VEAL SCALLOPINI IN A SWEET RED PEPPER SAUCE

This recipe has been in the family for generations. The meat is so tender and with the red pepper sauce, is so flavorful you'll want to make it at least once a week! I love serving this with a spring mix salad with a balsamic vinaigrette. Instead of scallopini, you can use veal cutlets and sometimes beef cutlets. The beef cutlets would take another 10 minutes longer cooking with the sauce.

1 ½ pounds veal cutlets
1 egg
2 tablespoons milk
1 cup seasoned dry bread crumbs
1 tablespoon chopped fresh parsley
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
vegetable oil for frying, or as needed - divided
2 red bell peppers, sliced
1 onion, chopped
1 (14.5 ounce) can stewed tomatoes
1 cup water
1 tablespoon white sugar

Steps:

  • Pound veal cutlets a few times with a meat mallet to tenderize, if desired. Beat egg with milk in a shallow bowl. Stir bread crumbs, parsley, garlic powder, salt, and black pepper in a separate bowl until well combined.
  • Heat 2 tablespoons vegetable oil, or enough to cover the bottom of a skillet, over medium heat. Dip each cutlet in egg mixture and then in crumb mixture to coat. Fry the cutlets in the hot oil until browned, about 3 minutes on each side. Drain cutlets on paper towels.
  • Heat 2 more tablespoons vegetable oil in the same skillet; cook and stir red bell peppers and onion in the hot oil until soft, about 8 minutes. Pour stewed tomatoes into vegetables and stir in water and sugar, dissolving sugar into the sauce. Bring to a boil, cover, and simmer for 30 minutes.
  • Reduce heat to low. Place veal cutlets into the sauce, cover, and simmer until veal is very tender, about 30 more minutes.

1/4 cup soy sauce
1 tbsp cornstarch
1 tbsp sesame oil
2 tbsp fresh lemon juice
1 tbsp grated ginger
4 boneless chicken breasts (1 lb), cut into 1/2-inch strips
2 mangoes, diced
2 scallions, chopped
1 serrano pepper, minced
1 cup chopped cilantro
3 tbsp fresh lime juice
1/4 tsp salt
5 tsp olive oil
6 cups watercress leaves

Steps:

  • For the marinade, combine soy sauce and cornstarch in a medium-size bowl. Stir until cornstarch is dissolved, then stir in sesame oil, 1 tbsp lemon juice, and ginger. Toss with chicken and let marinate 20 to 30 minutes. For the salsa, combine mangoes, scallions, serrano pepper, cilantro, lime juice, and salt. Let sit 20 to 30 minutes. For the salad, whisk together remaining 1 tbsp lemon juice, olive oil and salt and pepper to taste, then toss dressing with watercress. To cook chicken, coat a large skillet with cooking spray and set over medium-high heat. Add chicken in a single layer and cook 3 to 4 minutes on each side until browned and cooked through. To assemble the plates, place 1/4 watercress salad on each plate, then mound 1/4 salsa in the center and arrange chicken strips on top.

2 medium sweet red peppers
2 tablespoons butter
4 skinless boneless salmon steaks, about 4 to 6 ounces each
salt and freshly ground pepper to taste
4 tablespoons finely chopped shallots
1/4 cup dry white wine
1/2 cup heavy cream
2 tablespoons finely chopped dill and dill sprigs for garnishing

Steps:

  • Core and remove the seeds from the red peppers. Cut them into 1/4-inch cubes or strips.
  • Heat the butter in a nonstick skillet large enough to hold the salmon steaks in one layer.
  • Season both sides of the fillets with salt and pepper to taste. Place the steaks in the pan and cook over high heat until they are lightly browned, about a minute and a half on each side. The time will vary, depending on the thickness of the fish and the doneness desired.
  • Transfer the steaks to a warm platter. Leave the cooking butter in the skillet. Add the shallots and the red peppers. Cook, stirring, until wilted.
  • Add the wine, reduce by half, add the cream and cook, stirring over medium high heat until reduced again by half. Check the seasoning.
  • Add the salmon steaks, the chopped dill and any juices that have accumulated around the steaks, and bring to a simmer. Cook one minute. Do not overcook. Serve immediately with the dill for decoration.

