4 large sweet potatoes
2 cups fresh or frozen cranberries
1/2 cup packed brown sugar
2 tablespoons butter, melted
1/2 cup orange juice
TOPPING:
1/2 cup chopped walnuts
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
3 tablespoons cold butter

Steps:

  • Place sweet potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer until tender, 20-30 minutes. Drain. When cool enough to handle, peel potatoes and cut into 1/4-in. slices. , Place half in a greased 2-1/2-qt. baking dish. Top with half of the cranberries, brown sugar and butter. Repeat layers. Pour orange juice over top. Cover and bake at 350° for 30 minutes. , In a small bowl, combine the walnuts, brown sugar and cinnamon; cut in butter. Sprinkle over sweet potato mixture. Bake, uncovered, until topping is golden brown, about 10 minutes longer.

My father's mother made this every year for our Thanksgiving dinner. It is not Thanksgiving to me without this dish. I do not like the tartness of most cranberry dishes, and sweet potatoes can be bland by themselves. This dish combines both to make a great all-in-one dish. When I take this dish to another person's home, I bake the first time and add the yams, cover, and then wait to heat until I am at their house.

1 (12 ounce) package whole cranberries
1 small unpeeled orange, sliced
1 ⅓ cups white sugar
½ cup pecan pieces
¼ cup orange juice
¾ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground mace
1 (40 ounce) can cut yams, drained

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine cranberries, orange slices, sugar, pecans, orange juice, cinnamon, nutmeg, and mace in a 2-quart baking dish.
  • Bake in preheated oven until cranberries soften, about 30 minutes. Stir yams into cranberry mixture and continue baking until heated through, about 15 minutes more.

4 (31 ounce) cans yams, drained
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
3/4 cup fresh cranberries
1 cup walnut pieces or 1 cup pecan pieces (optional)
1/2 cup oatmeal (not instant)
1/4 cup flour
1/2 cup packed brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons cold butter or 2 tablespoons margarine
1/2 cup marshmallows

Steps:

  • Preheat over to 350 degrees.
  • Spray a 13x9 inch pan with cooking spray.
  • Cut yams into one inch cubes.
  • Place in baking dish.
  • Add in the cranberries and nuts.
  • Sprinkle with cinnamon and nutmeg.
  • Prepare Topping:.
  • Mix oatmeal, flour, packed brown sugar, cinnamon and nutmeg together in a separate bowl.
  • Cut in the butter.
  • Consistancy should be lumpy.
  • Sprinkle over the top of the Yam mixture.
  • Bake at 350 degrees for 30 minutes.
  • The cranberries should have burst.
  • Sprinkle marshmallows on top and bake five more minutes or until marshmallows are browned.

5 medium sweet potatoes
1/2 cup cranberry sauce
1/2 cup dried cranberries, chopped
2 tablespoons butter, softened
1/2 teaspoon salt
1/2 cup walnut pieces, toasted

Steps:

  • Preheat oven to 350 degrees.
  • Clean potatoes and pierce with fork.
  • Place on oven rack, bake for 1 and 1/4 hours or until tender, and set aside to cool.
  • Cut each potato in half lengthwise and scoop pulp out with a spoon leaving 1/4 inch shell.
  • Mash the potato pulp until smooth, stir in cranberry sauce, dried cranberries, butter and salt.
  • Spoon mixture back into each shell dividing evenly.
  • Place shells in baking pan and sprinkle with walnuts.

I do not remember where I got this recipe, but I wanted a sweet potato dish that did not use a lot of sugar as the normal recipes.

4 lbs small sweet potatoes, peeled and sliced crosswise 1/4 inch thick
4 tablespoons unsalted butter, melted
2 tablespoons Bourbon or 2 tablespoons vanilla
salt & freshly ground black pepper
1 cup water
3/4 cup cranberries
1/3 cup light brown sugar
1/8 teaspoon cayenne pepper
1/8 teaspoon cinnamon

Steps:

  • Preheat the oven to 350°. Butter a large, shallow oven safe dish. Arrange the sweet potatoes overlapping the slices slightly. Pour 1/2 cup of the water over the sweet potatoes. Cover with foil and bake for about 40 minutes, or until just tender.
  • Mix the melted butter with the bourbon or Vannila. Spoon the mixture over the sweet potatoes. Increase the oven temperature to 425°. Season with salt and black pepper and bake in the upper third of the oven for about 25 minutes, basting halfway through cooking, until the bourbon mixture is almost completely absorbed.
  • In a saucepan, combine the cranberries, the remaining 1/2 cup of water and the brown sugar and med-heat until the cranberries start to burst, about 10 minutes. Drain the cranberries, keep the liquid.
  • Stir the cayenne and cinnamon into the cranberry liquid and spoon it over the sweet potatoes. Bake in the upper third of the oven, basting well after 5 minutes, for 20 minutes longer, until the potatoes are glazed and most of the liquid is gone. During the last 5 minutes of baking, scatter the cranberries on top. Serve.
  • These can be made a head of time, then warmed before serving.

