MEXICAN CINNAMON RICE
Using brown rice adds more fiber and is a little easier on the blood sugar if you happen to be a diabetic. This is a different rice to serve with Mexican dishes. This recipe goes especially well with chicken topped mole. The recipe is adapted from a Betty Crocker cookbooklet, March 1994.

Steps:
- Rinse rice well under running water; drain.
- Cook the onion and garlic in the margarine until tender; stir in drained rice and brown lightly.
- Stir in remaining ingredients, reserving the cilantro.
- Heat to boiling, stirring once or twice; reduce heat, cover and simmer until rice is tender and stock has been absorbed; approximately 40 to 45 minutes.
- Remove from heat; fluff rice lightly with fork; cover and allow to rest for about 5 to 10 minutes.
- Stir in cilantro and serve.

SWEET RICE
Often called Arroz con Leche, this is a sweet custard-like pudding. I haven't had a single person not love this traditional Mexican rice pudding. You might want to double the recipe!

Steps:
- Bring the rice, butter, and water to a boil in a large saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes.
- Whisk together 2 cups of milk, flour, sugar, egg, and vanilla extract in a bowl, and pour the milk mixture over the cooked rice. Stir to combine, and simmer over low heat for 15 minutes. Stir in 1 cup whole milk, the cream, raisins, and cinnamon until thoroughly mixed, and allow to cool for a few minutes. Serve warm or cold.

MOM'S SWEET RICE CEREAL
Do you like Oatmeal? Hot cereal? This is another great recipe handed down. Doesn't matter how old you are, when you are sick you want your Mom! Recently while being sick and not having much of an appetite, I remembered this hot cereal my mom made us girls while growing up. It's quick, comforting and sweet (But not too sweet ;) ) My mom always made this with Recipe #199171 .... you will love it and so will the kids.

- In a medium saucepan -- bring water and 1/2 Tbl butter to boil.
- Add rice and stir to combine. Remove from Heat and cover 5 minutes.
- Add sugar and 1/2 Tbl butter, stir to combine.Serve in your favorite cereal bowl, add milk and sprinkle with cinnamon Sugar mixture.

SWEET RICE
This recipe was given to me, upon request! We have a fresh Mex grill place here that uses sweet rice. This recipe is very similar to this restaurants. Use it on your fresh tortilla salads, or in burritos, on the side, any way you have it, it is darn good (and sweet!) NOTE: The amount of sugar makes it very sweet. You can alter the amount of sugar if you would like, just remember it is supposed to be sweet! Also, let the sugar dissolve in the stock so you won't have sugar that has sunk to the bottom of the pan.

Steps:
- Put a little oil in bottom of pan (maybe about 1/2-1 tablespoon).
- Saute chopped onion until translucent. Add the chopped cilantro (no big stems) and saute a minute more.
- Add the rice, cooking until it is light brown (being careful not to burn).
- Combine the chicken broth and sugar, letting sugar dissolve. Then stir into rice until combined. Bring to a boil.
- Cover and let cook on low, med-low until rice is done, about 25-30 minutes. Fluff with a fork before serving.