1 pound all-purpose flour
3 ounces powdered milk
1 teaspoon salt
1 1/2 tablespoons baking powder
4 ounces solid vegetable shortening
1 cup ice water
Olive oil, for frying dough, plus 4 tablespoons
9 eggs
Salt and pepper
2 medium ripe plantain
3 large Spanish onions, sliced
2 red peppers, roasted and sliced
1/2 teaspoon crushed garlic
1 teaspoon chopped cilantro

Steps:

  • In a medium mixing bowl, sift together the flour, powdered milk, salt, and baking powder. On a flat surface, make a well with the combined dry ingredients. Place the shortening and 1 cup of water in the well. Working your way inward, start to work the shortening and dry ingredients into a dough. When dough is no longer sticky, cover with oiled plastic wrap and let the dough res for 1 hour.
  • On flat floured surface, roll out the dough to a circle about 1/2-inch thick. Using a 3-inch cookie cutter, cut round pieces from the dough.
  • Heat up about 2 inches of oil at 350 degrees, and then fry the dough for about 1 minute on each side until they puff. Place in a warm oven only until the omelet is ready.
  • Whisk the eggs in a small bowl with a sprinkle each of salt and pepper.
  • Cut plantains on a bias and fry in very hot oil until golden on both sides, then remove from oil and set aside.
  • In a separate pan, saute 2 onions in 1 tablespoon of olive oil for about 2 minutes then add the fried plantains and pour the eggs in. Turn the heat down to low and cook for about 8 minutes or until the top is almost thoroughly cooked. Flip the omelet over and cook for about 6 more minutes. Saute the remaining onion in 3 tablespoons of oil, add the roasted peppers, garlic, and cilantro. Cook until tender then puree and season with salt and pepper, to taste.
  • Cut omelet into 4 equal quarters and serve on top of pepper sauce with the fried bread.

  • Sauce-in a large, deep skillet (the author uses a deep flameproof casserole, but I never cook on the stovetop in a casserole pan), heat the oil over med-high heat.
  • Cook the sausage meat, breaking up the meat with a spoon, for about 5 minutes, or until no pinkness remains.
  • Drain of most of the fat.
  • Add the mushrooms and saute for 4 minutes.
  • Add the garlic and saute for 1 minute.
  • Add the marinara sauce and red peppers, reduced heat to medium, and simmer for 5 minutes, or until the sauce begins to thicken.
  • Add the cream, season with salt and pepper, and stir to combine.
  • Cook for 3-5 minutes, or until the sauce begins to thicken.
  • Taste and adjust for seasonings.
  • Preheat the oven to 375°.
  • Oil a 13 x 9 inch baking dish.
  • Bring a large pot of water to a boil.
  • Salt the water, add the pasta, and cook over high heat for 10-11 minutes, OR until al dente; drain well.
  • In a medium bowl, combine the cheeses.
  • Combine the pasta with the sauce in the pan; add 1 cup of the blended cheeses and arugula leaves, mixing well to combine.
  • Spoon the mixture into the prepared dish and evenly sprinkle with the remaining cheese.

1 teaspoon olive oil
1 red bell pepper, stem and seeds removed, cut into chunks
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 cup homemade or low-sodium canned chicken stock, skimmed of fat

Steps:

  • Cut leeks in half lengthwise, then into 1/4-inch-thick slices. Place in small bowl, and cover with cold water. Let stand for 5 minutes to rid leeks of dirt and sand. Lift out of the water, and drain.
  • Heat oil in saucepan over medium heat. Add leeks, peppers, salt, and pepper; saute for 3 minutes. Add stock; cover. Cook until vegetables are tender, about 12 minutes.

