SWEET AND SOUR CABBAGE WITH BACON
A German-inspired side dish. This cabbage is full of sweet, sour, and salty flavors.

Steps:
- Heat oil in a large, heavy pot (I use a Dutch oven) over medium heat. Add bacon and cook until brown and crisp, stirring frequently.
- Use a slotted spoon to transfer bacon to a plate. Add onion and cabbage to pot and cook, stirring often, until cabbage is wilted (about 10 minutes).
- Add vinegar, sugar, and soy sauce and cook until cabbage is crisp-tender, about 10 more minutes.
- Stir in bacon.

- Cook cabbage in 2 cups water in covered pan for 5-8 minutes or until tender; drain.
- Fry bacon. Remove bacon and crumble.
- Add sugar and flour to remaining fat and blend.
- Add water, vinegar, salt and pepper and sliced onion. Cook until thick, stirring occasionally, about 5 minute.
- Add bacon and cabbage and heat through.

My family loves this fried cabbage recipe. I serve it with homemade cornbread. Make a lot, because there will not be any left.

Steps:
- Cook bacon in a skillet over medium heat until crisp, about 5 minutes. Remove bacon and set aside. Add onion and garlic and cook in bacon grease until onion is soft and translucent, about 5 minutes. Stir in cabbage, paprika, sugar, salt, and pepper; mix to combine. Cook for about 10 minutes.
- Stir cooked bacon into the skillet with the cabbage mixture. Simmer over low heat until cabbage reaches the desired consistency, 20 to 30 minutes. Serve hot or warm.
