1 ½ pounds smoked sausage, cut into 1-inch pieces
1 large onion, cut into 1-inch pieces
1 large green bell pepper, cut into 1-inch pieces
½ cup apricot preserves
1 tablespoon cornstarch
1 tablespoon soy sauce
1 tablespoon vinegar
½ teaspoon ground ginger
2 cups drained pineapple chunks
1 (14.5 ounce) can stewed tomatoes

Steps:

  • Heat a skillet over medium heat; cook and stir sausage, onion, and bell pepper in the hot skillet until vegetables are tender, about 5 minutes.
  • Whisk apricot preserves, cornstarch, soy sauce, vinegar, and ginger in a small bowl; stir mixture into sausage mixture. Cook and stir until thickened, about 5 minutes. Add pineapple chunks and tomatoes. Continue to cook and stir until heated through, about 10 minutes more.

3 Tbsp vegetable oil
1 lb smoked sausage, sliced
1 c green bell pepper, cut into chunks
1 c red bell pepper, cut into chinks
1 medium onion, roughly chopped
2 clove garlic, peeled and finely diced
1 can(s) sliced water chestnuts, undrained (5 ounces)
2-3 Tbsp cornstarch
1 can(s) pineapple chunks (20 ounces) , drained, liquid reserved
2/3 c light corn syrup
1/2 c apple cider vinegar
3 Tbsp soy sauce
3 Tbsp ketchup
1-2 tsp toasted sesame oil
4-6 servings cooked white rice

Steps:

  • 1. Heat oil in a 12-inch non-stick skillet over medium high heat. Add sausage slices and cook until slices are browned around the edges, about 10-12 minutes. Remove from pan, cover and keep warm.
  • 2. To the same pan, add the green pepper, red pepper, onion, garlic and water chestnuts. Cook for 3-4 minutes, stirring often, until crisp-tender.
  • 3. Meanwhile, in a medium size bowl, combine the reserved pineapple juice, cornstarch, corn syrup, vinegar, soy sauce and ketchup. Mix well to incorporate cornstarch. Pour into skillet with vegetables. Cook for 4-5 minutes until thickened and heated through. Add the pineapple chunks, browned sausage and sesame oil. Mix well. Cook an additional 2-3 minutes to heat through.
  • 4. Serve over rice.

I decided that I needed to share this recipe after two people came into our break room tonight to see what I was eating that smelled so good. The recipe is adopted from a woman I work with, she calls it "Party Kielbasa". I like using turkey smoked sausage, but it works well with either smoked sausage or kielbasa. I brown the sausage in a frying pan with the Liquid Smoke before I bake it, because I like it to be a little bit crunchy on the outside, but you can just throw it all together without browning it, it tastes good either way. I serve it over rice because it soaks up the juice nicely. It could probably be a crockpot recipe in the summer, but I like baking it in the winter.

12 ounces chili sauce (I use Heinz.)
20 ounces crushed pineapple with juice, undrained
3/4 cup brown sugar
2 bell peppers, cut into bite size pieces (I use yellow or red and green, to make it colorful)
1 lb smoked sausage or 1 lb kielbasa, cut into bite size pieces
5 -10 drops liquid smoke (I use it if I think my smoked sausage isn't smokey enough.) (optional)

Steps:

  • Mix the chili sauce, canned crushed pineapple with juice, and the brown sugar together in a large casserole dish (I use the stoneware from my crockpot).
  • Add the bell pepper pieces and smoked sausage.
  • Mix everything together.
  • Bake uncovered at 350 for one hour, stirring occasionally.
  • Enjoy!

1 package (16 ounces) hot lean turkey breakfast sausage
1 large onion, chopped
1 medium green pepper, chopped
1 can (14-1/2 ounces) diced tomatoes with garlic and onion, undrained
1 can (14-1/2 ounces) reduced-sodium chicken broth
3 teaspoons Cajun seasoning
1/4 teaspoon pepper
2 bags boil-in-bag white rice
Louisiana-style hot sauce, optional

Steps:

  • In a large nonstick skillet, cook and crumble sausage with onion and pepper over medium-high heat until no longer pink, 5-7 minutes., Stir in tomatoes, broth, Cajun seasoning, pepper and contents of rice bags; bring to a boil.
