CURRIED SWEET POTATO SURPRISE

Curried Sweet Potato Surprise image

I was given a recipe as an alternative to the traditional 'sweet' sweet potato dishes. I was very dubious at first, but I went ahead, made it with fresh sweet potatoes (not canned, as they are not available in Canada), made my own adjustments and gave it a go. The finished product looked, smelled and tasted FANTASTIC! Not mushy, and the flavors mingle beautifully! People are pleasantly surprised when they taste it. Enjoy!

Pour mixture into baking dish, place coconut on top of potato mixture and top with marshmallows. Bake for 10 to 15 minutes. If marshmallows begin to brown before time is up; then tent w/aluminum foil so that mixture will 'heat' through and marshmallows will not 'burn'.

Number Of Ingredients 11

3 cups sweet potatoes
2 units eggs
0.5 cups granulated sugar
0.5 sticks oleo
0.5 cups milk
1.5 teaspoons vanilla
1 units topping
0.5 cups brown sugar
0.333333333333 cups flour
0.333333333333 sticks oleo
1 cups pecans

Steps:

  • Wash and boil 4-5 large sweet potatoes until soft, about 1 1/2 hours depending on size of sweet potatoes. Check them after an hour, smaller potatoes will be done before larger ones. Take those out and let cool. Remove skin, be very careful as these can be very hot if not completely cooled. I mash them with a potato masher several times.
  • Mix first 6 ingredients in mixing bowl and stir together. Place mixture into butter greased baking dish.
  • Mix brown sugar, flour and oleo in small bowl until crumbly, then add nuts. Sprinkle over sweet potatoes. Bake 350º for 35 minutes.