3 tablespoons extra-virgin olive oil, divided
1 tablespoon butter
1 large onion, chopped, divided
Salt and black pepper
1 1/2 cups white rice
3 cups chicken stock, divided
4 (6-ounce) boneless, skinless chicken breasts
1/2 tablespoon smoked paprika, 1/2 a palm full
1 teaspoon dry thyme, 1/3 of a palm full
3/4 pound chorizo sausage, in packaged meats case near kielbasa, cut in 1/2 lengthwise then thinly sliced
2 large cloves garlic, chopped
1 small carrot, peeled and grated
2 roasted red peppers, chopped
1 (10-ounce) box frozen peas
1/4 cup chopped flat-leaf parsley, a generous handful

Steps:

  • Heat a medium size saucepot over medium heat with 1 tablespoon of extra-virgin olive oil, about 1 tablespoon, and the butter. Add 1/4 of the chopped onion and season with salt and pepper, cook for about 1 minute, add the rice and stir to coat in the oil. Add 2 1/2 cups of chicken stock to the rice and bring up to a boil. Cover the pot, reduce heat to simmer and cook rice for 15 to 18 minutes or until tender and cooked through.
  • While the rice is cooking, start the chicken. Preheat a large skillet over medium-high heat with about 2 tablespoons of extra-virgin olive oil. Season the chicken breasts with smoked paprika, salt, pepper and the thyme; add the seasoned chicken to the skillet. Cook breasts 5 to 6 minutes on each side or, until cooked through.
  • Remove the chicken from the skillet to a plate and loosely cover with aluminum foil. Return the skillet to the stove top and over medium-high heat add chorizo, cook for 2 minutes stirring frequently. Add the remaining onion, garlic, grated carrot, and roasted red pepper to the chorizo and season with a little salt and pepper. Cook until the onions are slightly tender, about 2 to 3 minutes. Add 1/2 cup of chicken stock, scrape up any bits that have stuck to the bottom of the pan. Add the frozen peas and parsley; continue to cook for 1 to 2 minutes to heat the peas through. Taste and adjust seasonings with a little salt and pepper.
  • To serve, arrange the chicken breasts on dinner plates and top with lots of sauce. Fluff the rice with a fork and serve alongside.

1/2 cup white wine

  • Heat oil in large sauce pan on med high heat.

This recipe was inspired by one of our favorite tapas dishes. It's just like we like remember it from our first date some 13 years ago. I incorporated 2 Zaar recipes to create this clone. All of this can be made ahead and warmed in the microwave before serving. The Sweet Red Bell pepper sauce really make this dish amazing! 1 lb bacon, uncooked, applewood is best
8 ounces pitted dates, the larger the better
1 -2 garlic clove
1/2 large red bell pepper, seeded, quartered
1/2 medium yellow onion
1/4 cup half-and-half cream, a little more if desired, can using whipping cream
1 -2 tablespoon extra virgin olive oil
1/8 teaspoon salt (to taste)

Steps:

