4 boneless skinless chicken breast halves (5 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
1 small onion, thinly sliced
1 celery rib, thinly sliced
1/2 cup chicken broth
3 tablespoons orange juice
1/4 teaspoon dried thyme
1/2 cup jalapeno pepper jelly
2 tablespoons butter
1 tablespoon minced fresh parsley

Steps:

  • Flatten chicken to 1/4-in. thickness; sprinkle with salt and pepper. Cook chicken in batches in oil in a large skillet over medium heat for 2-3 minutes on each side or until meat is no longer pink. Remove and keep warm., Saute onion and celery in the same pan until crisp-tender. Add the chicken broth, orange juice and thyme. Bring to a boil; cook until liquid is reduced by half. Stir in pepper jelly until melted. Remove from heat; stir in butter and parsley. Serve with chicken.

2 tablespoons light brown sugar
1 teaspoon ground coriander
Kosher salt and freshly ground pepper
2 half chickens (about 3 pounds total)
1 (10-ounce) jar red jalapeno pepper jelly (about 1 1/4 cups)
1/4 cup cider vinegar
1 teaspoon minced fresh rosemary
Vegetable oil, for grilling
Grilled potatoes, for serving

Steps:

  • 1. Prepare a grill for medium-high heat cooking. In a small bowl, combine the brown sugar, coriander, 1 tablespoon salt, and 1 teaspoon pepper. Rub the mixture over the chicken. In another bowl, whisk together the jelly, vinegar, and rosemary.
  • 2. Brush the grill grate with oil. Grill the chicken halves, bone side down, for 10 minutes. Flip the chicken and cook until there are dark grill marks on the skin, about 10 minutes. Flip the chicken again and brush the skin with the jelly mixture. Continue cooking, brushing the skin every 10 minutes with the jelly mixture, reserving some for serving, until an instant-read thermometer inserted into the thigh but not touching the bone registers 165 degrees F, about 20 minutes more. Transfer the chicken to a cutting board and let rest for 5 minutes. Cut the chicken into serving pieces and serve with the extra glaze on the side.

6 tablespoons jalapeño or hot pepper jelly
2 tablespoons fresh lime juice
1/2 teaspoon ground cumin
4 boneless skinless chicken breasts (5 oz each)
1/2 teaspoon salt
2 tablespoons chopped fresh cilantro

Steps:

  • Heat gas or charcoal grill. In small bowl, mix Sauce ingredients until blended. Reserve 1/4 cup to serve as a sauce after chicken is cooked; set aside. Sprinkle chicken with salt.
  • Place chicken on grill over medium heat. Cover grill; cook 15 to 20 minutes, turning once or twice and brushing with remaining sauce during last 2 minutes of grilling, until juice of chicken is clear when center of thickest part is cut (at least 165° F).
  • Sprinkle with chopped cilantro; serve immediately with reserved sauce.

4 bone-in chicken breast halves, with skin
6 tablespoons honey
6 tablespoons Dijon mustard or 6 tablespoons honey mustard
6 tablespoons jalapeno jelly, preferably the red colored one
salt and black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • In a small bowl, mix together honey, mustard and jalapeno jelly.
  • Place chicken breasts in a baking dish; sprinkle with salt and pepper to taste, and pour honey-mustard-jelly sauce over all, coating well.

4 (4-ounce) boneless pork chops
Salt and ground black pepper
2 tablespoons all-purpose flour
1 teaspoon salt-free garlic and herb seasoning
1 tablespoon olive oil
1/2 cup reduced-sodium beef broth
1/2 cup chopped pickled jalapenos
1/4 cup honey

Steps:

  • Place pork chops between 2 pieces of plastic wrap and pound with a meat mallet or rolling pin until about 1/2-inch thick. Season both sides with salt and black pepper.
  • In a shallow dish, combine flour and garlic and herb seasoning. Mix well. Add pork to flour mixture and turn to coat both sides.
  • Heat oil in a large skillet over medium-high heat. Add pork and cook 2 minutes per side, until golden brown. Meanwhile, in a small bowl, combine beef broth, jalapenos and honey. Mix until blended. Add broth-jalapeno mixture to the pork and bring to a simmer. Simmer 3 to 5 minutes, until pork is cooked through and sauce thickens.

