This is a crowd pleaser. Easy to make, but needs to be chilled for several hours.

Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- Mix flour, pecans, and margarine in a bowl. Press dough into a 9x13-inch baking dish to form a crust.
- Bake in preheated oven until golden brown, about 30 minutes. Allow crust to cool completely.
- Meanwhile, heat blueberries, sugar, cornstarch, and 1 teaspoon lemon juice in a saucepan over medium heat until berries burst and juice thickens, about 10 minutes. Allow blueberry sauce to cool completely.
- Beat cream cheese until fluffy. Add sweetened condensed milk and blend well. Stir in 1/3 cup lemon juice. Pour cream cheese filling into cooled crust and spread blueberry sauce over cream cheese. Chill in refrigerator for at least 2 hours before serving.

If you like sweet potato pie, then you will love this. This ice cream is rich and creamy like that of professional ice cream parlors. I also make mini ice cream pies with it and they are great. When I make this most people are afraid to try it, but when they finally try it the ice cream disappears. I have people ask me to make it all the time.

- Beat cream in a large bowl until foamy. Gradually add sugar, continuing to beat until stiff peaks form. Lift your beater or whisk straight up: the cream should form a sharp peak. Add sweetened condensed milk and egg yolks; beat until well mixed. Slowly beat sweet potatoes into cream mixture until well blended. Stir in cinnamon.
- Crumble graham cracker crusts into the sweet potato mixture; pour into an ice cream maker and freeze according to manufacturer's directions until it reaches 'soft-serve' consistency, about 6 hours. Transfer ice cream to a lidded plastic container; cover surface with plastic wrap and seal. For best results, ice cream should ripen in the freezer for at least 2 hours or overnight.

10 MINUTE GERMAN SWEET CHOCOLATE CREAM PIE
Steps:
- 1. Thaw whipped topping.
- 2. Heat 1 package (4 ounces) Baker\'s German Sweet Chocolate and 2 tablespoons milk in saucepan over low heat, stirring until chocolate is melted.
- 3. Beat sugar into cream cheese; add remaining milk and chocolate mixture and beat until smooth.

- Heat chocolate and 2 tbsp of the milk in a saucepan over low heat, stirring until chocolate is melted.
- Beat sugar into cream cheese; add remaining milk and melted chocolate mixture, and beat until smooth.
- Fold in Cool Whip, blending until smooth.
- Spoon mixture into crust.
- Freeze until firm, about 4 hours.
- Garnish with chocolate curls if desired.
- NOTE: If pie is frozen overnight, let stand at room temperature for about an hour before serving.
SWEET CORN CEREAL MILK™ ICE CREAM PIE
Steps:
- Put the corn cookies in the food processor and pulse it on and off until the cookies are crumbled into bright yellow sand. (If you don't have a food processor, you can fake it till you make it and crumble the corn cookies diligently with your hands into a bowl.)
- In a bowl, knead the butter and ground cookie mixture by hand until it is moist enough to form a ball. If it is not moist enough to do so, melt an additional 14 g (1 tablespoon) butter and knead it in.
- Using your fingers and the palms of your hands, press the corn cookie crust firmly into a 10-inch pie plate. Make sure the bottom and the walls of the pie plate are evenly covered. Wrapped in plastic, the crust can be frozen for up to 2 weeks.
- Use a spatula to scrape and spread the cereal milk "ice cream" filling into the pie shell. Tap the filled pie against the surface of the counter to even the filling. Freeze the pie for at least 3 hours, or until the "ice cream" is frozen and set hard enough to cut and serve. If you're saving your slices of heaven for later, you can freeze the ice cream pie, wrapped in plastic, for up to 2 weeks.
- Notes
- Garnish slices of the pie with local fruit of the season. At Ssäm Bar, we macerate a pint of fresh Tristar strawberries (page 214) with a tablespoon of sugar, a very tiny pinch of salt, and 1/2 teaspoon rice wine vinegar and spoon over the pie slices.
SWEET POTATO CREAM CHEESE BROWNIE PIE

- Brownie Crust Preparation:
- Preheat oven to 325 degrees F.
- Grease/spray a 9-inch springform pan. Melt butter with chopped chocolate over low heat (can use a double boiler), stirring constantly. Remove melted chocolate from heat and cool for about 2 minutes. Stir in sugar and egg until blended. Then in a small bowl, sift flour, baking powder and salt. Add flour mixture to the chocolate. Stir in walnuts. Pour batter into the springform pan and spread it until it covers the pan evenly. Bake for 10 minutes.
- Cream Cheese Layer Preparation:
- Using an electric mixer, beat the cream cheese until fluffy, gradually adding sugar. Add the egg and continue to mix until well blended. Next, mix in sour cream, heavy cream, flour, and maple. Pour cheese mixture over brownie crust in springform pan. Bake at 325 degrees F for 35 to 45 minutes or until a toothpick comes out clean.
- Sweet Potato Meringue Preparation:
- Start preparing this layer about 15 minutes before the cream cheese layer's baking time is over. Using a mixer, beat egg whites until stiff peaks form. Add powdered sugar and whip a few seconds more. Turn off mixer. Using a fork, blend cinnamon and nutmeg with cooked sweet potato, making sure that spices are well incorporated into the sweet potato. Then, carefully fold sweet potato mixture into the egg whites. Pull pie out of oven and top with sweet potato meringue. Return pie to oven for 10 more minutes or until meringue has set. Remove from oven and cool completely. While cooling, prepare caramel sauce and chocolate ganache.
- Caramel Sauce Preparation:
- Unwrap caramel candies. In the top of a double boiler, melt the caramels in the evaporated milk, stirring constantly until the sauce is smooth and pourable.
- Chocolate Ganache Prepartion:
- Melt chocolate and heavy cream together in the top of a double boiler. Stir constantly until mixture is smooth.
- Assembly:
- When both sauces are done, decorate pie in the pattern or style of your choice. Sprinkle with chopped pecans. May serve with whipped cream.

- Place a large bowl in freezer.
- Let ice cream stand at room temperature 45 minutes or until softened.
- Preheat oven to 450°.
- Cut pie dough round in half.
- Place half of dough on a baking sheet coated with cooking spray; reserve remaining dough for another use.
- Bake dough at 450° for 10 minutes or until lightly browned.
- Cool completely on a wire rack.
- Break crust into small pieces.
- Place sweet potatoes, sugar, and spice in a bowl.

- Preheat oven to 375°F. Mix graham cracker crumbs, melted butter, and sugar until well blended. Press into a 9-inch pie plate. Bake at 375°F for 10 to 15 minutes, until lightly browned. Cool completely. Lower oven temperature to 325°F. Place strawberries and orange juice in a blender or food processor and blend until mixture reaches a smooth consistency. Run mixture through a sieve into a 1/2 cup measure, scraping the seeds from the bottom to allow the juice to run through. - Preheat oven to 350. Place potato in a 10 1/2 x 7 baking dish. Pour maple syrup over top and toss until well coated.
