This recipe was found in The Sweet Potato Lover's Cookbook, 1998, & is a simple, tasty spread especially on whole-grain or whole-wheat bread.

Number Of Ingredients 3

1 medium sweet potato
1 cup unsalted butter, softened
1/8 teaspoon ground nutmeg

Steps:

  • Wash the sweet potato then steam for 20 to 30 minutes until tender,
  • Cool & peel the potato, then puree it in a food processor (I usually just mash it with a hand-held potato masher!).
  • Add the butter & process until smooth, then add the nutmeg & process until well-mixed.

Number Of Ingredients 8

6 cups diced peeled sweet potatoes
2 cups diced peeled tart apples
4 cups water
2/3 cup orange juice concentrate
1/2 cup packed dark brown sugar
1-1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/4 to 1/2 teaspoon ground cloves

Steps:

  • In a heavy saucepan, combine all ingredients; mix well. Bring to a boil. Reduce heat; simmer, uncovered, for 2 to 2-1/4 hours or until mixture is thickened and about 1 cup of liquid remains, stirring occasionally., In a blender, process mixture in batches until smooth. Transfer to jars or containers. Chill for at least 2 hours before serving. Store in the refrigerator.

2 medium sweet potatoes, about 260 grams
1 carrot
1 onion
1/2 cup water
1 tablespoon tahini or 1 tablespoon natural unsalted almond butter
1/4 teaspoon curry
1/4 teaspoon ground cumin

Steps:

  • COOK POTATOES:.
  • In a saucepan, cover potatoes with water and bring to a boil.
  • Simmer over medium heat until potatoes are soft when pierced with a knife (about 30 minutes). (During this period, prepare sauce.).
  • Remove from saucepan. When cool, remove skin.
  • PREPARE SAUCE:.
  • While potatoes are cooking, peel carrot and onion, and chop into small pieces.
  • Place chopped carrot and onion into another saucepan and cover with 1/2 cup of water.
  • Simmer carrots and onions until soft, about 8 minutes.
  • COMBINE IN FOOD PROCESSOR:.
  • Pureee sweet potato in a food processor with tahini or almond butter, curry powder, and ground cumin until just combined.
  • Add carrot-onion mixture and puree until smooth.

My friend Janet from upstate NY came to visit me this past week. While she was in Arizona she stopped at a shop and got me a jar of Sweet Potato Butter. I'd never had it before and being that I love Pumpkin Pie flavour, this really appealed to me. I just love the taste of this butter. This would be great for a tart filling or as a topping on toast, muffins or vanilla ice cream.

6 cups diced peeled sweet potatoes (I used organic)
2 cups diced peeled tart apples (organic granny smith)
4 cups filtered water
2/3 cup orange juice concentrate
1/2 cup packed dark brown sugar (organic)
1 1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/8 teaspoon ground cardamom
1/4 teaspoon clove

Steps:

  • In a large saucepan, mix all the ingredients together well. Bring to a boil.
  • Reduce the heat to a simmer uncovered for 2 to 2 1/2 hours or until the mixture is thick and about 1 cup of liquid remains, stir occasionally.
  • Process the mixture in a blender in batches until smooth. Transfer to jars or containers and chill for at least 2-3 hours in the fridge. Store in the fridge.
