1 lb cooked pasta (shape of choice)
1 pkg frozen vegetable mix with broccoli (your choice)
2 c cooked, diced meat of choice (leave out if vegetarian)
1 can(s) sliced black olives (optional)
1/2 small onion diced (may be cooked with pasta to remove sharpness)
fresh vegetables of choice to make salad look filled up
shredded cheese to garnish
SALAD DRESSING
1 c each red wine vinegar, sugar and oil of choice (i prefer 1/2 extra virgin olive oil and 1/2 canola)
1 Tbsp mixed italian seasoning
1 tsp each dry mustard, garlic granules, onion powder
1/2 tsp salt (add more to taste)
1/8 tsp black or white pepper

Steps:

  • 1. Cook pasta as directed on package. Right before pasta is finished add frozen mixed vegetables to thaw. (allow for the vegetables to reheat the water until it steams. You just want to thaw them not cook them). Drain and set aside. Dice the fresh vegetables and meat. Add to pasta. Gently toss. Cover and set in refrigerator.
  • 2. While pasta is cooking make dressing. Combine all dressing ingredients in a pint jar with a lid. Place lid on jar and screw down tightly. Shake until the sugar dissolves. Set in the refrigerator to give flavors time to mingle and garlic to soften-about 30 min to an hr. Pour entire contents over chilled pasta. Garnish with shredded cheese of choice. Serve cold.

2 tablespoons sweet plum sauce or duck sauce

2 large oranges
1/2 small red onion, thinly sliced
3 tablespoons sugar
1/4 cup cider vinegar

  • Wrap spinach leaves in paper towels and chill to crisp, at least 1 hour or up to 1 day.
  • Peel oranges and remove the white membrane, then cut fruit segments from inner membranes. Separate onion slices into individual rings.
  • In a small bowl, mix sugar, vinegar, mustard, celery seed, and paprika until sugar dissolves. Add salad oil, whisking until dressing is the consistency of honey.
  • Combine spinach, oranges, and onion in a serving bowl. Pour dressing over salad, then mix lightly to coat, add salt to taste. Serve at once.

½ cup yellow onion, chopped
1 ½ cups white sugar
2 teaspoons dry mustard powder
1 teaspoon kosher salt
2 teaspoons soy sauce
⅔ cup rice vinegar

Steps:

  • Puree the onion in a blender until smooth. Strain through a fine mesh strainer. Reserve 3 tablespoons of onion juice; discard the remaining pulp.
  • Combine the sugar, mustard powder, and salt in the bowl of an electric mixer. Use the paddle attachment to mix the sugar until the spices are evenly blended. Pour in the reserved onion juice, soy sauce, and rice vinegar. Mix for several minutes until the sugar has begun to dissolve. Slowly drizzle in the canola oil with the mixer running at a medium-high speed. Add the toasted sesame seeds and continue mixing 1 minute more.

1 tablespoon olive oil
6 skinless, boneless chicken breast halves
1 cup apricot jam
1 cup Italian-style salad dressing (such as Wishbone®)
½ cup dried minced onion

1 yellow onion, chopped
1 red bell pepper, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until rice is tender and the liquid has been absorbed, 20 to 25 minutes.

1/2 lb. thick-cut bacon, cut crosswise into 1/8-inch strips
1/2 yellow onion, finely minced
1 cup apple cider vinegar
1 cup sugar
1 cup chicken stock
Kosher salt and freshly ground pepper, to taste
3 lb. green beans, trimmed

Steps:

  • Directions: In a large Dutch oven over medium heat, cook the bacon until browned and crispy, 8 to 10 minutes. Transfer to a paper towel-lined plate. Reserve 2 Tbs. of the bacon fat in the pan. Pour the remaining fat into a heatproof container and set aside. Return the pot to medium heat, add the onion and cook, stirring occasionally, until lightly browned, 3 to 4 minutes. Stir in the vinegar and, using a wooden spoon, scrape up the browned bits from the pan bottom. Stir in the sugar, bring to a simmer and cook until the mixture is reduced by half, about 10 minutes. Add the stock and half of the bacon. Simmer over medium heat until the liquid is slightly reduced, about 5 minutes. Add the reserved bacon fat and season with salt and pepper. Add the green beans and bring to a simmer over medium heat, stirring occasionally to coat them with the dressing. Cook until the beans are crisp-tender, about 20 minutes. Remove from the heat and let the beans stand in the dressing for at least 30 minutes or up to 1 hour, stirring occasionally to coat them with the dressing. 2 Tbsp butter
2 Tbsp all purpose flour
1/2 tsp dry mustard
1/4 tsp celery salt
2 Tbsp granulated sugar
1 c pineapple juice
1 large egg,beaten
1 Tbsp lemon juice
2 Tbsp dairy sour cream

Steps:

  • 1. Melt butter in a small heavy bottomed saucepan. Combine flour and seasonings; blend into butter. Add sugar and pineapple juice. Cook over high heat, stirring constantly, until thick and smooth.
