2 English hothouse cucumbers (1 1/2 pounds total), unpeeled, very thinly sliced
1 tablespoon coarse kosher salt
1/2 cup distilled white vinegar
1/4 cup finely chopped fresh dill
3 tablespoons sugar
1/2 teaspoon freshly ground black pepper

Steps:

  • Place cucumber slices in colander. Sprinkle with salt; toss to coat. Let stand 15 minutes, stirring occasionally.
  • Meanwhile, for dressing, stir vinegar, dill, sugar, and pepper in large bowl until sugar is dissolved.
  • Drain cucumbers well; pat dry. Add cucumbers to dressing and stir to blend. Refrigerate at least 15 minutes and up to 2 hours; serve cold.

For pork rub:
1 teaspoon sweet Hungarian paprika
1 teaspoon sugar
1 teaspoon minced garlic
1 teaspoon course ground pepper
½ teaspoon course salt
½ pound pork tenderloin (about 2 inches thick)
2 teaspoons vegetable oil
2 kaiser rolls
For basting sauce:
3 tablespoons red-wine vinegar
3 tablespoons cider vinegar
½ teaspoon dried hot red pepper flakes
2 teaspoons lemon juice
For BBQ sauce:
1 teaspoon peanut oil
2 teaspoons finely chopped shallot
1 teaspoon minced garlic
½ teaspoon dried hot red pepper flakes
1 teaspoon ground cumin
½ teaspoon chili powder
¼ cup plus 1 tablespoon premium beer (not dark)
1 ½ tablespoons sorghum or regular molasses
1 teaspoon tomato paste
½ teaspoon red-wine vinegar
½ teaspoon course salt
For onions and cucumbers:
¼ cucumber
½ small red onion
1 tablespoon red-wine vinegar
½ tablespoon sugar

Steps:

  • Preheat oven to 450F. Make pork rub: 1. In a small bowl with a fork, stir together all pork rub ingredients until well combined. 2. Pat pork dry and press rub into meat (expect uneven clumping) 3. In a nonstick skillet, heat veg. oil over med-high heat until hot but not smoking and brown pork, turning occasionally, about 5 min. 4. Transfer pork to shallow baking pan and roast in middle of oven until 155F (about 15 minutes) 5. Transfer pork to cutting board, let stand 5 min. Toast rolls in oven. Make basting sauce: 1. While pork is roasting, in a bowl stir together all basting sauce ingredients Make BBQ sauce: 1. While pork is roasting, in a small sauce pan heat peanut oil over med-high heat until hot but not smoking and cook shallot, garlic, red pepper flakes, cumin, and chili powder, stirring 2 minutes. 2. Stir in remaining BBQ sauce ingredients, simmer, stirring, 4 minutes or until slightly thickened. Prepare onions and cucumbers: 1. Peel and seed cucumber and cut enough into ¼ inch dice to measure ¼ cup. 2. Thinly slice enough onion to measure ¼ cup 3. In small bowl, stir together cucumber, onion, vinegar, sugar, and salt and pepper to taste. Make Sandwiches: 1. Slice pork an toss with basting sauce. 2. Make sandwiches with rolls, pork, BBQ sauce, and cucumbers

1 3/4 cups white vinegar
1 tablespoon kosher salt
2 tablespoons granulated sugar
1 clove garlic, crushed, plus 2 tablespoons, thinly sliced
2 serrano pepper, seeded, and sliced into half moons
2 English cucumbers, ends trimmed and thinly sliced on a mandoline
1 red onion, peeled and thinly sliced on a mandoline

Steps:

  • In medium saucepan over high heat, combine the vinegar, salt, sugar, the crushed garlic clove and 1 serrano pepper. Bring to a boil, then turn the heat off and allow to cool.
  • Put the cucumbers and red onions in a large, nonmetallic serving bowl with remaining serrano pepper and the thinly sliced garlic and toss to combine.
  • When the vinegar mixture has cooled, strain it into a small bowl and pour it over the vegetables. Stir to coat the vegetables with the vinegar mixture. Cover and refrigerate for at least 1 hour before serving.

1/2 cup scallion, shredded
1/4-1/2 teaspoon Tabasco sauce
3 tablespoons soy sauce (Kikkoman)
2 tablespoons vinegar
2 medium cucumbers, cut into pieces
1 teaspoon sesame oil

Steps:

  • Heat the peanut oil in a wok. Add the scallions and stir briefly. Add the soy sauce, Tabasco, vinegar and a pinch of sugar. Stir and let boil. Add cucumbers and sesame oil. Warning: these can be addictive! Serve these with anything but I think they're especially good with grilled salmon or cold poached salmon for a light summer dinner. Original recipe comes from a June 1981 issue of Bon Appetit in the RSVP section. The recipe was requested from The Voyagers Restaurant in Albany, California. Make this the day before or early in the morning of the day you want to serve them. Note: if using English cucumbers, omit seeding the cucumbers.I've also added thin slices, cut into eighths, of a sweet onion such as the Texas 1015 or Vidalia to the cucumber/vinegar mixture occasionally.

6 -8 cucumbers, peeled
1 teaspoon salt
1 cup white vinegar
3/4 cup sugar (I've used Splenda)
2 teaspoons rice wine
1/4 cup diced fresh dill (optional)

Steps:

  • Halve cucumbers lengthwise and scrape out seeds.
  • Slice cucumbers 1/8-inch thick.
  • Transfer to colander set over a bowl.
  • Sprinkle cucumbers with salt and refrigerate.
  • Combine vinegar, sugar and rice wine vinegar in small saucepan.
  • Bring to a boil, shaking pan gently to dissolve sugar; remove from heat.
  • Cool to room temperature.
  • Transfer to serving bowl and chill thoroughly.

  • Cover and refrigerate at least 8 hours or overnight.

2 telegraph cucumbers (about 600 gms)
3 teaspoons cooking salt
1/2 tablespoon caster sugar
1 tablespoon white wine vinegar
1 teaspoon chili oil (to taste)
sesame oil
toasted sesame seeds

Steps:

  • Remove the wax from the cucumber with a soft brush.
  • Halve the cucumbers lengthwise; remove and discard seeds.
  • Cut the flesh into 2 cm chunks, sprinkle with salt and leave for 45 minutes.
  • Transfer to drain in a colander for 10 minutes.
  • Combine the sugar, vinegar and chilli oil and cucumber.
  • Cover and refrigerate.
  • Serve within 2 days as the cucumbers will lose their colour and crispness.
  • When ready to serve, sprinkle with sesame oil and sesame seeds to taste.
