Canola oil
1 large sweet potato (about 1 cup)
4 tablespoons melted salted butter
1 egg
1/4 cup bread crumbs
2 tablespoons all-purpose flour
Salt and freshly ground black pepper
1/4 cup chopped chives (reserve 1 tablespoon for sour cream topping)
1/2 cup fresh or thawed frozen corn
1 cup sour cream

Steps:

  • In a shallow pan, heat oil to 350 degrees F.
  • Score sweet potato with a fork and microwave on high for 6 minutes or until cooked through. Let cool. Cut sweet potato in half, scoop out the flesh, and place it into a mixing bowl with the butter. Mash well. Add egg, bread crumbs, flour, salt, and pepper and mix well. Add the chives and corn and mix gently. Using 2 spoons to shape, scoop mounds into hot oil, cooking on both sides, in batches, until golden brown. With a slotted spoon or spider, remove fritters from oil and place on paper towel to dry. Mix sour cream, reserved chives, salt and pepper, to taste, and place a small dollop on each fritter when ready to serve.

About 1 pound sweet potatoes
1/3 cup all-purpose flour, or more as needed
1/3 cup cornmeal
1/4 cup chopped red onion
1 egg, lightly beaten
Salt and freshly ground black pepper
Vegetable oil for deep frying

Steps:

  • Heat the oven to 200°F. Line an oven-proof plate or baking sheet with paper towels. Peel and grate the sweet potatoes and squeeze or press them dry if necessary; you want 3 packed cups; save the rest for later.
  • Combine the grated sweet potato, flour, cornmeal, onion, egg, and sprinkle of salt and pepper and mix well with a fork. If the mixture looks too liquid, add more flour, 1 tablespoon at a time. (You can make the batter ahead of time and refrigerate for up to a couple of hours before cooking.)
  • Put 2 inches of oil in a large pot over medium heat. When the oil is hot, carefully drop spoonfuls of sweet potato into the pot. (Work in batches to avoid crowding the pot.)
  • Cook turning them with tongs or a slotted spoon as necessary so they brown on all sides, until they're cooked through, 5 to 7 minutes. Transfer the finished fritters to the paper towel-lined plate and put it in the oven to keep warm while you make the rest. Serve hot or at room temperature, with more salt and pepper if you like.
  • Cooks' Notes
  • Drying Grated Vegetables: Put them into a strainer over a bowl or just squeeze them between your hands.
  • Heating Oil for Deep Frying: To use a thermometer for deep frying, clip it on the side of the pot and make sure the tiny hole that registers the temperature isn't touching the pot. If you don't have a thermometer, use a pinch of cornmeal or flour to test when the oil is ready for frying: It should sizzle immediately but not burn.
  • Putting the Fritters in the Oil: To minimize splattering, hold one spoon close to the oil and scrape the batter into the oil with another spoon.
  • Recognizing Doneness: The fritters should be golden on the outside and soft but not wet in the middle. Check inside-you should still be able to tell the sweet potatoes were grated.

3 cups shredded and peeled sweet potatoes, slightly packed (about 2 medium)

1 small onion, grated
1/4 cup coconut oil

  • Pour boiling water over sweet potatoes in a large bowl; let stand 20 minutes. Drain, squeezing to remove excess liquid. Pat dry., In a large bowl, whisk the eggs, flour, baking powder, cornstarch, seasoned salt and harissa. Add the sweet potatoes and onion; toss to coat., In a large nonstick skillet, heat 2 tablespoons coconut oil over medium heat. Working in batches, drop sweet potato mixture by 1/4 cupfuls into oil; press slightly to flatten. Fry for 1-2 minutes on each side until golden brown, using remaining oil as needed. 1 cup whole milk fresh ricotta
1/4 cup confectioners' sugar, plus more for dusting
Kosher salt and freshly cracked pepper
1/2 cup self-rising flour

Steps:

  • Heat about 3 inches of oil in a deep heavy pot, fitted with a deep-frying thermometer, to 365 degrees F.
  • In a large bowl combine the potato, ricotta, sugar, salt and pepper, to taste, with a hand mixer until smooth. Fold in the flour, a little at a time, until just combined.
  • Working in batches to avoid crowing the pot, drop heaping teaspoons of the batter into the hot oil. Fry until golden brown, turning as needed to brown evenly, about 1 to 2 minutes.   • Heat 2 inches of oil in a heavy saucepan or fryer to 375 degrees.
  • Grate the sweet potatoes into medium-sized bowl, cover them with boiling water, and let them stand for 15 minutes. Drain off the water and slowly add the remaining ingredients, stirring to make sure that they are well mixed. You should have a thickish paste that will hold its shape when picked up in a tablespoon. If the mixture is too thick, add a bit of warm water. If it is too thin, add a bit more flour.