20 whole chicken mini drummettes
1 cup seedless raspberry sam
1 1/2 tablespoons honey
1 (4-ounce) can diced jalapeños
4 tablespoons butter, 1/2 stick
1 tablespoon Worcestershire sauce

Steps:

  • Preheat your oven to 400°F. In a small saucepan on medium heat, place the seedless raspberry jam, honey and the small can of diced jalapenos. Stir to combine and let it sit in the saucepan on low to get all sticky, sweet and spicy. Just like Antonio. Take your large pot, and put in the half stick of butter and 1 tablespoon of Worcestershire Sauce and turn your stove up to just below high. Get that butter and Worcestershire all melted and hot. Once the butter is all melted, place just half (10) of your chicken drummies in the butter. I only do 10 at a time, cause you don't want them to get all crowded. With your tongs, get the chicken all coated with the butter. Leave them to saute for just about 5 minutes. You are not totally cooking them, just getting them warm and coating them with the butter mixture. Once they are all warm and coated, about 5 minutes, take the 10 drummies out and place them in a large bowl to hang out. Now take your other 10 drummies and with your tongs, place the last 10 in the pot with the butter and Worcestershire. Toss and do the same with those as you did the first 10. When those are done, place them in the large bowl with their other friends. Now take the raspberry jalapeno mixture off the stove, and pour all of it into the waiting drummies. Mix the drummies all around with the sauce. They are so excited to be sweet and spicy like Mr. Banderas. Now get out your jelly roll pan or 1/4 sheet pan, the one with sides, and spray it with Pam. Take your tongs and place the drummies in the pan. Take a large spoon, and gently pour all the raspberry jalapeno sauce over each of the drummies, coating them all the way. Now pop these sweeties in the oven for about 35 minutes. Keep checking them, cause you are going to flip them with your tongs halfway through. You'll know when they are done. Both sides will look wonderfully golden. The entire cooking process should be about 40 minutes. Could be 30 depending on your oven, so just keep checking. Next thing you know, you won't be calling them "little drummies" anymore. They will be all grown up, sweet and spicy just like their idol, Antonio Banderas (said in the most wonderful sultry Latin American accent of course). HINT: Be sure to let them sit for about 15 minutes before you dive into them. They are way better when left to get all sticky and wonderful for about 15 minutes or more before eating them. Note: I bought the little chicken drummies, but feel free to use both chicken drummies and chicken wings. After all, they ARE called chicken "wings". It's just a personal preference.

3/4 cup jalapeno baste**(or jelly)
2 tablespoon fresh lemon juice
36 jumbo shrimp -- shelled
1-1/2 pounds boneless chicken breast
1 pineapple
vegetable oil

Steps:

  • **Jalapeno baste: Seed and coarsely chop 2 jalapeno peppers. Sauté‚ in oil until soft, and add 1 heaping tbs of sugar. Puree. Add a little oil if the mixture seems too thick. Cut chicken into 3/4 inch chunks. Peel and core pineapple and cut into chunks. Combine jalapeno baste with lemon juice and heat through. Thread the shrimp, the chicken, and the pineapple, alternating them, onto the skewers. Brush with the jalapeno mixture, sprinkle with salt and pepper, and grill for 6 - 7 minutes over glowing coals until done. OR broil in the oven. OR cook 10 minutes in the Jet-Stream Oven

6 - chicken breasts (6-7 ounces each)
1/2 cup(s) maple syrup
1/4 cup(s) soy sauce
1/4 cup(s) pineapple juice
1/2 - whole pineapple, finely diced
2 - jalapeno peppers, seeded and finely minced
1 small bunch cilantro, roughtly chopped
1 small red onion, diced
1 teaspoon(s) rice vinegar (unflavored)
1 tablespoon(s) sugar
1/2 teaspoon(s) salt
- black pepper to taste

Steps:

  • If using wooden skewers, soak in water for several hours. Slice each chicken breast into six even pieces and thread onto a separate skewer.
  • Combine the maple syrup, soy sauce, and pineapple juice in a small saucepan. Bring to a boil, then reduce the heat to medium and let it bubble up and reduce by about one-fourth. Set aside to cool.
  • In a small bowl, combine chopped pineapple, jalapeno, cilantro, red onion, vinegar, sugar, salt and pepper. Set aside.
  • Grill chicken kababs until nearly done. In last few minutes of grilling, baste them with the maple syrup mixture. Remove from heat and place on a platter. To serve, top the kababs with the pineapple salsa.
