1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can black beans, drained and rinsed
1 (16 ounce) jar salsa
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon cumin
1 (8 ounce) package cream cheese, cut into small cubes

Steps:

  • combine corn,beans,salsa,and spices.
  • stir in cubes of cream cheese
  • bake 350 degrees for 25 minutes.
  • (DO NOT STIR).
  • Serve with tortilla chips.

Sweet & Spicy Black Bean Salad (Or Dip) image

I could honestly eat this for days in a row...nothing else. It's a great combination of sweet corn and black beans and lots of other tasty things! It's worth the bit of mincing and is a great dish to make ahead of time. This can be served as a salad, but I've always made it as an appetizer dip, served with tortilla chips.

2 (15 ounce) cans black beans, drained and rinsed
1 1/2 cups sweet corn (I use frozen, thawed)
2 fresh jalapeno peppers, seeded and minced
1/2 cup green onion, minced
1/2 cup fresh cilantro, minced
1/4 cup fresh lime juice
1/4 cup canola oil
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon ground pepper

Steps:

  • In a jar or container with tight-fitting lid, combine lime juice, oil, brown sugar, mustard, salt and pepper. Shake until completely blended.
  • In a separate bowl, combine beans, corn, green onions, jalapeno and cilantro.
  • Pour dressing over bean mixture and toss to coat.
  • Cover and chill for atleast an hour or up to a day. If a day, give it a stir or two.
  • To serve as a salad, arrange with cabbage or lettuce leaves. Add more cilantro to make it pretty on top, if you wish.
  • To serve as an appetizer, I like to eat it with tortilla chips.

10 ounces salsa verde (my recipe or your favorite)
1 cup shredded monterey jack cheese
1/4 cup maple syrup

Steps:

  • Mix all ingredients together and place in an oven proof dish and bake for 20 minutes or microwave for 5 minutes.
  • If microwaving make sure to stir a couple times.
  • Serve with corn chips!

1 cup pinto beans (canned)
1/2 cup frozen sweet corn
1/3 cup diced white onion
1 tablespoon maple syrup
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon season salt

Steps:

  • Drizzle olive oil into a sautée pan and turn on medium to high heat.
  • Add in your onions and corn, cook until they turn slightly brown.
  • Then add in your pinto beans and cook until the mixture begins to stick to the pan. The beans should be almost cooked.
  • Finally drizzle in your maple syrup, and add in your spices as directed. Enjoy!
  • Serve with tortilla chips or toasted bread.

1 red bell pepper
1 green bell pepper
1 medium red onion
2 Tbsp olive oil
2 cans (16 oz. each) Bush's black beans
2 cans (15 oz. each) Hunt's diced chili flavored tomatoes
1 poblano pepper
2 Tbsp chili powder
1 Tbsp ground cumin
9 oz Heinz chili sauce

Steps:

  • Dice peppers and onions and saute with olive oil, in a large non-stick skillet, on medium high until tender.
  • Add the rest of ingredients to skillet. Simmer on medium low for 30 minutes.
