Steps:
- Preheat the oven to 350 degrees F. Line a cupcake pan with 18 paper liners, set aside.
- Make the sweet potato puree by processing the sweet potatoes in a food processor. Set aside. In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, salt, ginger and nutmeg.
- In a large bowl, whisk together the butter, brown sugar, granulated sugar and eggs. Add the dry ingredients. Whisk in the sweet potato puree. Fill each cupcake in the prepared pan three-quarters full of batter.
- Bake until the tops spring back when touched and a toothpick inserted in the center comes out clean, 20 to 25 minutes. Let cool.
- To assemble: Frost the cupcakes with the Brown Sugar Cream Cheese Frosting. Sprinkle with the Candied Pecans.
- In a mixer fitted with the paddle attachment, beat the cream cheese until creamy. Add the butter and beat until well incorporated. Add the light brown sugar and beat until fluffy. Add the powdered sugar 1 cup at a time, beating until well incorporated. Add the vanilla extract and beat until combined.
- Preheat the oven to 300 degrees F. Spray a baking sheet with nonstick cooking spray.
- Beat the egg white in a bowl until frothy; whisk 4 teaspoons water and the vanilla extract into the egg. Stir the sugar, cinnamon and salt into the egg mixture. Add the chopped pecans, stir to coat completely. Spread the pecans onto the baking sheet. Bake the pecans, stirring about every 20 minutes, until the coating forms a glaze, about 1 hour. - Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the sweet potato cubes, cover, and steam until just tender, 15 to 20 minutes depending on thickness. Remove the sweet potato from the steamer and allow to cool. Transfer the cooled sweet potato to a blender. Pour in the orange juice. Cover blender, and puree until smooth. If mixture is too thick, add more orange juice, 1 tablespoon at a time, until the sweet potato is blended.
- Preheat the oven to 350 degrees F (175 degrees C). Line 48 muffin cups with paper muffin liners.
- Beat 1 cup butter, light brown sugar, and white sugar with an electric mixer in a large bowl until light and fluffy. Add the eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat in 2 teaspoons of vanilla extract with the last egg, then stir in the sweet potato puree and orange zest.
- Sift together the flour, baking powder, cinnamon, ginger, baking soda, and salt in a bowl. Mix the flour mixture into the sweet potato mixture, 1 cup at a time, mixing until just blended. Batter will be thick. Spoon the batter into the prepared muffin tins.

- Preheat oven to 350°F Line twenty four 2 1/2-inch muffin cups with paper bake cups. Set aside.

- Divide the batter evenly among the cups of the prepared muffin tins. Bake until the tops spring back when pressed, 18 to 20 minutes, rotating the tins halfway through. Let the muffins cool in the tins for a few minutes, then transfer them to a rack. While the cupcakes are still warm, top each with a marshmallow half, cut-side down. Let the cupcakes cool completely. (They can be cooked and cooled a day ahead and stored at room temperature in an airtight container.)
- Preheat the broiler. Transfer half the cupcakes to an unlined baking sheet, and broil, rotating the sheet as needed, until the marshmallows are toasted and golden. Repeat with the remaining cupcakes. This can be done up to 2 hours before serving.

CANDIED PECANS: Nonstick cooking spray, for greasing 1 egg white 1 tablespoon vanilla extract 1 cup sugar 2 teaspoons cinnamon 3/4 teaspoon salt 1 pound chopped pecans Preheat the oven to 300 degrees. Spray a baking sheet with nonstick cooking spray. Beat the egg white in a bowl until frothy; whisk 4 teaspoons water and the vanilla extract into the egg. Stir the sugar, cinnamon and salt into the egg mixture. Add the chopped pecans, stir to coat completely. Spread the pecans onto the baking sheet. Bake the pecans, stirring about every 20 minutes, until the coating forms a glaze, about 1 hour. Allow to cool on the baking sheet. Pay attention while you're baking from personal experience they can go from done to burned, in an instant.
- 7. Tips: Feel free to use a regular cream cheese or vanilla frosting. For your topping add a sprinkle of nutmeg, or utilize crystalized/candied ginger. - To make the sweet potato mash or puree for this cupcake, you need - 1. To do preheat oven at 400 degrees. Pierce 1 medium sweet potato for many times, and place it on a baking sheet in the oven and bake until its soft for about 1 hour or something. Allow to cool slightly, then peel and puree it in a food processor, or mash it. 2. Preheat oven to 350 degrees. Line 12 muffin cups and keep it aside 3. Take a mixing bowl and whisk together, flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg, set aside. 4. In the bowl of an electric mixer, whip together butter and brown sugar until lighter and slightly fluffy for about 3 - 4 minutes. Now add egg and vanilla in it. Then slowly add the dry ingredients and buttermilk it and combine it well. At the end, add the sweet potato puree in it. 5. Now pour the mixture in the cups for about 2/3 full. Sprinkle some brown sugar over each cupcake and bake for next 20-21 minutes or until the toothpick comes out clean. Keep it on rack to get cool. Take some butter on a cookie sheet. Place mini marshmallows in a single layer on cookie sheet, keeping the marshmallows close together. Heat oven to broil. Place marshmallows in oven below broiler cook for about 30 seconds-1 minute until they start to brown slightly. Now top this on the cupcakes.

- For the Cake: Preheat oven to 350 F. Using a large mixing bowl, combine the ingredients one at a time in the order listed above. Scoop batter out evenly into a lined 12-cup muffin or cupcake pan. Bake for 18-20 minutes or until done. For the Icing: Using a small saucepan, melt together the coconut oil and chocolate chips. Put in fridge to cool and thicken for 20-25 minutes, then remove and stir. Dip cooled cupcakes (top down) into icing. Sprinkle tops with cacao nibs if using (approximately 1/4 teaspoon of nibs on each). Set in fridge.

- 1.Preheat oven to 350 degree. Line cupcake baking pan with paper cupcake paper. 2.Drain sweet potatoes and slighty rinse with water to get rid of extra sugar. Mash sweet potatoes in a bowl and add cinnamon and orange zest. Add 1 tablespoon butter. Beat for 1-2 minutes on medium speed with a mixer
