SWEET & SPICY POPCORN CRUNCH OR BALLS

I actually combined two recipes I had seen and wanted to try. This is a joint effort of a Martha Stewart Recipe and a Food Network Recipe - that I mixed together. It turned out VERY good!

2 (3 1/2 ounce) bags natural microwave popcorn (minus any unpopped kernels)
1 cup salted peanuts or 1 cup pecan halves (optional)
1/2 cup salted butter
1/2 cup sugar
1/4 cup light corn syrup
1 tablespoon unsalted butter, cut into pieces, plus more for forming (when making popcorn balls)
1/8 teaspoon fine salt
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/8 teaspoon cayenne pepper

Steps:

  • Preheat oven to 250°F Line 2 baking sheets with nonstick baking mats; set aside.
  • Pop popcorn according to package directions, get rid of unpopped kernels; set aside.
  • Make caramel: Combine butter, sugar, and corn syrup in a medium pot over medium heat. Cook, stirring occasionally until sugar has dissolved. Increase heat to medium-high, and cook, without stirring, until golden brown, about 5 minutes, swirling pot occasionally.
  • Remove mixture from heat and quickly stir in salt, vanilla, cinnamon & cayenne with a heatproof spatula or spoon. Immediately pour over popcorn mixture and stir to incorporate. Divide popcorn mixture evenly between baking sheets. Transfer to oven and bake, about 30 minutes, stirring occasionally.
  • Let cool on sheet pans before breaking apart into clusters. Store popcorn in an airtight container for up to 1 week.
  • *Note: If you opt for the 'pepitas' the pumpkin seeds instead of nuts (use one or the other not both) ~ you will need to toast the pumpkin seeds in a large skillet over medium-high heat, until browned and popping, tossing and stirring occasionally, about 4 minutes. (Do this in batches, if needed.) Then, add to the popcorn.
  • *If making popcorn balls, use following directions: When the popcorn is cool enough to handle, coat your hands with some butter and shape into 4-inch balls. Wrap in waxed paper and tie with a string, if desired. Serve or store covered at room temperature for up to a week.

This sweet and spicy popcorn snack is flavored with sugar and chili powder.

1/4 cup vegetable oil
1/4 cup sugar
1/2 to 1 teaspoon chili powder, as desired
1/2 cup unpopped popcorn (not microwave popcorn)

Steps:

  • In 4-quart saucepan, heat oil over medium-high heat. Stir in sugar and chili powder. Add popcorn, and shake to coat popcorn evenly.
  • Cover pan, and start shaking back and forth. Keep shaking to prevent popcorn and sugar from burning. After a few minutes, you will hear the popcorn start to pop. Keep shaking until the popping has slowed to once every 2 to 3 seconds. Remove from heat, and immediately pour into large bowl. Cool, stirring occasionally to break up clumps. Serve warm.

3 tablespoons plus 1/4 cup coconut oil
1/2 cup popcorn kernels
3 tablespoons confectioners' sugar
1 tablespoon paprika
Kosher salt
3/4 teaspoon garlic powder
3/4 teaspoon ground cumin
3/4 teaspoon cayenne pepper

Steps:

  • Melt 3 tablespoons coconut oil in a large pot over high heat. Add the popcorn kernels, partially cover and cook, shaking the pot occasionally, until the popping slows down. Transfer the popcorn to a large bowl. Wipe out the pot.
  • Stir the confectioners' sugar, paprika, 1 teaspoon salt, the garlic powder, cumin and cayenne together in a small bowl.
  • Melt the remaining 1/4 cup coconut oil in the same pot over medium heat. Add the popcorn and half of the sugar mixture, cover the pot and shake to coat. Add the remaining sugar mixture and continue to shake until well coated.

2 cups crispy corn and rice cereal (such as Crispix®)
2 cups honey graham cereal (such as Golden Grahams®)
2 cups peanut butter corn puff cereal (such as Reese's Puffs®)
2 cups popped popcorn, or more to taste
8 ounces candy-coated milk chocolate pieces (such as M&M's®)
1 cup salted peanuts
½ cup butter
2 tablespoons all-purpose flour
1 cup brown sugar
½ cup corn syrup
½ cup peanut butter

Steps:

  • Line a large baking sheet with waxed paper.
  • Combine crispy corn and rice cereal, honey graham cereal, peanut butter corn puff cereal, popcorn, chocolate pieces, and peanuts in a large bowl.
  • Melt butter in a large saucepan over medium heat; whisk in flour until smooth, 2 to 3 minutes. Add brown sugar and corn syrup; bring to a boil, stirring occasionally, until sugar is dissolved, about 1 minute. Steps:

  • Start by making the yellow spicy popcorn. In a pot add the popcorn then the oil to cover. Sprinkle on the sugar, followed by the yellow food coloring gel. Stir well to combine. Add the lid then heat on medium high. When the kernels start to pop, shake the pot while holding the lid closed. Continue cooking until all of the kernels have popped, then remove from the heat. Transfer the popped and colored popcorn to a large mixing bowl. Add the chipotle powder, salt, corn nuts, and ring chips. Mix well then set aside.
  • Next make the purple popcorn. In a pot add the popcorn then the oil to cover. Sprinkle on the sugar, followed by the purple food coloring gel. Stir well to combine. Add the lid then heat on medium high. When the kernels start to pop, shake the pot while holding the lid closed. Continue cooking until all of the kernels have popped, then remove from the heat. Transfer the popped and colored popcorn to a large mixing bowl. Add the M&M's, gummies, purple sugar, and sweet potato chips.
  • In a large bowl, evenly add the yellow and purple popcorn mixtures to create a fun mix of spicy and sweet treats.
