After reading how good sweet potatoes are for us, I set out to find a fast, easy recipe that was also delicious. My sister and I developed this tasty side dish. The cayenne pepper can be increased to taste. I have found these wedges are even better reheated the next day, so make a bunch!

cooking spray
4 sweet potatoes, peeled and cut into wedges
2 tablespoons olive oil, or as needed
4 tablespoons brown sugar
1 teaspoon ground cumin
1 dash cayenne pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a rimmed baking sheet with cooking spray.
  • Place potatoes into a bowl and drizzle with oil.
  • Mix brown sugar, cumin, and cayenne pepper together in a small bowl with a fork. Sprinkle mixture over potatoes to coat. Lay out wedges on the prepared baking sheet.
  • Bake in the preheated oven for 10 minutes. Remove from the oven and turn the potatoes. Increase the heat to 400 degrees F (200 degrees C). Continue to cook until fork-tender, about 20 minutes. Serve.

2 tablespoons low-sodium soy sauce
2 tablespoons rice-wine vinegar (not seasoned)
1/4 teaspoon toasted sesame oil
4 medium sweet potatoes, (about 2 pounds total), peeled and cut into 3/4-inch-thick wedges
1 tablespoon plus 1 teaspoon olive oil
1/4 teaspoon coarse salt
1 1/2 teaspoons sesame seeds

Steps:

  • Make the dipping sauce: Stir together soy sauce, vinegar, and sesame oil in a small bowl. Set aside.
  • Make the sweet potato wedges: Preheat oven to 500 degrees. Toss sweet potatoes with oil and salt in a large bowl. Arrange in a single layer on a baking sheet. Roast, turning once, until tender and slightly browned, about 20 minutes. Transfer to serving dish; immediately sprinkle with sesame seeds. Serve with dipping sauce.

1 clove garlic
1 1/2 tablespoons olive oil
1/4 teaspoon dried thyme
1/8 teaspoon crushed red pepper
1/4 teaspoon salt

Steps:

  • Preheat oven to 400 degrees. Peel sweet potatoes; cut in half crosswise and then into wedges about 1 inch wide. Crush garlic clove in its skin.
  • On a rimmed baking sheet, toss sweet potatoes with garlic, olive oil, thyme, crushed red pepper, and salt. Roast until soft, about 30 minutes.

2 tablespoons olive oil
1 tablespoon toasted sesame oil

sea salt
coarsely chopped cilantro (to garnish)
2 tablespoons peanut butter
1 tablespoon lime juice
1/2 red serrano chili, seeded and sliced
1 tablespoon soy sauce
1 tablespoon ketchup
1/4 cup warm water
fresh ground black pepper

Steps:

  • Heat oven to 400°F.
  • Arrange potato wedges in a single layer on a baking sheet.
  • Sprinkle wedges with the olive and sesame oil, sesame seeds and salt.
  • Roast 35 minutes, or until tender.
  • Puree peanut butter, lime juice, chili, soy sauce, ketchup and 1/4 cup warm water until smooth.
  • Season with salt and pepper then transfer to a pan and heat over a low flame until warm.
  • Sprinkle wedges with cilantro. Serve with dipping sauce.