  • Preheat oven to 375°F.
  • Soak round toothpicks in water for 15 minutes, this will prevent burning when baking.
  • RED PEPPER SAUCE:.
  • Place garlic cloves w/ peels on a baking dish and bake for 15 minutes.
  • Rub pepper and onion with olive oil.
  • After baking the garlic cloves for 15 minutes, add the red bell pepper and onion to the baking sheet and bake for an additional 15 minutes, or until tender and roasted. It may take a bit longer.
  • Squeeze the roasted garlic out of it's paper into a blender along with the roasted onion and bell pepper. *use a blender or small food processor.
  • Blend until smooth. Slowly add olive oil until blended. * you may use more or less.
  • Add salt.
  • Slowly add half and half until creamy while blending.
  • Serve immediately or cover and refrigerate until ready to serve. Warm in the microwave before serving.
  • BACON WRAPPED DATES:.
  • Cut bacon strips in half (making them 1/2 as long approximately 3").
  • Microwave the strips for 2 minutes.
  • Wrap each date with a 1/2 strip of bacon and secure with a toothpick.
  • Spray a 4 sided cookie sheet with nonstick spray.
  • Place all prepared dates in the cookie sheet.
  • NOTE: If you have mini muffin pan, suspend the bacon wrapped date over each opening and the bacon fat will drip off into the muffin pan. This is my preferred method.
  • Bake for approximately 15 minutes, turning once. *Important to turn.
  • After turning, continue baking for an additional 10 minutes or until bacon brown and crispy or as desired.
  • BAKING TIME may vary. Just be sure to watch carefully.
  • Serve with sweet red pepper sauce for dipping or puddle the sauce on a plate and place the wrapped dates in the sauce.
  • Note: Everything can be prepared and baked ahead of time and served later. Just warm through in the microwave for about 30 seconds.

3 tablespoons EVOO (extra-virgin olive oil)
1 tablespoon unsalted butter
1 large onion, chopped
Salt and black pepper
1 1/2 cups white rice
3 cups chicken stock
4 boneless, skinless chicken breasts
1/2 tablespoon smoked sweet paprika, 1/2 palmful
1 teaspoon dried thyme, 1/3 palmful
3/4 pound chorizo, halved lengthwise, then thinly sliced
2 large garlic cloves, chopped
1/2 small carrot, peeled and grated
2 jarred roasted red peppers, chopped
1 10-ounce box frozen peas
1/4 cup fresh flat-leaf parsley, a generous handful, chopped

Steps:

  • Heat a medium-size sauce pot with a tight-fitting lid over medium heat with 1 tablespoon of the EVOO, once around the pan, and the butter. Add one fourth of the chopped onion, season with salt and pepper, and cook for about 1 minute. Add the rice and stir to coat in the oil. Add 2 1/2 cups of the chicken stock to the rice and bring it up to a simmer. Cover the pot with the lid and turn the heat down to medium low. Cook the rice for 15 to 18 minutes, or until it is tender and cooked through.
  • While the rice is cooking, start the chicken. Preheat a large skillet over medium-high heat with the remaining 2 tablespoons of oil. Season the chicken breasts with the paprika, salt, pepper, and the thyme; add the seasoned chicken to the skillet. Cook the breasts for 5 to 6 minutes on each side, or until cooked through.
  • Remove the chicken from the skillet to a plate and loosely cover it with aluminum foil. Return the skillet to the cooktop over medium-high heat and add the chorizo. Cook for 2 minutes, stirring frequently. Add the remaining chopped onion, the garlic, carrot, and roasted red peppers to the chorizo and season it with a little salt and pepper. Cook until the onions are slightly tender, about 2 to 3 minutes. Add the remaining 1/2 cup of chicken stock, and scrape up any bits that have stuck to the bottom of the pan. Add the frozen peas and parsley; continue to cook for 1 to 2 minutes to heat the peas through. Taste and adjust the seasonings with a little salt and pepper.
  • To serve, arrange the chicken breasts on dinner plates and top them with lots of sauce. Fluff the rice with a fork and serve alongside.

10 large white mushrooms, sliced
1 large yellow bell pepper
1/4 cup and two tbsp extra virgin olive oil, divided
1/2 cup dry white wine
1/8 teaspoon nutmeg
1/8 - 1/4 teaspoon red pepper flakes (vary according to desired spice)
1/8 teaspoon white pepper
1/4 teaspoon paprika
1/8 teaspoon cayenne pepper
6 garlic cloves, pressed

Steps:

