Steps:

  • Soak 1/2 thinly sliced small white onion in ice water, 15 minutes; drain and pat dry. Whisk 2 tablespoons lime juice, 1 tablespoon orange juice and 1/2 teaspoon honey in a large bowl; whisk in 2 tablespoons olive oil. Add 1/2 head chopped green-leaf lettuce, 1 diced mango, 1/2 diced English cucumber and the onion; season with salt and pepper. Add 1 diced avocado and toss.

Easy Honey Chipotle Salmon image

This easy honey chipotle salmon is made with only 5 ingredients and comes together in less than 30 minutes.

1/3 cup (5 Tablespoons) unsalted butter, melted
1/4 cup (90g) honey
1 - 2 garlic cloves, minced (I use 2)
1 teaspoon ground chipotle chili pepper*
1/2 teaspoon pepper
1/2 teaspoon salt
4 individual salmon fillets (or a large 2 lb. (900g) fillet)

Steps:

  • In a medium bowl, whisk everything together (except for the salmon of course). Place the salmon in a tupperware, baking dish, or zipped-top bag. Pour half of the marinade on top. Give everything a nice shake. Reserve the rest for step 4. Marinate for at least 15 minutes or up to 8 hours.
  • Meanwhile, fire up the grill to medium-high heat or preheat oven to 375°F (191°C).
  • You can grill the salmon on foil or on a cedar plank. Grill the salmon skin side down for 15 minutes- about 10 minutes per 1-inch inch thickness measured from the thickest part of the fillet or until the thickest part reaches 145°F (63°C) internal heat.
  • Or bake the salmon on a lined baking sheet for 15-20 minutes depending on thickness and until the thickest part reaches 145°F (63°C) internal heat.
  • Brush the warm salmon with remaining marinade before serving. Leftovers keep well in the refrigerator for a few days. Reheat to your liking.

¼ teaspoon olive oil
1 clove garlic, minced
¼ cup soy sauce
½ lemon, juiced
1 teaspoon honey
½ teaspoon olive oil
⅓ teaspoon packed brown sugar
¼ teaspoon sea salt, plus more for garnish
¼ teaspoon ground black pepper, plus more for garnish
¼ teaspoon red pepper flakes
4 (6 ounce) fillets salmon
1 tablespoon olive oil

Steps:

  • Heat 1/4 teaspoon olive oil in a small skillet over medium-high heat. Saute garlic in hot oil until just beginning to brown.
  • Mix sauteed garlic, soy sauce, lemon juice, honey, 1/2 teaspoon olive oil, brown sugar, sea salt, black pepper, and red pepper flakes together in a bowl; pour into a large resealable plastic bag. Add salmon fillets, turning to coat with the marinade, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Remove salmon from the marinade and shake to remove excess liquid. Reserve 3 tablespoons marinade and discard remainder.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Arrange salmon fillets in the hot skillet, pour reserved marinade over the salmon, and place a lid on the skillet; cook until salmon is browned on each side and flakes easily with a fork, occasionally spooning liquid from the pan over the fillets, 2 to 3 minutes per side. Garnish salmon with additional sea salt and black pepper.

1 tablespoon vegetable oil
1 yellow onion, diced
4 ounces guava paste, cut into chunks
2 tablespoons ketchup
1 tablespoon apple cider vinegar
1 tablespoon sugar
1/2 teaspoon sea salt (or regular)
1/4 teaspoon ground allspice
1/4 teaspoon curry powder
1/4 teaspoon cumin
1/4 teaspoon fresh cracked pepper
2 tablespoons lime juice
1 tablespoon dark rum
1 1/2 lbs salmon fillets (enough for two)
1 mango, diced
1 avocado, diced
1 small yellow onion, diced
1/4 cup fresh cilantro, chopped
3 dashes cumin
3 dashes dried chipotle powder (or regular)
1 lime, juice of

Steps:

  • Sauté only one half of the onion in oil over medium heat for 7-10 minutes until they become kind of brown.
  • Add in everything except the rum, lime and salmon. Stir together, breaking up the guava paste. Once smooth, stir in the rum and lime juice then remove from heat. Allow to cool while cutting up the salad.
  • Cube the mango, avocado, and onion. Toss with the spices and lime juice.
  • Take the remaining half of the diced onion and cover top of salmon, placed skin side down in a foil covered pan. Pour the slightly cooled glaze over the top and broil for 8 - 12 minutes depending on how you like your salmon cooked.
  • Split in half and serve on top of the salad. Squeeze half a lemon over top of entire dish.

3 chipotle chiles (about) from canned chipotle chiles in adobo
2 tablespoons apricot jam or preserves
1 1/4 teaspoons red wine vinegar
1/2 teaspoon ground cumin
Nonstick vegetable oil spray
2 6-to 7-ounce salmon fillets with skin (scant 1 inch thick)
1 15-ounce can hominy, drained, juice reserved
1 tablespoon butter
1 tablespoon chopped fresh cilantro
Ingredient info: Chipotle chiles are dried, smoked jalapeños in a spicy tomato sauce called adobo; they're available at some supermarkets and at specialty foods stores and Latin markets.

Steps:

  • Preheat oven to 450°F. Using back of spoon, press enough chipotles through fine sieve into small bowl to measure 2 teaspoons puree. Mix puree, jam, vinegar, and cumin in bowl; season glaze to taste with salt.
  • Coat small rimmed baking sheet with nonstick spray. Arrange salmon on sheet; sprinkle with salt and black pepper. Spread half of glaze over each fillet. Roast until just opaque in center, about 10 minutes.
  • Meanwhile, puree hominy and 3 tablespoons reserved juice in mini processor until almost smooth. Transfer to small skillet. Add butter and cilantro. Stir over medium heat until warmed through, mixing in more reserved juice by teaspoonfuls if too thick. Season to taste with salt and pepper.
  • Divide hominy between 2 plates, top with salmon, and serve.
