SWEET POTATO MINESTRONE
This soup is full of healthy antioxidants. A very hearty soup for a cold winter night! I serve it with hot garlic bread. If you are lucky enough to have leftovers, it's great the next day!

- Heat oil in a soup pot over medium-high heat. Saute onion, celery, Italian seasoning, salt and pepper until tender, about 5 minutes. Stir in tomatoes, with the juice, broth, sweet potatoes, carrots, green beans and garlic. Bring to a boil; reduce heat to low and simmer, stirring occasionally, until vegetables are tender, about 30 minutes.

- In a soup kettle, combine the broth, water, sweet potatoes, onion, garlic and Italian seasoning; bring to a boil. Reduce heat; cover and simmer for 10 minutes. , Return to a boil. Add the cabbage, pasta and peas; cook for 8-10 minutes or until the pasta and vegetables are tender.

SWEET POTATO MINESTRONE
This is a delicious hearty soup. It can easily be adapted to a slow cooker by doing step one and then transferring everything from step 1 & 2 to a slow cooker and cook on low 8-10 hours. I originally got it off a newsletter that my HMO sent out years ago and I've been making it ever since.
