Here's what you need: sweet potato, olive oil, red onion, garlic, bell peppers, jalapeño, green onions, fresh rosemary, eggs

1 sweet potato
1 tablespoon olive oil
½ red onion
1 clove garlic
2 bell peppers
1 jalapeño, optional
2 green onions
1 tablespoon fresh rosemary
4 eggs

Steps:

  • Dice the sweet potato
  • Heat the olive oil in a large skillet over medium-high heat. Add the diced sweet potato, cover, and cook, stirring occasionally, for about 10 minutes, or until it begins to soften.
  • While the sweet potato cooks, dice the red onion and mince the garlic. Add to the skillet.
  • Dice and seed the bell peppers and add to the skillet.
  • Dice the jalapeño, if using, and add.
  • Chop the green onion and rosemary, if using fresh, and add to skillet. Cover and cook for about 5 minutes, or until the sweet potato is tender.
  • Create 4 wells in the vegetable mixture, not too close to the edges of the skillet, but far enough apart that they aren't touching. Crack 1 egg into each well. Cover and cook for 3-5 minutes more, or the eggs are cooked to your liking.
  • Breakfast is served!

Number Of Ingredients 16

2 tablespoons extra-virgin olive oil, 2 turns of the pan
1/2 pound bulk breakfast sausage, such as maple sausage
1 medium sweet potato, scrubbed clean, cut in 1/2 lengthwise, thinly sliced into 1/2 moons
1 large red onion thinly sliced, divided
2 teaspoons chili powder, 2/3 palm full
1 teaspoon ground cumin, 1/3 palm full
2 teaspoons ground coriander, 2/3 palm full
Salt and pepper
3 yellow vine ripe tomatoes, seeded and diced
1 small jalapeno pepper, seeded and chopped
2 to 3 tablespoons chopped fresh cilantro, a palm full
1 lime, juiced
1/2 cup chopped flat-leaf parsley, a few handfuls
1 cup grated manchego or extra-sharp Cheddar
1 tablespoon butter
4 large eggs

Steps:

  • Preheat a large nonstick skillet over medium high heat with 2 turns of the pan of olive oil, about 2 tablespoons. Add the breakfast sausage and break it up with the back of a wooden spoon into little chunks, brown sausage for 3 minutes. Add the sweet potatoes and 3/4 of the chopped red onion to the sausage, season with chili powder, cumin, coriander, salt and pepper, stir frequently and cook for 10 to 12 minutes, or until the potatoes are nice and tender.
  • While the hash is cooking, in a small bowl combine the tomatoes, jalapeno, and the remaining chopped red onion, cilantro, lime juice and a little salt and pepper.
  • Once the hash is cooked, add the chopped parsley, stir to combine and transfer hash to a serving platter. Sprinkle with the cheese and cover with aluminum foil, the cheese will melt while you make the fried eggs.
  • Wipe clean the skillet you made the hash in, return it to the cook top over medium-high heat and add the butter. Once the butter has melted, crack each of the eggs into the skillet, season with a little salt and pepper and fry to desired doneness. Eggs may, of course, be scrambled as well. As you like!
  • Transfer the fried eggs to the top of the hash, sprinkle with the fresh tomato salsa and serve.

An easy, hearty breakfast that cooks up on a sheet pan (and makes perfect leftovers for later in the week)!

1 medium sweet potato (about 3/4 pound or 12 ounces, peeled and cut into 3/4-inch dice)
1 tablespoon olive oil
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon ground cumin
1/8 teaspoon smoked paprika
1/2 teaspoon salt + more to taste
1 15-ounce can black beans, drained and rinsed
2 cups shredded curly kale
Freshly ground black pepper to taste
Sliced avocado
Poached egg
Salsa

Steps:

  • Preheat oven to 400 degrees Fahrenheit and pull out a large rimmed sheet pan.
  • Place the cubed sweet potato on the sheet pan and drizzle the olive oil over the top. Sprinkle the onion powder, garlic powder, cumin, smoked paprika, and 1/2 teaspoon salt over the top. Toss with a wooden spoon or (easier) your hands to distribute the oil and spices. Try to give each piece of sweet potato as much space as possible.
  • Bake until tender and beginning to brown, 15-20 minutes, tossing once halfway through. Remove from oven and add the beans and kale to the pan. Toss with a wooden spoon to mix everything together. Place in oven for another 5 minutes until the beans are warmed through and the kale has wilted.
  • Remove from oven. Taste and add additional salt and pepper if desired. Serve with avocado, salsa, and/or a poached egg if desired.

SWEET POTATO CHICKEN BREAKFAST HASH



Sweet Potato Chicken Breakfast Hash image

1/4 cup diced sweet potatoes
1/2 cup cooked chicken, roughly chopped
1/4 teaspoon paprika
Salt and freshly ground black pepper
1 egg
Suggested toppings: salsa, shredded cheese, diced avocado

Steps:

  • Add the sweet potatoes to a wide mug or small bowl with 1 tablespoon water and microwave until tender, 2 to 5 minutes. Stir in the chicken, paprika and salt and pepper to taste. Microwave until warmed, about 1 minute. Carefully crack the egg on top. Sprinkle a little water on top of the egg and microwave until the egg white is solid but the yolk is still runny, 30 seconds to 1 minute. Serve immediately with toppings of your choice.

4 slices bacon, cut into 1/2-inch thick pieces
1 small onion, diced
1 red bell pepper, diced
1 large sweet potato, peeled and diced into 1/2-inch cubes (approx 4 cups cubes)
2 cups kale leaves, roughly chopped
1/4 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1 salt and pepper, to taste
5 eggs
1 green onion, sliced

Steps:

  • Heat a large saute pan on medium heat. Add the bacon and saute until golden and crispy. Use a slotted spoon to remove the bacon to a paper towel or small bowl.
  • Add the diced onion and red bell pepper to the pan and saute for one minute to soften.
  • Add the diced sweet potato and spices to the pan. Cook the sweet potato for 10-12 minutes, stirring often. Place a lid on the pan for the last 5 minutes to soften the sweet potato until fork tender.
  • Add the bacon back into the pan along with the kale and stir for an additional 1-2 minutes or until the kale is wilted.
  • Use a spatula to create 4 wells in the hash. Crack an egg into each well and cook until the eggs are done to your liking. You can add a lid to the pan to cook the eggs through faster.
  • Remove the breakfast hash from the heat. Season with salt and pepper and top with sliced green onion. Serve immediately.