Now what could be more perfect than that? I also have another version of this recipe posted a little different from this one with orange juice in it as well.

1 c frozen cranberries or could use fresh
1/4 c coarsely ground pecans
1/4 c orange marmalade (warmed)

  • 1. Preheat oven 350 degrees Place sweet potatoes in buttered 11x7x2 baking pan. Could use fresh cut up that you have par boiled.
  • 2. Spread with cranberries and pecans. Can use fresh cranberries as well. Spread marmalade on top. Cover until heated through ~ 25 minutes Serves 4-6 servings

1 teaspoon ground cinnamon

  • Place sweet potatoes in large pot, add water to cover sweet potatoes. Bring to boiling. Cover and cook 20 to 25 minutes or until tender, let cool.
  • Preheat oven to 375 degrees. Pell and mash sweet potatoes. Stir in cranberry sauce and cinnamon. Spoon into lightly greased 2-quart casserole.

LAYERED SWEET POTATO AND CRANBERRY CASSEROLE



Layered Sweet Potato and Cranberry Casserole image

I tried this casserole for Thanksgiving and was very pleased with it. It is lighter than the traditional sweet potato casserole and fresher tasting, too. It is an easy casserole to put together but it does take a bit of time to layer the sweet potato slices. However, it is worth it because the end result is very attractive. Usually I follow a recipe exactly the first time I am making it. But in this case, I have to admit to increasing the amounts of brown sugar and cranberries used in the layering. I upped the brown sugar to about 2/3 cup and the cranberries to 1-1/2 cups easily -- maybe a little more. Didn't hurt the casserole a bit! The time for baking or boiling the potatoes is not figured into the timing because it can be done a day or two ahead of time.

  • Bake the potatoes in a 350 degree F. oven for about an hour or until tender. I actually baked 5 potatoes and found I needed the extra one for the casserole. You may also boil the potatoes, but I find baking them gives a sweeter taste; also, they peel easier. Drain potatoes if they were boiled. In either case let the potatoes cool enough to handle and peel the potatoes. You can do this step a day or two ahead of time. Place potatoes in a covered container and refrigerate.
  • Preheat the oven to 350 degrees F. Cut the potatoes in 1/4-inch slices. Grease a 9x13-inch baking dish and layer the slices in the dish, overlapping them slightly. You'll have 3 or 4 vertical rows depending on how "fat" your potatoes are.
  • Sprinkle the potatoes with half the brown sugar; dot with 1-1/2 teaspoons butter. Top with 1/2 of the cranberries. Repeat layers, using remaining brown sugar and cranberries. Pour orange juice over the top of the casserole.
  • Cover casserole and bake in preheated oven for 45 minutes.
  • Combine the walnuts, 2 tablespoons of melted butter, 1 tablespoon brown sugar and cinnamon; stir well. Sprinkle this mixture over the top of the casserole and return to the oven. Bake, uncovered, an additional 10 minutes.

5 medium sweet potatoes, peeled and cut into 1-inch pieces (about 1 1/2 pounds)
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/2 cup cranberry juice cocktail
3 tablespoons dark brown sugar
2 tablespoons butter
1/2 teaspoon ground cinnamon
1/4 cup chopped toasted almonds

Steps:

  • Preheat the oven to 400 degrees F.
  • On a baking sheet, toss together the sweet potatoes, oil and some salt and pepper. Roast until the potatoes are golden brown and cooked through, 30 to 40 minutes.
  • In the meantime, in a small saucepan over medium-high heat, reduce the cranberry juice by half. Add the brown sugar, butter and cinnamon, stirring to dissolve and incorporate.
  • When the potatoes come out of the oven, add them to a large bowl. Pour the glaze over top and toss to coat completely. Serve topped with the toasted almonds.

6 medium dark-orange sweet potatoes (2 pounds), peeled and cut into small pieces
2 tablespoons butter or margarine
1/2 teaspoon salt
1/2 cup soft bread crumbs (about 1 slice bread)
1/4 cup dried cranberries
1/4 cup coarsely chopped pecans
2 tablespoons butter or margarine, melted

Steps:

  • Place sweet potatoes in 3-quart saucepan; add enough water just to cover potatoes. Cover and heat to boiling; reduce heat. Simmer covered 20 to 25 minutes or until potatoes are tender when pierced with a fork; drain. Return potatoes to saucepan. Heat potatoes over low heat about 1 minute, shaking pan often to keep potatoes from sticking and burning, to dry potatoes.
  • Heat oven to 350°. Mash potatoes, 2 tablespoons butter and the salt in medium bowl with potato masher or electric mixer on low speed until no lumps remain. Spoon into ungreased 1-quart casserole. Mix remaining ingredients; sprinkle over potatoes.
  • Bake uncovered about 30 minutes or until potatoes are hot and topping mixture is golden brown.
