3/4 cup water
1/8 teaspoon salt
1/4 cup quick-cooking grits
1/2 cup butter, cubed
3/4 cup sugar
2 tablespoons all-purpose flour
3 large eggs
1/4 cup buttermilk
1 teaspoon vanilla extract
Pastry for single-crust pie (9 inches)
Whipped cream, orange slices or sliced fresh strawberries, optional

Steps:

  • In a small saucepan, bring water and salt to a boil. Slowly stir in grits. Reduce heat; cook and stir for 4-5 minutes or until thickened. Add butter; stir until melted. Remove from the heat; cool to room temperature., In a small bowl, whisk the sugar, flour, eggs, buttermilk and vanilla. Slowly stir into grits. Roll out pastry to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges. Add filling., Bake at 325° for 30-35 minutes or just until set. Serve warm or cool to room temperature. Garnish with whipped cream and orange or strawberries if desired.

3 tablespoons quick-cooking grits
1 dash salt
1 1/2 tablespoons butter
1/4-1/2 cup brown sugar

Steps:

  • Mix grits, salt, and water in bowl and cook in microwave on high for 2.5-3 minutes, until nice and thick. Stir occasionally.
  • Stir in butter and brown sugar, add more or less to taste. (can also add some milk to thin them out a little and make creamier if you prefer, which also helps cool them down).
  • Enjoy!

1 cup quick-cooking grits, cooled and cooked slightly
1 cup brown sugar
2 teaspoons flour
2 large eggs, lightly beaten
4 tablespoons milk
2 tablespoons butter or 2 tablespoons margarine, melted
1 teaspoon pure vanilla extract
1 teaspoon white vinegar
1 9-inch pie shell, unbaked

Steps:

  • Preheat the oven to 350 degrees F.
  • In a bowl, combine the grits, brown sugar, flour, and eggs.
  • Blend well, then stir in the milk and butter or margarine. Add the vanilla and vinegar, and blend well.
  • Pour the mixture into the pie shell and bake for 35 to 40 minutes, or until the center is just set. Let cool briefly, then serve while still warm.
