SHRIMP AND SWEET POTATO CAKES WITH CHAYOTE SLAW AND CHIPOTLE SAUCE

Number Of Ingredients 12

1 pound tan-skinned sweet potatoes
4 large garlic cloves, unpeeled
4 tablespoons (or more) vegetable oil
8 ounces peeled cooked large shrimp, coarsely chopped
2/3 cup chopped fresh cilantro
2/3 cup panko (Japanese breadcrumbs)*
2 tablespoons finely chopped poblano chili**
2 tablespoons finely chopped red onion
1 1/2 teaspoons Latin Spice Mix
All purpose flour
Slaw Chayote
Chipotle Tartar Sauce

Steps:

  • Preheat oven to 350°F. Pierce potatoes all over with fork. Place on baking sheet. Toss garlic with 1 tablespoon oil in small bowl. Enclose garlic in foil; place on baking sheet with potatoes. Bake until potatoes and garlic are tender, about 30 minutes for garlic and 1 hour 15 minutes for potatoes. Cool garlic and potatoes slightly. Remove peel from garlic. Remove skins from potatoes. Combine potatoes and garlic in bowl. Mash until smooth.
  • Add shrimp, cilantro, panko, chili, onion and 1 1/2 teaspoons Latin Spice Mix. Stir to blend well. Season with salt. Form mixture into six 3-inch-diameter patties.
  • Preheat oven to 375°F. Lightly coat cakes in flour. Heat 3 tablespoons oil in heavy large skillet over medium-high heat. Cook cakes in batches until brown, adding more oil if necessary, about 2 minutes per side. Place on baking sheet. Bake until heated through, about 5 minutes.
  • Spoon Chayote Slaw in center of plates. Place 1 cake on each plate. Spoon Chipotle Tartar Sauce atop cakes; serve.
  • *Available in Asian markets and in the Asian foods section of some supermarkets.
  • **A fresh green chili, often called a pasilla, available at Latin American markets and some supermarkets.

1/2 cup sour cream
2 tablespoons honey
2 tablespoons lemon juice
1 teaspoon grated lemon zest
1/2 teaspoon salt

3 cups shredded peeled uncooked sweet potatoes
1 medium apple, peeled and chopped
3/4 cup pineapple tidbits, drained
1/2 cup chopped pecans

Steps:

  • In a large bowl, whisk the first seven ingredients until smooth. In a large bowl, combine the potatoes, apple, pineapple and pecans. Add dressing; toss to coat. Cover and refrigerate for at least 1 hour.

SPICY BBQ TEMPEH SANDWICH WITH SWEET POTATO WEDGES AND ASIAN SLAW



Spicy BBQ Tempeh Sandwich with Sweet Potato Wedges and Asian Slaw image

1 cup finely shredded green cabbage
1/2 cup finely shredded red cabbage
1/2 cup shredded carrots
1/4 cup rice wine vinegar
1 teaspoon sugar
1 fresh lime, juiced
1/4 teaspoon ground ginger
1/4 teaspoon salt
2 large sweet potatoes
4 tablespoons canola oil, plus more for sauteing
2 (8-ounce) tempeh cakes
2 cups water
1 cup lite soy sauce
1 cup barbecue sauce
1 large onion, thinly sliced
1 teaspoon brown sugar

Steps:

  • Asian Slaw: Combine green cabbage, red cabbage, and carrots and toss in a medium serving bowl. Whisk together rice wine vinegar, sugar, lime juice, ground ginger, and salt and pour over salad mixture. Toss and chill until serving.
  • Sweet Potato Wedges: Cut each sweet potato into eighths. With a pastry brush, coat each piece lightly with canola oil. Bake in a preheated 425 degree F oven for 20 minutes or until tender. Set aside and keep warm until serving.
  • Tempeh: Cut each tempeh cake in half and then cut each piece in two lengthwise. You should end up with 4 semi-square pieces. Score each piece on both sides, diagonally, about 1/8-inch deep. Repeat scoring in opposite direction to create a diamond pattern. In a medium saucepan, bring 2 cups water to boil, add tempeh cakes, and steam for 5 minutes. Remove from heat and place tempeh in a flat bowl or square baking pan and pour soy sauce over top, making sure each piece gets coated. Let set for 5 minutes.
  • Arrange tempeh on lightly oiled baking sheet. With a pastry brush, lightly coat the top of each tempeh cake, top and bottom, with barbecue sauce.
  • Caramelized Onions: In a medium non-stick skillet, heat canola oil over medium-high heat and add sliced onion. Saute onion until translucent, add the brown sugar, and continue cooking another 1 to 2 minutes. Remove from heat.
  • Assembly: Place 1 or 2 slices of BBQ tempeh in a whole grain sandwich bun. Top with caramelized onions. Place on a plate with 4 sweet potato wedges and a serving of Asian slaw. Have a small bowl of barbecue sauce on the side.
  • Beverage suggestion: Loose and/or bag Green Tea