1 onion, chopped
2 poblano peppers, chopped (or small green bell peppers)

  • Preheat oven to 425°F Coat a baking sheet with cooking spray.
  • Prick sweet potato in several places with a fork. Microwave on High until just cooked through, 7 to 10 minutes. (Alternatively, place in a baking dish and bake at 425ºF until tender all the way to the center, about 1 hour.) Set aside to cool.

4 tablespoons coriander leaves (optional)

Steps:

  • Coat a large non-stick fry pan with cooking spray and cook the chicken breast fillets for 5 minutes each side. Pour over the lemon juice during the last minute of cooking. Transfer to a plate, cover with foil and keep warm while you make the fritters.

3 free-range eggs
2 tsp coconut oil
1 tsp cider vinegar
1/2 ripe avocado, pit removed

  • Break one egg into a mixing bowl and whisk. Add the sweet potato, one teaspoon of the coconut oil and a good pinch of salt and pepper and mix until completely combined.

Frying ukoy the Bad Saint way is a very active process­-the fritter will blow apart in the oil before you tease it back together. Use a tall pot with plenty of extra room since the oil will bubble vigorously when the mix hits it.

3 Thai chiles, thinly sliced
1 garlic clove, finely chopped
2 tablespoons chopped red onion
1/4 cup sugarcane vinegar or distilled white vinegar
Kosher salt
1 medium sweet potato, peeled
4 medium carrots, peeled
Kosher salt
8 cups (or more) vegetable oil
3/4 cup (or more) club soda
1 teaspoon fish sauce
1 1/4 cups cornstarch
4 ounces small or medium shrimp, peeled, deveined
1 cup cilantro leaves with tender stems
A deep-fry thermometer

Steps:

  • Mix chiles, garlic, onion, and vinegar in a small bowl; season with salt.
  • Thinly slice sweet potatoes and carrots into 3x1/4" planks (use a mandoline if you have one), then slice lengthwise into matchsticks. Place in a medium bowl and toss with a few pinches of salt. Let sit until slightly softened, about 30 minutes. Rinse off salt and pat dry.
  • Pour oil into a large heavy pot to a depth of at least 2" but with at least a 4" headspace, as oil will bubble aggressively when you add fritters. Fit pot with thermometer; heat oil over medium-high until thermometer registers 330°F-340°F.
  • Meanwhile, combine club soda and fish sauce in a large measuring glass. Add cornstarch and whisk until smooth. Place half of sweet potato and carrot mixture, shrimp, and cilantro in a medium bowl and toss to combine. Pour in half of cornstarch slurry and toss to coat (slurry should cling to shrimp and vegetables in a light, even layer).
  • Using a slotted spoon, carefully lower half of slurry-coated vegetable and shrimp mixture into oil. Once bubbling subsides, mixture will disperse across the surface of oil. Using a spider or a clean slotted spoon, corral vegetables and shrimp by gathering them against the side of the pot until they form a large mound that clings together and can be turned as a single unit. Fry, turning occasionally and increasing heat as needed to keep oil temperature between 330°F and 340°F, until fritter is golden brown and crisp around edges, about 4 minutes. Transfer to a wire rack set inside a rimmed baking sheet. Repeat process with remaining slurry-coated vegetable and shrimp mixture, adding a splash or so of club soda if needed to loosen batter (it should look like a glossy coating), to make another fritter.
  • Repeat entire process with remaining sweet potato and carrot mixture, cilantro, shrimp, and cornstarch slurry to make 2 more fritters.

2/3 cup flat leaf parsley
1/3 cup flour
2 large eggs

  • Preheat the oven to 200 degrees.
  • Chop celery and celery leaves.
  • Peel and grate sweet potatoes.
  • In a large bowl toss sweet potatoes, diced ham,.
  • chopped scallions, chopped parsley, and flour.
  • Season with salt and pepper.
  • Add flour.
  • In another bowl, beat eggs with 1 t mustard.
  • Stir eggs into sweet potato mixture.
  • In large skillet, heat 2 T oil over medium high heat.
  • Working two at a time, add 1/3 C mounds of potatoe mixture, flattening out with a spatulat.
  • Lower heat and cook until golden brown, about 3 minutes.
  • Transfer to a baking sheet and keep warm.
  • Add 2 t oil between each batch.
  • In bowl, whisk remaining 2 T oil and 2 t mustard. Add 1/3 C parsley leaves, celery and celery leaves. Toss to dress.
  • Season with salt and pepper.
  • Serve topped with warm fritters.

