PORK, APPLE AND SWEET POTATO SHEPHERD'S PIE
Pork, apple, sweet potatoes. Delicious!! I found this recipe not too long ago and, while I was a little worried since it's nothing like your typical shepherd's pie, I felt I had to try it! It was a true winner with my family and will definitely be made again.

Steps:
- Preheat oven to 400°F.
- 1) In a large pot of boiling salted water, cook sweet potatoes until fork tender, about 15 minutes. Drain, then return to pan with next four ingredients, mash and set aside.
- 2) Season pork with salt & pepper. In a large, deep skillet, heat oil over medium-high heat. Cook pork, in batches until browned on all sides; remove to a plate.
- 3) Add celery and onion to the fat in the pan and sauté until lightly browned. Return pork to pan with apple, apple juice, broth, thyme, sage and additional salt and pepper; reduce heat and simmer for 5-8 minutes or until liquid has reduced by about two-thirds.
- 4) Transfer to large baking dish (I used a 9x13 glass cake pan) and top with sweet potatoes, smooth top. Bake for about 30 minutes, until browned on top.

APPLE CHEDDAR PIE WITH SWEET POTATO CRUST
This is great cold--also with a good salad and chutney. I've also taken it on picnics and the children have taken it in lunch boxes. It's also good weekend fare for when you're busy and everyone's in and out.

APPLE AND SWEET POTATO PIE
I had heard on the Chew someone talking about an apple sweet potato tart. Started me thinking so I tried this from just things I had on hand.

Steps:
- Preheat the oven to 400°F. Prick sweet potatoes with a fork and place on a rimmed baking sheet lined with parchment paper. Bake about 1 hour or until very tender. Remove from the oven and let cool slightly. Line pie shell with parchment paper or foil and fill with pie weights or dried beans. Bake on the lower rack of the oven about 15 minutes or until just starting to set. Remove the weights and continue to bake 10 to 12 minutes or until lightly golden. Cool on a wire rack 10 minutes. Reduce the oven temperature to 350°F. Meanwhile, peel sweet potatoes and transfer flesh to the bowl of a food processor. Discard skins. Process until potatoes are puréed. Transfer 1 1/2 cups purée to a large bowl (you may have a litte extra). Add milk, sugar, eggs, cinnamon, ginger, nutmeg and salt, and whisk until combined and smooth. Layer apple slices in concentric circles in the bottom of cooled crust. Pour sweet potato filling into crust over apples (you may have extra filling depending on the depth of the crust). Bake about 50 minutes or until just set in center of pie. Let cool to room temperature on a wire rack. Serve or chill in the refrigerator until ready to serve.
