2 tbsp. chili powder
2 tbsp. onion powder
2 tbsp. kosher salt
2 tsp. smoked paprika
2 tbsp. packed light brown sugar
1 tsp. black pepper
1/2 tsp. cayenne pepper
3 racks baby back ribs (about 9 pounds total)
1 c. BBQ sauce, plus more for serving
Watermelon and toasted baguette slices, for serving

Steps:

  • Preheat the oven to 300°. Combine the chili powder, onion powder, salt, paprika, brown sugar, black pepper and cayenne in a medium bowl. Sprinkle the spice mix on both sides of each rack of ribs (use all of the spice mix). Wrap each rack individually in a double layer of foil and divide between 2 rimmed baking sheets. Bake the ribs until the meat will easily pull apart with a fork but the racks still hold together, about 2 hours 15 minutes to 2 hours 30 minutes.
  • When the ribs are finished roasting, preheat a grill to medium. Unwrap the ribs. Brush each side with 2 to 3 tablespoons BBQ sauce. Grill the ribs meat-side down until well marked and the ribs release easily from the grill, 3 to 4 minutes. Flip and continue grilling until well marked on the other side, 2 to 3 minutes.
  • Transfer the ribs to a cutting board and generously brush each rack with more sauce. Slice into 4-rib portions. Serve with watermelon and baguette.

3 pounds pork spareribs
4 cloves garlic, minced
1 tablespoon chopped fresh rosemary
1 tablespoon packed dark brown sugar
1 tablespoon balsamic vinegar
1 1/2 teaspoons kosher salt
1/2 teaspoon cayenne pepper
1 cup balsamic vinegar
1 cup ketchup
1/2 cup apple cider vinegar
1/4 cup honey
2 tablespoons whole grain mustard
1 tablespoon molasses
2 teaspoons Worcestershire sauce
1 1/2 teaspoons hot sauce
1/4 teaspoon kosher salt

Steps:

  • For the ribs: Place the ribs in a roasting pan, cutting the racks in half to fit if necessary. Combine the garlic, rosemary, brown sugar, balsamic vinegar, salt and cayenne in a small bowl, and rub the mixture evenly all over the ribs. Allow the ribs to marinate in the refrigerator for at least 1 hour and up to 4 hours.
  • Place a rack in the center of the oven and preheat the oven to 425 degrees F. Pour 1/2 cup water into the roasting pan and cover the pan tightly with aluminum foil. Roast the ribs until the meat is very tender and separate easily from the bone, about 1 1/2 hours. While the ribs are roasting make the BBQ sauce.
  • For the sauce: Place the balsamic vinegar in a medium saucepan over medium-high heat. Bring to a boil then lower the heat to medium and cook the vinegar until it is reduced by a third, about 8 minutes. Whisk in the ketchup, apple cider vinegar, honey, mustard, molasses, Worcestershire, hot sauce and salt. Bring the the sauce back to a boil then lower the heat and simmer until thickened, 15 to 20 minutes, stirring occasionally. Remove from the heat and let cool to room temperature.
  • To finish, remove the ribs from the oven and transfer to 2 aluminum-foil-lined baking sheets. Increase the oven temperature to 450 degrees F. Brush both sides of the ribs generously with the BBQ sauce and bake uncovered for 10 minutes, until the sauce is browned and sizzling. Allow the ribs to rest for 10 minutes before slicing.

1 rack Pork back ribs
1/2 cup Brown sugar
1/2 cup White sugar
1/4 cup Paprika
3 tablespoons Kosher salt
1 tablespoon Black pepper
2 tablespoons Garlic powder
2 tablespoons Onion powder
1 teaspoon Ground mustard
1 teaspoon Celery salt
1 teaspoon Dried thyme
1 1/2 cups Ketchup
1 cup Water
1/4 cup Worcestershire sauce
1/4 cup Apple cider vinegar
2 tablespoons Rib rub (From above recipe)
1/4 cup Honey

Steps:

  • Make the dry rub by adding all the dry ingredients and mixing well.
  • Remove the ribs membrane from the underside of the rack. Insert a small utensil under the membrane skin at a bone location and gently pry the membrane up so that you can grab it with a paper towel. Use the paper towel to get a hold of the membrane and pull of the membrane.
  • Liberally apply the rub to the top and bottom of the rack of ribs. Wrap the ribs in plastic wrap for at least 30 minutes or overnight.
  • Start your grill, oven or smoker and set the temperature to 250 degrees. Place a water pan into the grill, under the grill grate, and fill the pan halfway with hot steaming water.
  • Place your ribs onto the grill and close the lid. Rotate the ribs once after 2 hours. After 4 hours apply the barbecue sauce to the ribs and then close the lid for at least 30 minutes. After 30 minutes, check the temperature of the ribs. The internal temperature of the ribs should be between 195 degrees and 205 degrees. Cover the ribs and let the ribs rest in a warm place for 20 to 30 minutes before carving.
  • While your ribs begin to cook, make the barbecue sauce. The sauce and the rub can be made a head of time.
  • Serve the barbecue sauce on the side and provide bottles of hot sauce for your guests that prefer hot and spicy ribs. Enjoy!