  • peppers: preheat oven to 400. remove stems and seeds from bells peppers. quarter. brush quarters inside and out with 2 tbsp olive oil. place peppers in an oven safe dish and cook 30 minutes flipping over halfway (or until each side is slightly browned and peppers are soft but not mushy). allow peppers to cool so that they can be handled. sauce: put olive oil, crumbled italian sausage, sliced mushrooms, garlic, nutmeg, and red pepper flakes into a deep heavy skillet and saute on medium high until meat is well done and mushrooms are tender. remove from heat. pour in white wine white pan is still hot. scraping the pan to pick up any browned bits. let sit on the stove while you prepare the rest of the sauce. place 1 cup of heavy cream in a blender with all of the red pepper and one quarter of the yellow pepper. puree for roughly 30 seconds until slightly thickened and the red pepper is totally pureed. chop remained 3/4 of the yellow bell pepper into one inch strips. mix the bell pepper cream mixture into the sausage and mushroom mixture, stirring thoroughly. add remaining 1/4 cup of cream, white pepper, paprika, and cayenne pepper. stir thoroughly and place on medium heat. continue stirring for roughly five minutes scraping sides and bottom while stirring. allow sauce to bubble for 10-15 minutes until liquid is reduced by 1/3. spoon sauce over pasta of your choice.

CHICKEN BREASTS IN SWEET RED PEPPER SAUCE

4 whole boned, unskinned chicken breasts
Salt and freshly ground pepper, to taste
6 tablespoons olive oil
4 tablespoons unsalted butter
1/2 cup shallots, minced
1 cup dry white wine
2 cups chicken broth or stock
2 cups heavy cream
4 sweet red bell peppers, pureed (see recipe)
1/2 cup chopped, mixed fresh herbs (chives, chervil and parsley)

Steps:

  • Cut chicken breasts in half, and thoroughly wash and dry. Season with salt and pepper.
  • Preheat oven to 350 degrees.
  • Meanwhile, heat olive oil over moderately high heat. Add breasts and saute 2 to 3 minutes on each side, or until golden.
  • Bake in preheated oven 5 to 7 minutes, basting once. Skin should be crisp and springy to touch. Remove from pan and keep warm.
  • Discard remaining oil in pan. Add butter and saute shallots until soft but not brown.
  • Pour white wine into pan and bring to simmer. Stir, scraping bottom and sides, until liquid is reduced to about Y cup.
  • Add chicken stock and reduce liquid to approximately 1 cup, scraping brown bits from pan.
  • Add heavy cream and simmer until liquid thickens, being careful not to let it boil over.
  • Add pureed peppers and stir until heated through. Place a quarter of the mixture on each of four plates. Put two breast halves on top of each; sprinkle with mixed herbs.

Medallions of Pork With Sweet Red-Pepper Sauce image

Number Of Ingredients 12

8 boneless loin of pork slices, about 3 ounces each, trimmed of excess fat
Salt and freshly ground pepper to taste
1 tablespoon olive oil
4 tablespoons finely chopped onions
2 red bell peppers, about 3/4 pound, cored, seeded and cut into 1 1/4-inch cubes
1 teaspoon chopped garlic
1 cup fresh or canned chicken broth
1/2 teaspoon cumin powder
1 bay leaf
2 tablespoons butter
2 tablespoons fresh lemon juice
2 tablespoons finely chopped fresh coriander

Steps:

  • Place pork slices on a flat surface. Pound meat lightly with a mallet and sprinkle with salt and pepper.
  • Heat oil in a nonstick skillet large enough to hold the slices in one layer. When oil is very hot, add meat and cook over moderately high heat for 5 minutes or until brown.
  • Turn slices and cook for about 5 minutes more. Reduce heat and continue cooking about 2 minutes longer. Turn slices occasionally.
  • Transfer meat to a warm serving dish and keep warm.
  • Pour off most of the fat from skillet. Add onions and red peppers. Cook, stirring, until peppers are wilted, about 5 minutes. Add garlic and cook, stirring, briefly. Add broth, cumin, bay leaf, salt and pepper. Cover and simmer 5 minutes. Remove and discard bay leaf.
  • Place mixture in a food processor or blender. Add butter and lemon juice and pulse to blend to a fine texture. Return mixture to skillet and add pork slices with their drippings. Bring to a simmer and serve immediately. Sprinkle with coriander.

