The classic combination of tender pork, tart apples, and cider-braised sweet potatoes is a textbook meal for chilly days, especially when you're really hungry. You'll be amazed how easy it is to pull this hearty meal together; even the cider-based mustard sauce is a snap to prepare.

1/2 cup/120 ml apple cider or juice, plus more if needed
1/4 tsp ground cinnamon
Salt
2 boneless, center-cut loin pork chops, about 3/4 in/2 cm thick
Freshly ground black pepper
2 tbsp olive oil
1 medium sweet potato, about 1/2 lb/225 g, peeled and very thinly sliced
1 Braeburn, Gala, or other sweet-tart apple, cored and thinly sliced
1 shallot, minced
1 tsp Dijon mustard, smooth or whole-grain (see "it's that easy")
2 tsp minced fresh flat-leaf parsley

Steps:

  • 1. Combine the cider, cinnamon and 1/4 tsp salt in a cup. Set aside.
  • 2. Pat the pork chops dry and sprinkle all over with salt and pepper.
  • 3. Heat a 12-in/30.5-cm skillet over medium-high heat and add the olive oil. When the oil shimmers, add the seasoned pork chops to the pan and cook until lightly browned on the first side, about 3 minutes. Turn and cook until browned on the second side, about 2 minutes longer. Transfer the pork chops to a plate. (They will not be cooked through at this point.)
  • 4. Add the sweet potato, apple, shallot, cider mixture, and a grind or two of pepper to the hot pan. Bring it all to a simmer, cover, and reduce the heat to medium-low or low-the pan should bubble, but not too aggressively. Cook the potato mixture until a fork easily pierces the partially cooked potato but there is still some resistance, about 10 minutes.
  • 5. Return the pork chops to the pan (along with any juices accumulated on the plate) and nestle them into the potatoes and apples. Cover and cook until the meat is cooked through and the potatoes are tender, about 8 minutes longer. Taste and adjust the seasoning.
  • 6. Transfer the pork chops, potatoes, and apples to two warmed plates. There should be some liquid remaining in the pan to serve as a base for the sauce. (If the potatoes have absorbed all of the liquid, add 2 to 3 tbsp cider to the pan and heat it briefly over medium heat.) Stir the mustard into the pan juices with a fork. Taste the sauce and add more pepper if it needs it.
  • 7. Spoon the sauce over the meat and vegetables, sprinkle the parsley over the top, and serve hot.

1 tablespoon finely chopped ginger
2 serrano chiles, stemmed and finely chopped

1 cup shredded Chinese cabbage
1 cup bamboo shoots, rinsed and julienned
4 tablespoons soy sauce
1 cup black mushrooms, soaked and julienned
2 tablespoons Shaoxing wine
2 tablespoons cornstarch mixed with 2 tablespoons water (slurry)
Salt and pepper
1 cup chopped scallions, both white and green parts
1 cup bean threads, soaked in warm water to cover until soft (10 to 15 minutes), drained well, and cut into 2-inch pieces
1 (1-pound) package egg roll wrappers
1 egg beaten with 1/4 cup water, for egg wash
Sweet and Sour Sauce, recipe follows
Spicy Mustard, recipe follows
1/3 cup rice wine vinegar
2 teaspoons soy sauce
2 tablespoons Shaoxing wine
2 cups fresh pineapple juice
1/4 cup brown sugar
1/4 cup white sugar
1 teaspoon red chile flakes
3/4 cups pineapple, cut into cubes
1/2 cup mango, cut into cubes
1/4 cup each red and green peppers, 1/2 inch dice
2 tablespoons cornstarch mixed with 2 tablespoons water (slurry)
1/3 cup dry mustard, mixed with 1/4 cup water
1/3 cup Dijon mustard
1 tablespoon sugar

Steps:

  • Heat a wok or skillet over high heat. Add the oil and swirl to coat the pan. When the oil is hot, add the garlic, ginger, and chiles and cook until soft, about 2 minutes. Do not allow the aromatics to burn. Add the pork and stir-fry until just cooked through, about 3 to 5 minutes. Add the cabbage, bamboo shoots, soy sauce, mushrooms, wine and cook until soft, about 3 minutes. Add the cornstarch slurry. Season, to taste, with salt and pepper. Transfer the filling mixture to a medium bowl and add the scallions and the bean threads to the cooled mixture. Sir to blend.
  • Dampen a kitchen towel. Place 5 wrappers on a work surface with 1 point each near you and cover the remainder with the cloth to prevent drying. Place about 1/4 cup of the filling on the wrappers, just above the near corners. Bring the corner nearest you up over the filling and roll halfway; brush the edges with the egg wash, then fold in the side corners and continue rolling to enclose the filling completely. Roll as tightly as possible. Cover with the cloth and allow the rolls to rest, seam side down; this allows the egg to set. Fill and roll the remaining wrappers, cover, and allow the rolls to rest at least 2 minutes.
  • Fill a fryer or heavy medium pot 1/3 full with the oil and heat to 350 degrees over high heat. Add the egg rolls 4 to 6 at a time and fry them until light golden, turning as needed, about 5 minutes.
  • Remove them with a slotted spoon and drain on paper towels. Fry again at 350 degrees (until golden) just before serving for extra crispiness.
  • To Serve: Place a spoonful of the Sweet and Sour Sauce in the middle of a serving plate. Slice the rolls on the diagonal and arrange 3 of them around the sauce. Drizzle the spicy mustard around the outside of the plate and serve.
  • In a saucepan over medium high heat, add the vinegar, soy sauce, wine, pineapple juice, and sugar. Bring to a boil and then reduce the heat to medium. Add the chile flakes, pineapple, mango, peppers, and cornstarch, and let simmer for 2 minutes. Serve hot.
  • In a small bowl, whisk together the mustards, and sugar until a smooth paste is formed.

1 side skin-on wild salmon (about 3 pounds), halved crosswise
2 cups fennel fronds or fresh dill, coarsely chopped
1/2 cup sugar
1/2 cup coarse salt
3 tablespoons coarsely chopped lemon zest
1 1/2 teaspoons whole pink or black peppercorns, crushed
1 tablespoon caraway seeds, crushed (optional)
1 tablespoon aquavit or vodka
Sweet Mustard Sauce(optional)
1 loaf pumpernickel bread, thinly sliced and crusts removed
1 small red onion, thinly sliced
1 fennel bulb or cucumber (peeled and seeded), thinly sliced

Steps:

  • Rinse salmon; pat dry with paper towels. Trim excess fat and bones, and pull out pin bones using kitchen tweezers.
  • Combine fennel, sugar, salt, lemon zest, peppercorns, and caraway seeds. Line a rimmed baking sheet with plastic wrap.
  • Spread a quarter of the curing mixture onto plastic wrap. Place 1 salmon piece, skin side down, on top. Rub salmon with half the remaining curing mixture, and drizzle with aquavit. Top with remaining salmon, skin side up, and rub with remaining curing mixture.
  • Wrap salmon tightly in the plastic wrap. Set a baking sheet on top of salmon, and weigh down sheet with cans or bricks. Refrigerate, flipping salmon halfway through, for 1 to 2 days (the longer the fish cures, the denser the flesh will be).
  • Unwrap salmon; discard liquid, and wipe off remaining curing mixture. Thinly slice salmon on the bias with a long, thin knife. Spread sweet mustard sauce on bread. Top with gravlax, onion, and fennel.

1 boneless pork butt or shoulder, fat cap scored deep (about 5 pounds)
Butter, for griddling
12 slider rolls, preferably King's Hawaiian
Pickled Cukes and Carrots, for serving, recipe follows
Sweet-and-Hot Mustard Sauce, for serving, recipe follows
Sweet Chile Sauce, for serving, optional
2 cups rice vinegar
1/4 cup sugar
2 teaspoons kosher salt
1 cup shredded carrots
1 cup half-moon slices English cucumber
1 teaspoon crushed red pepper
1/4 cup dried mustard
1/4 cup boiling water
2 tablespoons honey
1 tablespoon toasted sesame oil
1 tablespoon vegetable oil
1/2 teaspoon kosher salt
1/2 cup rice vinegar

Steps:

  • Mix the brown sugar, salt, pepper, five-spice powder, garlic powder, ground ginger and onion powder in a bowl, and then rub all over the pork. Place on a wire-racked baking sheet. Cover with plastic wrap and let it sit for 2 hours, or preferably overnight in the refrigerator.
  • Preheat the oven to 325 degrees F with the oven rack in the middle position.
  • Remove the plastic wrap and cover the pork with a layer of parchment paper. Then seal over the top with aluminum foil. Roast for 3 hours. Remove, uncover and drain any liquid fat. Return the pork to the oven and roast until the pork registers 200 degrees F on an instant-read thermometer and the pork is well browned, about 1 1/2 hours more. Transfer the pork to a large dish, cover with foil and let rest for 20 minutes.
  • Sandwich Build: Using two forks or your hands, pull apart the warm pork into shreds and chunks. Butter and griddle the rolls until golden brown. Place ample quantities of pork on the bottom buns, then top with Pickled Cukes and Carrots and Sweet-and-Hot Mustard Sauce or Sweet Chile Sauce if desired.
  • Bring 1 cup water, the vinegar, sugar and salt to a boil in a saucepan until the sugar and salt are dissolved. Take off the heat, and add in the carrots, cucumbers and crushed red pepper and let sit for at least 30 minutes.

1/4 cup sugar
1 egg

Steps:

  • Combine the dry mustard, vinegar, sugar and egg in the top of a double boiler and mix until smooth using a wooden spoon. Place over the heat and cook for four or five minutes until slightly thickened stirring with a wooden spoon. Chill.

  • Sweet Potatoes:
  • Preheat the oven to 365 degrees F.

People tend to differ as to what the real, authentic food traditions are. These differences can cut across countries, regions, or even families (my wife and I can never agree on what to have for Christmas dinner). But on one subject, there is no disagreement among the people of Norway, Sweden, and Finland: Gravlaks should be served with a sweet mustard sauce.

6 tablespoons sweet grainy mustard, or to taste
2 to 3 tablespoons Dijon mustard
1 tablespoon sugar, or to taste
1 to 2 tablespoons vinegar
1 cup vegetable oil
2 to 3 tablespoons finely chopped fresh dill

Steps:

  • Combine the sweet mustard and 2 tablespoons of the Dijon mustard in a medium bowl. Add the sugar and 1 tablespoon of the vinegar. Gradually add the oil, whisking constantly. Adjust the flavors as necessary. The sauce should be neither overly sweet nor overly acidic. Add a little water if the sauce gets too thick. Stir in the chopped dill. It will keep, refrigerated, for 2 to 3 weeks.

My family absolutely loves Chili's and their honey mustard sauce. So a while back i searched the interent for a copycat recipe which I found but did my own tweaking to. The problem with most store bought honey mustard is they're usually just too mustardy....this just makes it better! And it's so supper easy to tweak to your own taste. It's more of a by taste recipe then a by the measurement one. Doubles easily.

1 Tablespoon of honey mustard or you favorite Dijon mustard
1 Tablespoon of horseradish
1 Cup of Water or Beef Broth
Cracked pepper
Mix mustard and horseradish together and spread over meat. Open small seasoning packet that the meat comes with that has peppercorns and spices in it. Sprinkle over meat, along with some cracked pepper. Place in baking dish or roasting pan and add water or broth. Cover with foil.
Bake at 325 for 45 minutes a pound. Remove and slice meat.
Roast can also be put in a baking bag with a tablespoon of flour. Cut slits in the bag for ventilation. Tie bag up with enclosed zip tie.

2 (2 lb) thick salmon fillets, skin on, scaled and pin bones removed
2 bunches fresh dill, chopped
4 ounces coarse rock salt
3 ounces superfine sugar
1 tablespoon white peppercorns, crushed
2 tablespoons Dijon mustard
1 tablespoon superfine sugar
1 egg yolk
4 tablespoons freshly chopped fresh dill
2/3 cup vegetable oil
1 tablespoon white wine vinegar
salt and pepper
rye bread

Steps:

  • To make the curing mix: place the salt, sugar and white pepper into a medium sized bowl. Add the dill and stir to combine.
  • Line a large, shallow, rectangular dish, to fit the salmon, with plastic wrap. Sprinkle over a quarter of the curing mixture, spread over the base and top with one of the salmon fillets, skin-side down.
  • Sprinkle over half of the cure and top with the other half of the salmon skin-side up.
  • Sprinkle over the remaining curing mixture on top of the fillet and wrap up in the plastic wrap.
  • Weigh the fish down with some cans or weights on top to remove any excess liquid or moisture.
  • Place in fridge, turning the salmon over every 6 hours, for 3-4 days, where possible.
  • Before serving the gravlax, rinse the cure off the fish to remove the salt and pat dry with kitchen paper.
  • Sprinkle the remaining dill over one side of the salmon and then sandwich the two fillets together again.
  • Wrap tightly in plastic wrap and chill for 6 hours.
  • To make the sauce: in a large bowl whisk the mustard and sugar together with the egg yolk.
  • Gradually whisk in a steady trickle of oil, making sure the oil is well emulsified. Start to add the oil at a constant pace.
  • Add the fresh dill and mix well.
  • To serve, cut the gravlax thinly (gravlax is traditionally served thicker than smoked salmon).
  • Place 3-4 good slices on a plate along with a spoonful of the sauce.
  • Serve with rye bread.

3 tablespoons minced garlic
3 tablespoons roughly chopped fresh sage
3 tablespoons kosher salt
3 tablespoons freshly cracked black pepper
one 5-6 pound pork shoulder roast
1 small pineapple, peeled, cored and cut into 2-inch cubes
3 red onions, peeled and quartered
FOR THE SAUCE
2 cups pineapple juice
1/4 cup red wine vinegar
1/2 cup grainy mustard
kosher salt and freshly cracked black pepper, to taste

Steps:

  • Preheat oven to 500. In a small bowl, combine the garlic, sage, salt and pepper and mix well. Dry the pork butt with paper towels. With the tip of a sharp knife, make 10 to 12 small cuts, about 1/2 inch long and 1/2 inch deep, evenly spaced over the surface of the pork and push some of the spice rub into each slit. If you have any left over, rub it over the surface of the pork. Place the pork on a rack in a roasting pan, and roast for 20 minutes to brown it. Reduce the temperature to 300, add the pineapple and onions to the roasting pan, and continue to cook until the pork is done to your liking, 1 hour to 1 hour and 10 minutes for medium well. To check for doneness, insert a meat thermometer into the dead center of the roast and let it sit for 5 seconds. 126 degrees is medium-rare, 134 is medium, 150 is medium well; we like to pull it at 147. When the roast is done, remove it from teh pan, along with the pineapple and onions, loosely cover with foil, and allow the meat to rest for about 20 minutes while you make the sauce. Pour off the fat from the roasting pan and place the pan on the stove over two burners at a medium-high heat. Add the pineapple juice and vinegar and bring to a simmer, stirring to dissolve the brown, crusty stuff in the bottom of the pan. Continue to simmer until the liquid is reduced by half, about 5 to 7 minutes. Stir in the mustard, season with salt and pepper, and pour into a sauce boat. Slice the roast and serve with the pineapple and onions, passing the sauce separately.

1/3 cup Dijon mustard
1/3 cup brown sugar
5 garlic cloves
1/2 teaspoon salt
fresh ground black pepper (a pinch or two)
2 medium yellow onions
4 -5 lbs beef brisket, trimmed of excess fat (cut into 2 or 3 pieces)
1 cup low sodium beef broth or 1 cup chicken broth
1/2-1 teaspoon cornstarch

Steps:

  • The night before serving the brisket, combine the mustard, sugar, garlic, salt, and pepper in a blender or food processor; process until smooth.
  • Peel the onions and cut each into 8 wedges; scatter them over the bottom of a slow cooker insert.
  • Rub the mustard mixture over all the beef and set over the onions.
  • Cover the pot and refrigerate overnight (or at least 2 hours).
  • Remove the pot from the refrigerator; pour in the broth, and slow cook on LOW for 7-7 1/2 hours.
  • Transfer the meat to a cutting board; remove the onions and 1-2 cups cooking liquid to a blender.
  • Puree with 1/2 teaspoon cornstarch per cup of cooking liquid.
  • Slice the brisket thinly against the grain and transfer to a platter.
  • Drizzle the sauce over the meat and serve in sandwich rolls or with potatoes.