¼ cup salt
¼ cup white sugar
2 tablespoons packed brown sugar
2 tablespoons ground black pepper
2 tablespoons ground white pepper
2 tablespoons onion powder
1 tablespoon garlic powder
1 tablespoon chili powder
1 tablespoon ground paprika
1 tablespoon ground cumin
10 pounds baby back pork ribs
1 cup apple juice
¼ cup packed brown sugar
¼ cup barbeque sauce

Steps:

  • Stir salt, white sugar, 2 tablespoons brown sugar, black pepper, white pepper, onion powder, garlic powder, chili powder, paprika, and cumin together in a small bowl to make the dry rub. Rub the spice mixture into the baby back ribs on all sides. Wrap the ribs well with plastic wrap, and refrigerate for at least 30 minutes prior to cooking.
  • Unwrap baby back ribs and place onto the wire racks of the smoker in a single layer.
  • Place the racks into a smoker, fill the smoker pan with apple, grape, pear, or cherry chips, and bring the smoker to 270 degrees F (130 degrees C). Smoke for 1 hour.
  • Stir together the apple juice, 1/4 cup brown sugar, and the barbeque sauce. Brush the ribs with the sauce every 30 to 45 minutes after the first hour. Cook the ribs in the smoker until the meat is no longer pink and begins to "shrink" back from the bones, 3 to 4 hours. Brush the sauce onto the ribs one last time 30 minutes before the ribs are ready to be taken out of the smoker.
  • Once the ribs are done, wrap them tightly with aluminum foil, and allow to rest 10 to 15 minutes. This will allow the juices to reabsorb into the meat and make the ribs moist.

Island Spareribs image

This is a revised version of my Dads Hawaiian spareribs. If you have an electric wok it works great for making this dish. If you like sweet and sour you will love this.

2 lb lean country style spare ribs, cut in 2
3 Tbsp whole wheat flour
1 tsp salt
3 Tbsp soy sauce
3 Tbsp salad oil
2/3 c sugar
1/3 c vinegar
1/2 c water
1/2 c pineapple juice
1 tsp grated ginger root (or 1/2tsp. dry)
2 c fresh pineapple and papaya chunks
1/3 c red wine

Steps:

  • 1. Cut spare ribs into 2-inch pieces. Mix flour, salt, and soy sauce together and coat ribs.
  • 2. Allow to stand 10 minutes. Heat oil in skillet and brown ribs on all sides.
  • 3. Drain off excess fat and add sugar, vinegar, water, juice and ginger.
  • 4. Cover and simmer until meat is tender, about 45 minutes.
  • 5. Stir in fruit and simmer 5 minutes longer.
  • 6. Serve garnished with minced parsely and sesame seeds.
  • 7. Serving ideas: Serve with white rice.

SWEET ISLAND RIBS

3 Tbsp (rub) caribbean jerk seasoning (mccormick)
2 Tbsp (rub) light brown sugar
1 Tbsp (rub) salt
1 tsp (rub) pepper
1 c (sauce) apricot-pineapple preserves (smuckers)
3/4 c (sauce) pineapple juice
3/4 c (sauce) barbecue sauce (jack daniels spicy original)
1 tsp (sauce) caribbean jerk seasoning
1/2 tsp (sauce) salt
1/4 tsp (sauce) pepper
7 lb 3 slabs baby back pork ribs

Steps:

  • 1. RUB: Combine all ingredients in a small bowl.
  • 2. Rinse ribs, and pat dry. Remove thin membrane from back of ribs by slicing into it with knife then pulling. Sprinkle ribs evenly with Sweet Island Rub and rub into meat. Let ribs stand at room temperature for 30 minutes.
  • 3. SAUCE: Stir together all ingredients in a medium saucepan. Bring to boil over medium high heat; reduce heat to medium low and simmer stirring occasionally for 20 minutes. (Reserve 1 cup of sauce)
  • 4. Bake ribs in oven at 350 for 1.5 hours basting twice with reserved 1 cup Sweet Island Sauce during the last 30 minutes. Serve with remaining sauce.

6 pounds pork spareribs or pork baby back ribs
1/2 cup sugar
1/2 cup packed brown sugar
2 tablespoons cornstarch
1 cup ketchup
2/3 cup cider vinegar
1/2 cup cold water

Steps:

  • Place ribs on a rack in a large shallow roasting pan. Bake, uncovered, at 350° for 1-1/2 hours. , Meanwhile, in a small saucepan, combine the sugar, brown sugar, cornstarch, ketchup, vinegar and water until smooth. Bring to a boil. Cook and stir for 1-2 minutes or until thickened. Remove ribs and rack from pan. Drain and discard fat. Return ribs to roasting pan; drizzle 1-1/2 cups sauce over ribs. Bake 30 minutes longer. Cut ribs into serving-size pieces; brush with remaining sauce.