1 tablespoon extra virgin olive oil
1 tablespoon butter
3 cloves garlic, chopped
1 cup chopped red onion
3 sweet red peppers, seeded,chopped
1 1/3 cups vegetable stock
salt
fresh ground pepper
3/4 lb spaghetti or 3/4 lb spaghettini
1/2 cup chpped fresh basil or 1/2 cup parsley, plus extra for garnish
1 large lemon, grated zest of
freshly grated parmesan cheese

Steps:

  • Heat oil and butter in large nonstick skillet over medium high heat.
  • Add garlic, onion, and red peppers and cook for 5 minutes, or until tender.
  • Add stock, salt and pepper.
  • Cover, reduce heat, and simmer for 10 minutes or until vegetables are very tender.
  • Puree in food processor (or use immersion blender), return to pan and simmer 8 minutes until sauce thickens.
  • Cook pasta in large pot of boiling salted water until al dente.
  • Drain well and add to sauce in skillet.
  • Sprinkle with basil; toss for one minute to allow pasta to absorb flavours.
  • Transfer to large serving bowl and sprinkle with lemon zest.
  • Serve with cheese and pass the peppermill.

The was originally from Madhur Jaffrey's Indian cookery. Over the years I have added and taken away bits, but the colour is still great and the flavours unchanged. Don't be put off by the long list of ingredients, it is very quick to make.

1 kg chicken meat, diced (breast, thigh etc)
2 large onions, coarsely chopped
2 1/2 cm cube gingerroot, peeled and coarsely chopped
3 garlic cloves, peeled
25 g blanched slivered almonds
4 large red sweet peppers, trimmed seeded, and coarsely chopped
1 tablespoon ground cumin
2 teaspoons ground coriander
1/2 teaspoon ground turmeric
1/2 teaspoon cayenne pepper
2 teaspoons salt
7 tablespoons vegetable oil
225 ml water
2 tablespoons lemon juice
1/2 teaspoon ground black pepper

Steps:

  • Combine onions, ginger, garlic, almonds, peppers, cumin , coriander, turmeric, cayenne and salt in a food processor or blender. Blend until you have a smooth paste.
  • Put the oil in a large, wide non-stick pan and heat til hot.
  • Pour in all the paste from the food processor.
  • Stir and fry the paste for 10-12 minutes or until you can see the oil forming tiny bubbles around it.
  • Put in the chicken, with the water, lemon juice and pepper and bring to a boil.
  • Cover, turn heat to ow and simmer gently for 25mins.
  • Stir a few times during this cooking period.

This is an awesome recipe, I love to fix this with left over salmon. Sometimes the local butcher has a killer sale on salmon, so I'll pick up some extra and make up a batch of these. They have a sligt kick to them that can be adjusted to your personal taste by adjusting the amount of Cayenne pepper.

1 tablespoon olive oil
1 large white onion, finely chopped
2 stalks celery, finely chopped
2 teaspoons dried mustard
1/2 teaspoon cayenne pepper
1 1/2 lbs salmon, cooked and flaked
1 1/2 cups seasoned bread crumbs, divided
1/4 cup mayonnaise, divided
1 egg
salt and pepper
1 1/2 cups vegetable oil (for frying, approx)
1 cup mayonnaise
1/4 cup roasted red pepper
1 tablespoon lime juice
2 teaspoons sugar

Steps:

