3/4 cup unsweetened light coconut milk, divided
1/2 cup sweet chili sauce, plus more for dipping
1 lime
salt and pepper
1-1/2 lbs chicken breasts
1 medium-sized head cauliflower, grated (6-8 cups)
1-1/2 Tablespoons coconut oil
1/4 cup fresh cilantro, chopped

Steps:

  • Combine 1/2 cup coconut milk, sweet chili sauce and the juice of 1/2 lime in a large Ziplock bag. Add salt and pepper then squish to combine. Add chicken breasts then marinate for 30 minutes - 1 hour in the refrigerator. Preheat grill to medium-high, making sure grates are well greased. Grill chicken breasts for 4-5 minutes on the first side, then 3-4 minutes on the second side, depending on how big they are and how well done you like them. Remove to a plate to rest for 5 minutes. Meanwhile, heat coconut oil in a very large skillet over medium/medium-high heat (6 out of 10.) Add cauliflower, season liberally with salt and pepper, and then saute until tender, 5-7 minutes. Squeeze in juice from remaining lime half then add 3-4 Tablespoons coconut milk, depending on how coconutty you want it. Add cilantro then stir to combine. Taste then add salt and pepper if necessary. Scoop onto plates then top with chicken and serve with extra sweet chili sauce for dipping.

A very flavorful Asian-type meal with a sweet heat that incorporates my favorite flavors (chili, lime, and cilantro) with a little bit of sugar. The sauce glazes the chicken and is wonderful over the cilantro couscous. You can substitute salt and pepper to taste for MSG.

1 tablespoon olive oil
1 pound skinless, boneless chicken breast halves, cubed
1 pinch monosodium glutamate (such as Ac'cent®), or to taste
6 tablespoons soy sauce
6 tablespoons brown sugar
½ teaspoon red pepper flakes, or more to taste
1 lime, juiced and zested
2 cups vegetable broth
1 cup couscous
⅓ cup chopped cilantro
4 wedges lime for garnish

Steps:

  • Heat olive oil in a large skillet over medium heat; cook and stir chicken breast cubes in the hot oil until the juices run clear and chicken is no longer pink inside, 5 to 6 minutes. Sprinkle chicken with monosodium glutamate as it cooks. Remove chicken from skillet.
  • Mix soy sauce, brown sugar, red pepper flakes, lime juice, and lime zest in a bowl, stirring to dissolve sugar. Pour sauce into hot skillet, bring to a boil, and reduce heat to low. Simmer, stirring occasionally, until sauce begins to reduce slightly, 3 to 4 minutes. Mix cooked chicken into sauce and cook until sauce forms a glaze on chicken pieces, about 2 to 3 more minutes, stirring often.
  • Bring vegetable broth to a boil in a saucepan. Stir couscous into vegetable broth, turn off the heat, and let couscous stand until broth is absorbed, about 5 minutes. Stir cilantro into couscous.
  • Arrange couscous onto a serving platter, top with chicken and sauce, and serve with lime wedges. Squeeze lime wedges over couscous and chicken before serving.

2 (8 ounce) skinless, boneless chicken breasts
¼ cup minced fresh cilantro
2 tablespoons lime juice
1 tablespoon low-sodium soy sauce
1 tablespoon olive oil
2 cloves garlic, minced
¼ cup sweet chili sauce
1 teaspoon minced fresh cilantro

Steps:

  • Place chicken in a resealable plastic bag. Combine 1/4 cup cilantro, lime juice, soy sauce, olive oil, and garlic in a small bowl. Pour over chicken and seal the bag. Let marinate in the refrigerator, 3 hours to overnight.

I tasted this delicious Asian American chicken at a sample table and couldn't wait to get home and cook it for my husband! You can either use sweet chili sauce with a twist of lime of for better results use Canyon Farms Sweet Chili Lime Sauce. Serves great with rice and a side of green beans. This recipe is also great using shrimp or pork.

3 chicken breasts, chopped
2 1/2 tablespoons adams ginger teriyaki seasoning mix
1/2 red bell pepper, chopped
1/2 yellow sweet onion, sliced
1/2 cup mushroom, chopped
1/4 cup sweet chili sauce

Steps:

  • Heat saute pan w/oil. Cut chicken into chunks and season w/about 1-2 tbs. Adams Rub.
  • On med. high saute chicken about 3-4 minutes on each side, chicken is now done, REMOVE.
  • Add veggies and saute on high till slightly tender, then add Chili Lime Sauce to warm and toss chicken back inches.
  • Serve over rice noodles or rice and enjoy!