This was printed in my local newspaper and I gave it a try. A very different way to serve sweet potatoes and so delicious. The great joy in this recipe is it gives you a variation for day one and then on day 2 you can dress it up a little differently and enjoy once again.

1/4 cup lime juice (Fresh is best.)
1 1/2 tablespoons sugar
1 1/2 teaspoons grated fresh ginger
1/2 teaspoon salt
1 1/2 lbs sweet potatoes, peeled and coarsely grated
1/2 cup toasted chopped walnuts or 1/2 cup unsalted peanuts
1/4 cup sliced scallion
3 cups shredded cooked chicken
1 tablespoon hoisin sauce
2 teaspoons toasted sesame oil (Or to taste.)
mixed greens

Steps:

  • In a large bowl, whisk together the oilive oil, lime juice, sugar, ginger and salt until combined.
  • Add the grated sweet potatoes, nuts and scallions; reserve approximately 2 cups of the mixture for day 2 variation and serve the remainder in the lettuce leaf cups.
  • Day 2: In a medium size bowl, toss together the reserved sweet potato slaw with the chicken, hoisin sauce and seasame oil; serve over a bed of mixed greens.
  • The recipe serves 8, 4 on day 1 and 4 on day 2.

2 sweet potatoes (about 195g each)
90g pomegranate seeds
8 walnut halves , broken
small handful coriander , chopped
120g pot bio yogurt
1 small red onion , halved and thinly sliced
160g peeled celeriac , thinly sliced into matchsticks
2 celery sticks , chopped
1 tbsp lemon juice
1 tbsp rapeseed oil
2 tsp balsamic vinegar
0.5 - 1 tsp English mustard powder (optional)
2 tbsp chopped parsley

Steps:

  • Heat oven to 200C/180C fan/gas 6. Roast the sweet potatoes for 35-40 mins until a knife slides in easily.
  • Meanwhile, pour boiling water over the onion and leave for 5 mins, then rinse under the cold tap and pat dry with kitchen paper. Tip into a bowl and add the celeriac and celery with all but 4 tbsp yogurt along with the remaining slaw ingredients and toss together.
  • Cut into the potatoes and gently squeeze to open them. Top with the remaining yogurt, pomegranate and walnuts. Scatter over the coriander. Serve with the slaw.

Serve slices of griddled halloumi cheese alongside bowls of zesty coleslaw and yogurt sauce and let everyone assemble their own

4 small sweet potatoes
1 tbsp vegetable or sunflower oil
2 large carrots
1 large red onion , halved
½ white cabbage , halved and cored
handful coriander , chopped, plus a few leaves to serve
200ml natural yogurt
juice and zest 1 lime
225g block halloumi
4 tbsp piri-piri sauce (we used medium strength)
4 large seeded wraps

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cut the sweet potatoes into wedges, tip onto a baking tray, drizzle with oil and season well. Toss the wedges until well coated in oil, then bake for 30 mins, turning halfway through cooking, until crisp and golden.
  • Meanwhile, shred the carrots, onion and cabbage using the slicing blade on a food processor (or grate the carrot and finely slice the onion and cabbage). Add the chopped coriander, 150ml yogurt, the lime juice and zest, and some seasoning. Toss together, then set aside. Mix the remaining yogurt in a bowl with 2 tbsp piri-piri sauce.
  • Heat a griddle pan. Slice the halloumi and put in a bowl with the remaining piri-piri. Toss gently to coat, without breaking up the cheese. Cook in the pan for a few mins each side. Meanwhile, warm the wraps in a microwave. To serve, pile the slaw and halloumi into wraps, dollop with the yogurt sauce and scatter with coriander. Serve with the wedges.
