/4 cup low-fat sour cream

Steps:

  • Spray skillet. Heat it over medium heat. Add potatoes and brown lightly. Set aside.
  • Season chops with powders and pepper. Put a little oil in skillet. Cook chops for one minute on each side. Drain fat if necessary.
  • Add water. Cover and cook for 10 minutes.
  • Add potatoes and mushroom. Cook for 10 more minutes.
  • Stir in sour cream. Heat thoroughly, but don't boil.

6 boneless pork loin chops (4 ounces each)
3/4 teaspoon pepper
1/2 cup water
1/3 cup cider vinegar
1/4 cup packed brown sugar
2 tablespoons reduced-sodium soy sauce
1 tablespoon Worcestershire sauce
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • Sprinkle pork chops with pepper. In a large skillet coated with cooking spray, cook pork over medium heat for 4-6 minutes on each side or until lightly browned. Remove and keep warm. , Add the water, vinegar, brown sugar, soy sauce and Worcestershire sauce to skillet; stir to loosen browned bits. Bring to a boil. Combine cornstarch and cold water until smooth; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. , Return chops to the pan. Reduce heat; cover and simmer for 4-5 minutes or until meat is tender.

This is a quick favorite on busy nights. I tend to keep a bottle of the dressing in the pantry for this recipe so I can just throw together early in the day and pop in the oven when I get home. By the time everyone has settled in dinner is done.

1 onion, sliced
1 bell pepper, cut into rings
1 (6 ounce) can pineapple chunks (juice optional)
1 cup Russian salad dressing (bottled is ok too)
4 pork chops, 1 inch thick
2/3 cup oil
1/2 cup ketchup
1/4 cup sugar
3 tablespoons lemon juice
2 tablespoons Worcestershire sauce
2 tablespoons vinegar
2 tablespoons water
1 teaspoon grated onion
1/2 teaspoon salt
1/2 teaspoon paprika

Steps:

  • Mix dressing ingredients together; set aside.
  • Place chops in a single layer in a shallow casserole dish.
  • Top with slice of onion and bell pepper.
  • Pour pineapple over top and cover with Russian dressing.
  • Bake covered in preheated 375°F oven for 1 hour.
  • Serve over rice.

SWEET RUSSIAN PORK CHOPS

My Mom used to make this when I was young. I thought it was fancy french cookin!! This is an easy make ahead recipe that people just love when comfort food is on the menu. You could substitute boneless breast of chicken that is less then 1 inch thick or even halibut!! I make this from start to finish in a large oven proof skillet but if you don't have one, you can transfer from a regular skillet to a baking dish to finish.

4 pork chops, not more than an inch thick
1 -2 cup bottled Russian salad dressing
1 large sweet onion, sliced in rings
1 -2 tablespoon of minced garlic, if desired
1 -2 tablespoon olive oil
1/2 teaspoon salt
1 teaspoon pepper
1 tablespoon paprika, mixed together

Steps:

  • Preheat oven to 350.
  • Season pork chops with salt,pepper, paprika mixture on both sides.
  • Heat skillet on a med flame with 1 tbsp oil and saute sliced onion rings till lightly carmelized
  • Turn heat lower and add garlic and saute for another 2 mins taking care not to burn garlic.
  • Remove onion/garlic from skillet and set aside.
  • Return skillet to med-high flame and add 1 tbsp oil and brown pork chops on both sides, usually 3-4 mins per side.
  • Turn heat to med and pour 1 cup Russian dressing over meat and add onions/garlic back to skillet and toss well to coat.
  • ~~Also at this point you can put the pork chops etc away to freeze or refridgerate - to bake later.
  • (At this time you could put scalloped potatoes in oven).
  • or.
  • Put skillet in preheated oven or transfer to oven proof dish (ensure you have sprayed it with non-stick spray.
  • Cover and bake for 45 minutes.
  • At this time you can remove cover and add another cup of dressing and bake for the last 15 minutes.
  • Serve this dish with scalloped potatoes or buttered noodles or rice and a nice salad with a creamy type dressing to off set the sweetness of this dish.
