My mom gave me this recipe and it's nice and sweet. I normally use three medium-large sized bananas. Nuts can be added, if desired.

1 ¾ cups all-purpose flour
1 ¼ teaspoons baking powder
½ teaspoon baking soda
¾ teaspoon salt
1 (3 ounce) package non-instant vanilla pudding mix
⅔ cup white sugar
½ cup shortening
2 eggs
2 tablespoons milk
1 ⅓ cups mashed ripe banana
⅓ cup chopped walnuts

Steps:

  • In a small bowl, sift together flour, baking powder, baking soda, salt and vanilla pudding mix. In a large mixing bowl, beat sugar and shortening until light, scraping sides of the bowl often. Add the eggs one at a time, beating smooth after each addition. Mix in the milk.
  • Add flour mixture and mashed bananas alternately to creamed mixture, beating until smooth after each addition. Fold in nuts if desired. Pour batter into a lightly greased 8x4 inch loaf pan.
  • Bake in a cold, (non-preheated) oven set to 350 degrees F (175 degrees C). Bake for 50 minutes, then cover with foil to prevent burning and bake for additional 10 to 20 minutes or until toothpick inserted into the crown comes out clean. Leave in pan for 10 minutes, then remove from pan and cool.

I wanted a healthier version of my favorite banana bread, so I came up with this. I added the chocolate to appeal to my kids, and boy did they love it! The garbanzo flour packs a bit of extra protein. Slice and enjoy warm!

1 cup white sugar
1 banana, mashed
½ cup fat-free plain yogurt
2 eggs
1 cup all-purpose flour
⅔ cup chickpea (garbanzo bean) flour
1 teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt
⅓ cup water
1 cup cooked and mashed sweet potatoes
½ cup semisweet chocolate morsels
¼ cup chia seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a loaf pan with cooking spray.
  • Beat sugar, banana, and yogurt together in a large bowl until smooth. Beat 1 egg into the banana mixture until smooth before adding the second egg and beating again until smooth.
  • Mix all-purpose flour, chickpea flour, baking soda, ground cinnamon, and salt together in a separate bowl; add to the banana mixture with the water and beat until smooth and batter-like. Stir mashed sweet potatoes into the batter until smooth. Fold chocolate and chia seeds through the batter; pour into the prepared loaf pan.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, about 1 hour. Cool in the pan for 10 minutes before slicing.

1 (16 ounce) loaf banana bread
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) can evaporated milk
1 cup milk, or as needed
4 large eggs, beaten slightly
¼ cup white sugar
2 teaspoons vanilla extract
¼ teaspoon ground cinnamon
4 tablespoons unsalted butter, cut into 1/4-inch pieces
1 tablespoon white sugar, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch glass baking dish with nonstick spray.
  • Break banana bread, including heels, into 1-inch pieces. Place in the prepared dish.
  • Pour condensed and evaporated milks into a 4-cup measure. Add enough regular milk to make 4 cups. Pour this into a large bowl.
  • Add eggs, 1/4 cup sugar, vanilla, and cinnamon and stir briskly until well blended.
  • Pour custard mixture over the bread. Push bread down with the back of a spoon until it is soaked through. Scatter butter pieces across the top and sprinkle with remaining sugar.

This quick bread is a twist on plain banana bread that's full of flavor. Nuts add a nice crunch. This recipe uses bananas and mashed sweet potatoes which make the bread extremely moist and tender. The bread is not overly sweet so the glaze on top adds sweetness to the bread. Perfect for breakfast or an afternoon snack.

2 over-ripe bananas, mashed
1 c sweet potato, mashed (or 15 oz. can sweet potatoes, drained and mashed)
3/4 c light brown sugar, packed
1/4 c canola oil
1 tsp vanilla
2 large eggs
1 c all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
1/2 c chopped pecans or walnuts (optional)
GLAZE
2/3 c powdered sugar
2-3 tsp milk
1/4 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees F. Spray loaf pan with non-stick spray.
  • 2. In a bowl, combine bananas, sweet potatoes, brown sugar, oil, vanilla, and eggs.
  • 3. In a separate bowl, combine flour, baking soda, baking powder, and cinnamon.
  • 4. Stir the flour mixture into the banana mixture only until just combined.
  • 5. Fold in nuts.
  • 6. Pour into prepared pan.
  • 7. Bake for 50-60 minutes or until a toothpick comes out clean.
  • 8. Cool for 10-15 minutes and remove from pan.
  • 9. Mix glaze.
  • 10. Pour glaze on cooled bread.
  • 11. VARIATION*** I have used canned organic butternut squash in place of the sweet potatoes. Pumpkin spice liquid coffee creamer can be substituted for milk in the glaze.

For those times when I'm short on time I'll have to remember how fast and easy this was and that it turned out not one but two loaves of the moistest and most delish bread that my husband said he dreamed about the whole next day. Of course, I've made healthy adjustments to fit my family's needs. I am planning on trying this with a yellow cake mix and also will try this same way but adding pineapple bits to the batter.

18 1/4 ounces duncan hines moist supreme pineapple cake mix
3 eggs (follow your mix recommendations)
1/2 cup water (again, follow cake mix recommendations here)
3 very ripe bananas (the peels on mine were dark but the insides were getting soft)
1/3 cup unsweetened applesauce, as a substitute for the recommended oil in the mix (those snack cups of applesauce are exactly this amount)

Steps:

  • heat oven to 325 and grease and flour two glass or foil loaf pans. (Use oven recommended temp on the cake mix box that you are using).
  • According to cake mix instructions, mix the eggs, cake mix and water together. Beat on medium speed for 2 minutes. In a seperate bowl and BY HAND mash bananas with a fork. You want some small lumps to remain. Don't mash too much. Add applesauce to bananas and lightly stir together.
  • Mix bananas and applesauce into the beaten cake batter and stir by hand until completely combined. Divide batter between the two loaf pans and back for approximately 35-40 minutes -- use the toothpick test for doneness. You should see moist crumbs stick to the toothpick, but not wet batter. Also, center of bread will be flat and soft, but not jiggly.
  • Enjoy this easy one.

Steps:

  • Before you start: Position a rack in the center of your oven and preheat the oven to 350°F Lightly butter and flour a 1 1/2-quart loaf pan.
  • To make the apples: Preheat a medium skillet over medium-high heat. Add the butter and brown sugar and heat until bubbling. Add the apples and cinnamon and sauté until golden and tender, about 5 minutes. Stir in the vanilla. Remove from the heat and set aside to cool.
  • To make the banana bread: In a medium bowl, whisk together the flour, baking soda, cinnamon, cloves, nutmeg, and salt.
