2 teaspoons olive oil
2 1/2-3 cups thinly sliced sweet onions, such as Vidalia
1/2 teaspoon salt, divided
1/3 cup orange juice
4 teaspoons balsamic vinegar
1 garlic clove, chopped fine
1 teaspoon grated orange peel
1 teaspoon chopped fresh rosemary
2 teaspoons Dijon mustard
2 teaspoons honey
4 salmon fillets, skin removed (1 inch thick)

Steps:

  • Heat oven to 425°F Spray 11x7-inch glass baking dish with cooking spray.
  • Heat oil in large nonstick skillet over medium-high heat until hot. Cook onions and 1/4 teaspoon of the salt 3 to 4 minutes or until onions begin to turn golden brown, stirring frequently. Reduce heat to medium-low and add garlic; cover and cook 5 minutes or until tender, stirring occasionally.
  • Meanwhile, combine orange juice, vinegar, orange peel and rosemary in small bowl; reserve 2 tablespoons for glaze. Add remaining mixture to onions; cook, uncovered, 2 to 3 minutes or until most of the liquid has evaporated. Whisk mustard and honey into reserved glaze.
  • Spread onion mixture in baking dish; top with salmon. Sprinkle with remaining 1/4 teaspoon salt; spoon reserved glaze over salmon. Bake 8 to 10 minutes or until salmon just begins to flake. Serve salmon topped with onion mixture.

ORANGE SALSA:
1/4 cup orange juice
2 tablespoons olive oil
2 tablespoons McCormick® Perfect Pinch® Salt Free Southwest Sweet 'n Smoky Seasoning, divided
2 tablespoons packed brown sugar, divided
1 pound salmon fillets
2 cans (11 ounces each) mandarin oranges, drained and cut into 1/2-inch pieces
2 tablespoons red bell pepper, finely chopped
1 tablespoon fresh cilantro, chopped
1/2 teaspoon McCormick® Perfect Pinch® Salt Free Southwest Sweet 'n Smoky Seasoning

Steps:

  • For the Salmon, mix juice, oil and 1 tablespoon each Seasoning and sugar in small bowl. Place salmon in large resealable plastic bag or glass dish. Add marinade; turn to coat well. Refrigerate 30 minutes or longer for extra flavor. Meanwhile, for the Salsa, mix all ingredients in medium bowl until well blended. Cover. Refrigerate until ready to serve. Preheat oven to 400°F. Mix remaining 1 tablespoon each Seasoning and sugar in small bowl. Remove salmon from marinade. Discard any remaining marinade. Rub salmon evenly with seasoning mixture Bake 10 to 15 minutes or until fish flakes easily with a fork. Serve with Orange Salsa.

1 teaspoon chili powder
1/2 teaspoon orange rind, grated
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon ground coriander
1/8 teaspoon black pepper
4 (6 ounce) salmon fillets

Steps:

  • Preheat broiler.
  • Combine brown sugar, chili powder, orange zest, cumin, paprika, salt, pepper, and coriander in a small bowl.
  • Rub spice mixture over both sides of salmon fillets.
