Baked Sweet Potatoes and Apples image

For a pretty and tasty side dish, try this combination of sweet potatoes and apples sprinkled with gingersnap crumbs. It's one of my favorites to serve with turkey at Thanksgiving and Christmas.

Number Of Ingredients 6

6 medium sweet potatoes
2 medium tart apples, peeled, cored and cut into rings
1/2 cup packed brown sugar
1/4 cup butter
2 tablespoons unsweetened apple juice
2/3 cup finely crushed gingersnap cookies (about 10 cookies)

Steps:

  • Place the sweet potatoes in a Dutch oven; cover with water. Cover and bring to a boil; cook for 30 minutes or just until tender. Drain; cool slightly. Peel the potatoes and cut into 1/2-in. slices. Arrange half of the slices in a greased 13-in. x 9-in. baking dish. Top with the apples and remaining sweet potato slices. , In a small saucepan, bring the brown sugar, butter and apple juice to a boil, stirring constantly. Pour over potatoes and apples. Bake, uncovered, at 325° for 30 minutes or until apples are tender. Sprinkle with gingersnap crumbs. Bake 15 minutes longer.

These baked apples are stuffed with a sweet potato, pineapple and pecan filling and topped with marshmallows.

6 baking apples - peeled and cored
½ cup cinnamon red hot candies
1 cup water
1 (29 ounce) can sweet potatoes, drained
⅓ cup packed brown sugar
½ cup crushed pineapple, drained
¼ cup chopped pecans
6 large marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large pot over medium heat, combine the candies and water. Stir until candies are dissolved.
  • Add the apples and baste frequently until apples begin to soften. Remove from heat and allow to cool.
  • Mix together the sweet potatoes, brown sugar, pineapple and pecans.
  • Stuff the cooled apples with the sweet potato mixture. Mound any remaining mixture on top of apples.
  • Place in 4 quart casserole dish and bake for 20 minutes; place a marshmallow on each apple, return to oven and cook until marshmallows are golden brown.

A cheering fall and winter vegan recipe, this medley of sweet potatoes and apples makes a great side dish for Thanksgiving dinner, though you need not save this easy preparation for special occasions only.

4 large sweet potatoes
1 teaspoon vegetable oil, or as needed
2 tablespoons vegan margarine (such as Earth Balance®), melted
⅓ cup maple syrup
2 large apples - peeled, cored, and thinly sliced
1 pinch cinnamon, or to taste
1 pinch ground cloves, or to taste
½ cup apple juice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place sweet potatoes on a baking sheet.
  • Bake in the preheated oven until cooked through but still firm, about 20 minutes.
  • Remove sweet potatoes from oven; leave oven on. Allow sweet potatoes to cool until safe to handle; peel and cut into 1/2-inch slices.
  • Coat a deep 1 1/2-quart baking casserole with oil. Arrange 1/2 the sweet potato slices on the bottom. Drizzle with 1/2 of the melted vegan margarine followed by 1/2 of the maple syrup. Top with apple slices and sprinkle lightly with cinnamon and cloves. Repeat layers. Pour apple juice on top. Cover casserole with a lid or aluminum foil.
  • Bake in the hot oven, covered, for 30 minutes. Remove lid or aluminum foil and bake for 10 minutes more. Serve immediately or cover and keep warm until serving.

6 T unsalted butter, divided
4 T dry sherry
2 1/2 t. cinnamon, divided
3 medium sweet potatoes, peeled, cut into 1 1/2 inch cubes
3/4 t. salt
3 small granny smith apples, peeled, cut into thin slices

Steps:

  • heat oven to 400 degrees bring salted water in large saucepan to boil and add potatoes til tender (12Min) Drain,put potatoes back into dry pot and cook over med. heat to dry out. While potatoes cook, put corn syrup, br sugar 4 T butter and sherry and 2 t. cinnamon in small saucepan, heat til butter melts, stir, set aside. Puree potatoes, salt and br sugar syrup in food processor. Spread hald potato mixture in greased shallow 7 cup baking dish (8x8) Put 1/2 of apples on top in single layer. spread remaining potato mixture over apples, arrange remaining apples on top. M Melt remaining 2T butter, combine with remaining t.cinnamon.brush over apples (can be prepared to this point 2 days in advance and refigerated, covered. Bring to room temp before baking, Bake covered with foil 20 min. uncover and bake til apples are brown about 25 min. Can be baked ahead, completely cooled and refigerated up to 2 days, covered airtight. Bring to room temp before reheating.