  • Heat olive oil in a skillet over medium heat.
  • Add onion and celery.
  • Saute until soft, about 5 minute Add dried mustard and cayenne.
  • Mix well and saute for 2 additional minutes.
  • Remove from heat and allow to cool.
  • In a large bowl, combine onion mixture, salmon, 3/4 cup of bread crumbs, 1/4 cup of mayonnaise, egg, salt and pepper.
  • Mix well and form into 10-12 patties about 1/2" thick.
  • Coat each patty with the remaining bread crumbs.
  • Heat about 1/4 inch of oil in a skillet over medium-high heat.
  • When hot, add patties in batches and fry until golden brown (about 3 min per side).
  • Drain patties on paper towels.
  • Cover and place in a warm oven until ready to serve.
  • To make the sweet red pepper sauce, combine 1 cup of mayo, 1/4 cup of roasted red peppers, 1 tablespoon of lime juice and 2 tsp of sugar in a blender.
  • Blend until smooth.

SWEET RED PEPPER SAUCE

1 large sweet red pepper
1 small red onion, about 1/4 pound
1 ripe red tomato, about 1/4 pound
1 teaspoon finely chopped hot green pepper or 1/4 teaspoon hot dried red pepper flakes
1 tablespoon Dijon-style mustard
3 tablespoons red-wine vinegar
1/2 cup olive oil
2 teaspoons finely minced garlic
1/2 cup coarsely chopped chervil or half that amount of chopped parsley

Steps:

  • Using a long fork, hold the red pepper directly over a gas flame or close to the heating element of a preheated electric broiler. Cook, turning it often so that it blisters and blackens all over - top, bottom and sides.
  • Let stand until cool enough to hold, and rinse thoroughly under cold tap water, peeling off the burned outer skin. Cut the pepper flesh into 1-inch pieces. There should be about 3/4 cup.
  • Cut the onion into 1/4-inch cubes. There should be about 3/4 cup.
  • Cut the tomato into 1/2-inch cubes. There should be about 3/4 cup.
  • Put the tomato, sweet pepper, onion, hot pepper, mustard, vinegar, oil, garlic and chervil in the container of a food processor. Blend thoroughly.

4 small red snapper fillets

Steps:

  • Heat the oil in a large, nonstick skillet. Season the snapper with salt and pepper and add to the skillet. Cook for 2 minutes on each side. Pour tapenade sauce over fish, cover and cook for 5 minutes. Divide among 4 plates, spoon with the sauce, sprinkle with parsley and serve immediately.

28 oz can san marzon whole tomatoes with basil
1 jar(s) 14 oz roasted red pepper drained and chopped
1/2 c water
2 Tbsp each tomato paste and worcestershire sauce
1 Tbsp each soy sauce and apple cider vinegar
1/3 c sugar
1 tsp red pepper flakes
salt to taste

Steps:

  • 1. Place the tomatoes in a large stock pot. Smash the tomatoes with a potato masher or just use your hands. Add the chopped roasted red pepper and mash some more. Add the remaining ingredients and place over high heat.
  • 2. Bring to boil. Reduce the heat and simmer for about 20 minutes smashing and stirring occasionally until reduced and thicken. Taste and adjust for salt.
  • 3. Serve over pasta of choice and garnish with freshly grated Parmigiano Reggiano

2 medium red bell peppers
2 cloves garlic, unpeeled
2 teaspoons red wine vinegar
1 teaspoon olive oil
1 lb salmon fillet

Steps:

  • Preheat broiler.
  • Broil peppers on both sides until black and blistered.
  • Place in metal bowl and cover with plastic wrap and allow to sweat for 10-15 minutes.
  • Lower oven heat to 400 degrees F.
  • Wrap garlic in foil; roast in oven 5- 10 minutes or until soft; peel and set aside.
  • Peel peppers over a bowl to catch any juice; discard stems and seeds.
  • Puree peppers in a blender or food processor in their juice along with garlic, vinegar, and oil; set aside.
  • Broil salmon 2-3 minutes per side.
  • Serve red pepper sauce drizzled over salmon.
