1/4 cup thinly sliced red onion
2 jalapeno peppers, seeded and finely chopped
1 teaspoon grated fresh lemon rind
3 tablespoons fresh lemon juice
1 tablespoon sugar (to taste)
2 tablespoons chopped fresh cilantro
1 teaspoon canola oil
salt
pepper

Steps:

  • Combine all ingredients in a medium bowl; toss well.

1 (11-ounce) can mandarin oranges, drained and liquid reserved
2 cups shredded jicama
2 cups shredded red cabbage

  • In a large bowl, combine mayonnaise, vinegar and 2 tablespoons liquid from mandarin orange can. Add jicama, red cabbage and mandarin oranges. Toss to combine. Season, to taste, with salt and pepper.

3 tablespoons olive oil

1 large jicama (1 to 1 1/2 pounds), peeled and cut into thin matchsticks
1 large carrot, peeled and cut into thin matchsticks
1 Honeycrisp apple, cut into thin matchsticks
1/4 cup toasted sesame seeds

6 tablespoons rice wine vinegar
1 teaspoon sugar
6 tablespoons extra-virgin olive oil

1 1/2 cups peeled, julienned jicama
1 cup, peeled, julienned carrots
1 cup shredded napa cabbage
1/2 cup thinly sliced red onion
1 cup julienned English cucumber

Steps:

  • In a small mixing bowl add lime juice, chili flakes, rice wine vinegar, sugar, and extra-virgin olive oil. Season with salt and pepper and whisk to combine.
  • Combine the jicama, carrots, cabbage and onion, cucumber, red pepper and cilantro in large bowl and toss.
  • Add dressing to vegetables and let sit for 15 minutes, stirring 2 or 3 times. Serve.

1/4 teaspoon salt
1 teaspoon curry powder, divided
1/2 cup chicken broth
2 green onions, thinly sliced

2 cups jicama, julienne-cut
1 red bell pepper, diced
1/4 cup dry roasted peanuts
