AWARD-WINNING SWEET AND SPICY CHILI
This is an award-winning chili recipe! It does require a bit of prep work and the ingredients list is a mile long, but it's TOTALLY worth it! Sweet and spicy, this chili dish will soon become your go-to chili recipe for those cold, wintery nights.

Steps:
- In a medium skillet over medium heat, cook the bacon until crispy. Reserve the bacon grease for later.
- In a large Dutch oven, brown the beef and sausage over medium-high heat. Season with salt and pepper. Drain the grease and set the meat aside.
- In the same pot, drizzle about a tablespoon of the reserved bacon grease and sauté the diced peppers and onion. Season with salt, pepper, chili powder, cumin, and garlic powder and cook until translucent and tender, about 5-8 minutes.
- Add the beef and sausage back to the pot, then add the remaining ingredients: V-8, ketchup, tomatoes, kidney beans, brown sugar, lemon juice, worcestershire, vinegar, mustard, molasses, and sriracha. Mix well.
- Cover and simmer over low heat for about 2 hours, stirring occasionally to prevent sticking. Add the bacon in the last 30 minutes of cooking.
- Add chili powder, garlic powder, cumin, salt and pepper to taste.
- Serve with bread or crackers and top with sour cream, cheese, or any of your favorite toppings. Enjoy!

- Brown sausage in large Dutch oven. Cook until no longer pink.
- Add onion and bell pepper and cook until vegetables are soft.
- Add minced garlic, beans, tomatoes, water and seasonings.
- Simmer for approximately 1 hour on medium-low heat.
- Ladle into bowls; top with shredded mozzarella cheese and serve immediately.
- NOTE: As written, this makes a huge amount. I had a lot to put in the freezer.

- Crumble ground beef in large pan; add accent flavor enhancer (optional).
- Brown ground beef.
- Add onion, green pepper, and garlic.
- Cook until onion is translucent/brown; drain oil.
- Add tomatoes, jalapeño peppers, chili beans, chili powder, cumin, thyme, salt and cinnamon.
- Stir and simmer on low for at least 25 minutes.
- Add honey; stir again.
- Serve alone, over rice, or spaghetti.

BEEF AND PORK ITALIAN CHILI

- Heat a large Dutch oven over medium-high heat. Add EVOO, the beef and pork; brown and crumble. Season with the chili powder, salt and pepper. Add the carrot, celery, onion, garlic, rosemary, bay leaf and cloves and cook for 8 to 10 minutes to soften the vegetables. Add the tomato paste and stir a minute. Add the beef stock, diced tomatoes and passata or tomato sauce. Simmer to combine the flavors and thicken. Cool and store; reheat over medium heat.
- To serve, bring the chicken stock to a boil in a small saucepot, whisk in the polenta, 3 minutes. Stir in the butter, cheese, salt and pepper.
- Serve the chili with polenta alongside.
INSTANT POT ITALIAN CHILI

- For the chili: Set the Instant Pot® to saute (see Cook's Note) over high heat. Once hot, add the olive oil and sausage and cook until deep golden brown, about 8 minutes. Transfer the cooked sausage to a large bowl and set aside.
- Add the ground sirloin, season with salt and pepper and cook until browned, about 5 minutes. Add the cooked sausage, onion, garlic and red, yellow and green bell peppers. Season with salt and pepper and cook until heated through, about 3 minutes.
- Stir in the chili powder, cumin, paprika and brown sugar and cook until the spices become fragrant, about 2 minutes. Stir in the crushed tomatoes, bone broth, wine, tomato paste and oregano sprigs. Season with salt and pepper.
- Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on manual high setting for 10 minutes.
- After the pressure cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Be careful of any remaining steam and unlock and remove the lid.
- If there is still too much liquid, turn the Instant Pot® to high saute and cook another 5 minutes. Remove the oregano stems before serving.
- Meanwhile, prepare the pickled onions and jalapenos.
- For the pickled onions and jalapenos: Shave the onions and slice the jalapenos on a mandoline. Combine the vinegar, 1 cup water, coriander, black peppercorns, brown sugar and 1 tablespoon salt to a boil in a medium saucepan over high heat and cook until just boiling. Boil until the sugar and salt are dissolved, for 3 minutes, then remove the saucepan from the heat. Put the jalapenos and onions in two separate medium bowls. Strain and carefully pour half of the pickling liquid over the jalapenos. Pour the remaining half of the pickling liquid over the red onions. Let sit until ready to serve.
- For the lime creme fraiche: Whisk together the creme fraiche, lime zest and lime juice in a small bowl. Season with salt and set aside until ready to serve.
- To serve, ladle the chili into bowls and top with the grated Cheddar, scallions, Lime Creme fraiche, Pickled Onions and Jalapenos and a squeeze of lime.

CHEF JOHN'S ITALIAN SAUSAGE CHILI
I've added pork to ground beef in chili before, but I've never tried it with all Italian sausage, and I loved the results. We Italian'd this up even more with cannellini beans and a touch of basil, but other than that, it's a fairly classic chili. Garnish with sour cream, avocado, red onion, and basil.

- Heat oil in a large pot over medium-high heat. Cook and stir hot Italian sausage, mild Italian sausage, onion, and a pinch of salt together in the pot, breaking up sausage with a wooden spoon. Cook until sausage is browned and crumbly, and most of the liquid is evaporated, about 10 minutes.
- Stir ancho chile powder, paprika, cumin, ground black pepper, chipotle chile powder, and oregano into sausage mixture; saute until fragrant, about 2 minutes.

SWEET CHILI
I am trying to reduce the amount of red meat my family eats so this spicy/sweet chili recipe is heavier on the beans. Also, I use no fat other than what the meat renders. Yes, the ingredients list is long, but it's mostly seasonings and it makes for a chili that's BIG on flavor. And you'll just have to trust me on the addition of the cinnamon and cloves - they'll be your 'secret' ingredients from now on. ;-)

- Brown ground round in Dutch oven/pot over medium-high heat. (There is no need to add any oil to Dutch oven. Initially, the meat may stick a bit, but will unstick as you stir it and its juices are released.) If there is any grease in pot after browning, drain meat in colander and add to pot again.
- Add ALL of the remaining ingredients and salt and pepper to taste and cook, at a simmer, for 1 to 1 ½ hours, or until chili is thickened to your taste. (If chili is getting too thick, dribble in a little boiling water) Remove bay leaf before serving.
- Serve at table with garnishes.
- Note: I cut the onion up into chunks along with the green pepper and garlic and minced them in my mini-processor.
