These are a great alternative to traditional sweet potatoes for the holidays. I saw her make them on her Thanksgiving special and they are very easy.

4 large sweet potatoes
2/3 cup packed brown sugar
2 tablespoons orange juice
1 teaspoon orange zest
1/2 teaspoon grated fresh nutmeg
2 cups shredded coconut, sweetened
1/2 cup granulated sugar
1 teaspoon ground cinnamon
marshmallows, 1 large marshmallow per potato ball

Steps:

  • Preheat oven to 350°F.
  • Bake the potatoes until tender, then peel and mash them.
  • Stir in the brown sugar, orange juice, zest and nutmeg.
  • In a separate bowl, toss the coconut with the sugar and cinnamon.
  • Press mashed potatoes around each marshmallow, creating a 2 to 3-inch diameter ball.
  • Roll the balls in the coconut mixture. Bake for 15 to 20 minutes. Watch carefully for the last few minutes of cooking; the expanding marshmallows can cause the potato balls to burst open.

3 cups peeled and chopped sweet potatoes
¼ cup butter, softened
¾ cup brown sugar
2 tablespoons milk
¼ teaspoon salt
½ teaspoon grated lemon zest
8 large marshmallows
½ cup crushed corn flake cereal

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
  • Bring a pot of water to a boil. Add sweet potatoes and cook until tender, about 15 minutes. Drain and mash with butter, sugar, milk, salt and lemon zest. Shape mixture into balls, with a marshmallow in the center of each. Roll in cereal crumbs and place in prepared dish.
  • Bake in preheated oven for 20 minutes, or until marshmallows begin to ooze.

A terrific side dish or holiday appetizer...little portable, handheld sweet potato casseroles! The cooking time includes one hour for chilling time (it may take longer).

3 lbs sweet potatoes, cooked and drained
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 whole egg
1/2 cup miniature marshmallow
1/2 cup gingersnap crumbs

Steps:

  • Mash the sweet potatoes while they are still hot and add the butter, salt and spices.
  • Add the egg and continue to whip until thoroughly combined.
  • Chill until firm and then form into golf ball sized piece, stuffing 2 to 3 marshmallows in center of each ball.
  • Roll in the ginger snap crumbs and place on a non-stick or lightly greased baking sheet.
  • Bake at 400°F for 10 to 15 minutes.

These are adapted from an old recipe...you could roll them in coconut instead of nuts like Grandma did, but my hubby hates coconut so I changed it to pecans for us! Prep time doesn't include pre-mashing the potatoes since I do that a day ahead.

4 -5 large sweet potatoes, cooked, peeled, mashed
3/4 cup brown sugar
2 tablespoons orange juice
1/2 teaspoon nutmeg
2 cups ground pecans
1/2 cup white sugar
1 teaspoon cinnamon
1 large marshmallows, per ball

Steps:

  • Mix mashed sweet potatoes with brown sugar, orange juice, and nutmeg.
  • In another bowl mix pecans, sugar, and cinnamon.
  • Take a marshmallow, press potatoes around it, then roll in pecan mixture.
  • Bake for 15-20 minutes at 350 degrees.

Sweet Potato Yema Balls image

These make a great side dish or appetizer dish. Leftovers make a great snack.

1/2 cup(s) sweet potato
1/2 cup(s) carrot
3 - egg yolks, beatened
1 can(s) condensed milk
1/4 cup(s) caramel
2 tablespoon(s) butter, unsalted
1 cup(s) ice cream (vanilla or vanilla-caramel flavour)
1/4 cup(s) heavy cream
1/4 cup(s) finely chopped nuts (cashew or almonds)

Steps:

  • In a pot, boil carrot and sweet potato for 15 to 20 minutes or until soft. Mash until smooth (or use blender), then set aside.
  • In a bowl, beat three (3) egg yolks. Add condensed milk & caramel. Whisk until well-blended.
  • In a saucepan, melt butter over low heat, add the egg-milk-caramel mixture and stir continuously for about 5 minutes.
  • Add vanilla-caramel ice cream and stir constantly for another 5 minutes or until the ice cream is thoroughly melted.
  • Sprinkle finely chopped nuts and mix thoroughly for 10 minutes or until the mixture begins to thicken.
  • Add the carrot and sweet potato mash, then turn heat to medium and continue stirring for another 10 minutes.
  • Splash thickened cream into the mixture and continue stirring until the mixture starts to hold together.
  • Remove from heat and let it cool for about 5 minutes.
  • Scoop 2 tsp of yema and form into balls.
