1 cup packed brown sugar
1 cup cider vinegar
1 cup apricot nectar
1/2 cup ketchup
1 teaspoon Worcestershire sauce
1 cup cubed green pepper
3 tablespoons all-purpose flour
4 tablespoons water, divided
1 tablespoon soy sauce
salt
pepper
1 1/2 lbs halibut steaks, cut into 1 inch pieces
1 tablespoon cornstarch
2 medium tomatoes, seeded and cubed
2 cups pineapple chunks
hot cooked rice

Steps:

  • In a large saucepan, combine the first five ingredients; bring to a boil.
  • Reduce heat; simmer uncovered for 30 minutes.
  • Add the green pepper, cook 5 minutes longer; set aside.
  • In a bowl combine the flour, 3 tablespoons water, soy sauce, salt and pepper.
  • Add halibut; toss gently to coat.
  • Transfer to a broiler pan.
  • Broil 4 inches from the heat for 5-6 minutes or until fish flakes easily with a fork.
  • Set aside and keep warm.
  • Combine cornstarch and remaining water until smooth; stir into green pepper mixture.
  • Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Reduce heat to medium; add tomatoes and pineapple.
  • Cook and stir for 4 minutes or until heated through.
  • Serve with halibut over rice.

1 pound halibut
1 tablespoon soy sauce
1 tablespoon all-purpose flour
2 cups oil for deep frying
1 green bell pepper, diced
1 onion, diced
1 (8 ounce) can pineapple chunks, juice reserved
1 ½ tablespoons white sugar
salt to taste
3 tablespoons ketchup
1 tablespoon water
1 teaspoon sesame oil
2 teaspoons all-purpose flour

Steps:

  • Cut halibut into bite-size pieces. Place in a mixing bowl and combine with soy sauce and 1 tablespoon of flour. Let stand for 30 minutes. Meanwhile, heat oil in deep-fryer or heavy saucepan to 375 degrees F (190 degrees C).
  • Deep fry halibut pieces until golden brown. Drain on paper towels; set aside.
  • For the Sauce, saute green pepper, onion and pineapple in a medium skillet for 1 minute. Stir in reserved pineapple juice, sugar, ketchup, water, remaining 2 teaspoons of flour, sesame oil, and salt to taste. Cook until thickened, stirring occasionally.
  • Serve, by dipping fried halibut pieces into sauce, or pour the sauce over the fish.

1/4 cup water
1 1/2 tablespoons red-wine vinegar
1 whole scallion, sliced thin, plus the green parts of 2 scallions, sliced thin
1 1/2 teaspoons minced peeled fresh gingerroot
1 1/2 teaspoons sugar
1 tablespoon soy sauce
1 tablespoon ketchup
1/4 teaspoon Asian (toasted) sesame oil
1 teaspoon cornstarch dissolved in 2 tablespoons water
a 1-inch-thick halibut steak (about 1 pound), the skin and bone discarded and the fish cut into 3/4-inch pieces
all-purpose flour seasoned with salt and pepper for dredging the fish
vegetable oil for frying the fish
cooked rice as a accompaniment

Steps:

  • In a saucepan simmer the water and the vinegar with the sliced whole scallion, the gingerroot, the sugar, the soy sauce, and the ketchup, stirring occasionally, for 5 minutes, add the sesame oil and the cornstarch mixture, stirred, and simmer the sauce, stirring, for 2 minutes. Keep the sauce warm, covered.
  • In a bag shake the halibut in the flour, transfer it to a large sieve or colander, and shake it to remove the excess. In a large deep skillet heat 1/4 inch of the vegetable oil over moderately high heat until it is hot but not smoking and in it fry the halibut in 2 batches, turning it, for 2 to 3 minutes, or until it is cooked through, transferring it as it is cooked with a slotted spoon to paper towels to drain. Add the halibut to the sauce, stirring to coat it well, and serve it over the rice and sprinkle with the scallion greens.