1 lb sweet potato, peeled
salt, and freshly ground
1/2 cup flour

Steps:

  • Heat 2 inches of oil in a heavy saucepan or fryer to 375 degrees. Grate the sweet potatoes into medium-sized bowl, cover them with boiling water, and let them stand for 15 minutes.
  • Drain off the water and slowly add the remaining ingredients, stirring to make sure that they are well mixed. You should have a thickish paste that will hold its shape when picked up in a tablespoon. If the mixture is too thick, add a bit of warm water. If it is too thin, add a bit more flour.
  • Drop the mixture, a few tablespoons at a time, into the hot oil and cook the fritters for 3 to 5 minutes, or until they float to the surface, turning them once to make sure that they are slightly browned on each side.
  • Drain on absorbent paper and serve hot.

2 medium sweet potatoes (about 1 1/2 pounds)
Kosher salt and freshly ground black pepper
2 tablespoons butter, melted
2 scallions, chopped (about 1/4 cup)
1/3 cup chopped Chinese sausage
1 tablespoon red curry paste
1 large egg
1 cup panko
1/4 cup vegetable oil
1/2 cup mayonnaise
2 tablespoons sambal chili paste

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the sweet potatoes directly on the rack in the oven. Roast until the sweet potatoes are tender, about 1 hour. Let cool completely. When cooled, remove the skin from the potatoes and transfer the flesh to a bowl. Mash with a fork until smooth. Stir in the butter, scallions, sausage and curry paste until combined.
  • Shape the sweet potato mixture into 3-inch cakes (about 1-inch thick). In a large shallow bowl, whisk the egg until lightly beaten; add the panko to another shallow dish. Dip the potato cakes in the egg, and then coat evenly in the panko.
  • Heat the oil in a large skillet over medium heat. In batches, cook the fritters in the hot oil until golden, 2 to 3 minutes per side. Transfer to a paper towel-lined plate to drain. Stir together the mayonnaise and sambal; serve the hot fritters with the chili mayonnaise.

Grilled Chops with Bourbon Glaze and Sweet Potato Fritters image

1/2 cup liquid (I'm using cider)
1/4 cup bourbon
1/4 cup honey
1 stick (8 tablespoons) butter, cut into pieces
2 pounds grilling meat (I'm using pork chops)
Olive oil, for the meat
1 teaspoon cracked coriander
Kosher salt and freshly ground black pepper
2 medium sweet potatoes
1 tablespoon fresh thyme
2 cloves garlic, minced
1 small onion, grated (I'm using yellow)
1 lemon, zested
1 large egg
3 tablespoons all-purpose flour
Canola oil, for frying
Kosher salt and freshly ground black pepper

Steps:

  • For the chops: Preheat a gas grill to medium-high heat on one side and low on the other side. If using a charcoal grill, bank very hot coals on one side of the grill.
  • Put the cider, bourbon and honey in a small saucepan and cook over medium heat until reduced by half. Whisk in the butter and hold the sauce in a warm place
  • Rub the chops with some olive oil, then sprinkle with the coriander and 1 teaspoon each salt and pepper. Grill on the hot side of the grill for 3 minutes per side. Move the chops to the cooler side of the grill, cover with the lid and cook, occasionally brushing with the glaze, until they reach desired tenderness and temperature, 145 degrees F for pork. Let rest for 5 minutes.
  • For the fritters: While the meat is cooking, grate the sweet potatoes on the large holes of a box grater into a clean kitchen towel. Wring as much liquid out of the sweet potatoes as possible and discard the liquid.
  • In a medium bowl, combine the sweet potatoes, thyme, garlic, onion and lemon zest. Stir in the flour and egg and mix to combine.
  • In a large cast-iron pan, add enough canola oil to reach a depth of 1/4 inch (enough oil to come halfway up the sides of the fritters) and place over medium-high heat.
  • Form the fritters by hand or using a 1/4-cup measure. In batches, fry the fritters until golden-brown, about 2 minutes per side. Transfer to paper towels to drain. Season with salt and pepper. Serve with the chops.
