Bacon-wrapped crackers sprinkled with brown sugar and baked to perfection! A delicious tailgate or party recipe. Sweet, salty, portable and addictive.

54 buttery crackers (, like club crackers, about 1 ½ sleeves)
16 ounces thinly sliced bacon (, cut into thirds)
1/4 cup brown sugar

Steps:

  • Take bacon out of the refrigerator and allow to soften slightly.
  • Preheat oven to 275 degrees F.
  • Prepare a baking sheet with sides by lining with non-stick foil or parchment paper. Spray foil or parchment with baking spray.
  • Cut bacon slices into three pieces if using regular bacon, or cut slices in half if using center cut bacon.
  • Wrap one bacon piece around one cracker. Repeat with all crackers.
  • Lay on the baking sheet with seam side down. These can be placed close together, but not touching. Repeat with all crackers.
  • Sprinkle the top of each wrapped cracker with brown sugar. Do not use too much or it will run off and create a hard caramel layer. Repeat with all crackers.
  • Place into preheated oven and cook for 30 to 45 minutes. Longer may be required for crisper bacon.
  • Remove from oven and allow to cool for a few minutes.
  • Move to serving tray and enjoy!

Attention, bacon lovers! These Sweet-&-Spicy Bacon Crackers are little bites of bacon deliciousness, perfect for enjoying as a party nibble or fun snack with your favorite cold drink.

Yield about 40 crackers

Number Of Ingredients 6

1 lb. bacon {do not use thick-cut bacon ... it won't cook through quickly enough in the oven}
about 40 Club crackers
1/4 c. brown sugar
1 tsp. chili powder
1/8 tsp. black pepper
pinch cayenne pepper

Steps:

  • Place brown sugar, chili powder, black pepper, and cayenne pepper in a small bowl. Stir until well combined. Set aside.
  • Lightly spray a wire rack {I use a cooling rack} with non-stick cooking spray; set the rack in a rimmed baking sheet.
  • Cut each bacon slice into 3 equal-sized pieces {I place the entire opened package on a cutting board and cut it into thirds all at once}. Wrap a bacon piece around the center of each cracker, positioning the "seam" on the bottom of each cracker. Place seam-side-down in a single layer on the prepared rack.
  • Sprinkle a little of the brown sugar mixture on top of the bacon on each cracker.
  • Bake at 250℉ until the bacon is crisp, about 1 hour and 20 minutes. Cool 5 minutes before serving.
  • Not all crackers work well for this recipe ~ I tested with several. Keebler Club crackers work best, and are what's used in the photos for this post. Lance Captain's Wafers also work. Keebler Toasteds Buttercrisp round crackers also work, but are not as good as Club crackers and Captain's Wafers. Ritz crackers become soggy and do not work well at all.
  • The crackers are best served warm right away or at room temperature within a couple of hours of baking. But we do also enjoy them cold, as well.
  • Store leftovers in the refrigerator since they include meat. They do, surprisingly, hold a good bit of their crispness for up to about 3 days even when refrigerated.
  • I have not tried reheating these. We eat our leftovers cold. If you do want to try reheating them, I recommend trying popping them back in a 250℉ oven for just a few minutes until warmed through.

1 sleeve country club-style crackers
3/4 cup grated Parmesan
1 pound thinly sliced bacon

Steps:

  • Preheat the oven to 250 degrees F.
  • Lay the crackers face up on a large rack over a baking sheet (or broiler pan). Scoop about 1 teaspoon of the grated Parmesan onto each cracker. Cut the package of bacon in half (or cut pieces individually) and carefully, so the cheese doesn't fall off, wrap each cheese covered cracker with one half piece of bacon, completely covering the cracker. It should fit snugly around the cracker, but not be pulled too taut. Place the bacon-wrapped crackers onto the rack. Place the baking sheet in the oven for about 2 hours. Serve immediately or at room temperature!

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Arrange the crackers in a single layer on a large baking sheet. Top each cracker with 1/3 slice bacon, and sprinkle desired amount of brown sugar over all.
  • Bake 1 hour in the preheated oven, or until browned and crisp. Serve warm.

SWEET ALMOND CRACKERS

52 individual butter crackers, such as Club
8 tablespoons (1 stick) salted butter
1 cup firmly packed brown sugar
1 teaspoon vanilla extract
1 cup sliced almonds

Steps:

  • Preheat the oven to 350 degrees F.
  • Arrange the crackers in a single layer on a rimmed baking sheet so that the baking sheet is completely covered with a solid layer of crackers. Set aside.
  • In a medium saucepan, melt the butter with the brown sugar and vanilla. Bring to a gentle boil over medium heat and boil until it starts to thicken, 1 to 2 minutes. Immediately pour the mixture over the crackers in an even layer. Use an offset spatula to spread the mixture all over the crackers. Bake for 5 minutes. Sprinkle the almonds all over, then let cool completely.
  • When cool, break apart for a great snack.

These dangerously addictive little bites fueled countless 1950s and '60s bridge parties from Greenwood Mississippi, to Greenville, South Carolina, before being rescued from recipe-box oblivion by modern Southern cooks like Martha Hall Foose. And thank goodness. Magic happens when a cracker slowly sops up the fat from smoky, crisping bacon; it transforms into something more akin to piecrust. Unadorned, bacon crackers are pure pork perfection. The addition of a tine bundle of rosemary needles makes for a fancified version, while topping the "belt" of bacon with a bit of brown sugar adds a hint of sweet to the smoke.

12 bacon slices (not thick-cut)
48 saltines or buttery crackers, such as Club brand
48 fresh rosemary tips (for Herbed Bacon Crackers)
6 teaspoons dark brown sugar (for Brown Sugar Bacon Crackers)

Steps:

  • Preheat the oven to 250°F. Line the bottom of a broiler pan with foil for easy cleanup.
  • Cut the bacon slices in half lengthwise and then crosswire to create 4 long strips.
  • Arrange the crackers on a work surface and wrap a bacon strip around each cracker, overlapping the ends on top.
  • If making Herbed Bacon Crackers, tuck a base of rosemary tips under overlapping ends of bacon. If making Brown Sugar Bacon Crackers, carefully sprinkle 1/8 teaspoon brown sugar on the top side of each cracker, pressing to help it adhere (avoid getting sugar on the cracker or it will burn.)
  • Set a perforated rack on top of the foil-lined broiler pan and arrange the crackers seam-side down 1/2 apart in a single layer and bake for 1 to 1 1/2 hours, until the bacon is at your desired level of crispness. Transfer the crackers to a cooling rack and cool completely before serving.
