SOUR PINEAPPLE TIKI COCKTAIL

2 cups fresh grapefruit juice
2 tablespoons maraschino cherry juice, plus maraschino cherries, for garnish, optional
1 pineapple (3 1/2 pounds), peeled, cored and cut into large chunks, plus pineapple wedges, for garnish, optional
1 tablespoon li hing powder, optional
24 ounces seltzer
16 ounces dark rum, optional

Steps:

  • Add the grapefruit juice, maraschino cherry juice, pineapple chunks and li hing powder, if using, to a blender. Blend on high until smooth.
  • Divide the juice among 8 to 10 large glasses and add ice. Divide the seltzer among the glasses. Float with 2 ounces of dark rum if desired. Top with a wedge of pineapple and a maraschino cherry if using.

1/8 teaspoon garlic powder
1 pound cocktail wieners (or little smokies)

Steps:

  • Gather the ingredients.
  • In the slow cooker, combine the ketchup, brown sugar, red wine vinegar, soy sauce, mustard, and garlic powder. Stir to blend the ingredients thoroughly. Cover and cook on high for about 1 hour.
  • Add the hot dogs and stir to coat them. Cover and cook on high for about 1 to 2 hours, or until the hot dogs are piping hot.
  • Turn the setting to low (or warm) and serve them hot from the slow cooker.

1 jar(s) grape jelly, 10 oz.
1 jar(s) chili sauce, 12 oz.
2 Tbsp corn starch

Steps:

  • 1. Slice each hot dog into bite-size pieces. Mix jelly, chili sauce and corn starch in small pan. Stir until corn starch dissolves. Heat on medium heat for 5 minutes, or until sauce boils and thickens, stirring frequently. Place hot dogs in crock pot on low setting, and pour sauce over dogs. Stir occasionally, and keep warm.

Steps:

  • Combine first four ingredients in crockpot; mix well to break up jelly chunks. Cover and cook on HIGH 15-20 minutes to soften jelly and blend sauce ingredients. Cut hot dogs in bite-size pieces and add. Add pineapple. Cover and cook on HIGH for 2 hours; or LOW for 4 hours. Set control to LOW to maintain temperature while serving.

1 pound ground beef
2 tablespoons finely chopped onion
1 large egg, beaten
3 ½ tablespoons cornstarch, divided
¾ teaspoon salt
1 dash ground black pepper
1 tablespoon vegetable oil
1 (8 ounce) can pineapple chunks, undrained
1 cup pineapple juice, or as needed
¾ cup white sugar
½ cup water
1 tablespoon water
¼ cup white vinegar
2 tablespoons white vinegar
1 ½ tablespoons soy sauce
2 green bell peppers, cut into thin strips
2 cups hot cooked white rice

Steps:

  • Combine ground beef, onion, egg, 1 tablespoon cornstarch, salt, and pepper in a bowl. Use a cookie scoop to shape into meatballs.
  • Heat oil in a large skillet over medium heat. Add meatballs and cook, turning often, until browned and no longer pink in the centers, 7 to 10 minutes. Remove meatballs from the skillet and drain oil, reserving 1 1/2 tablespoons of drippings.
  • Drain pineapple chunks from the can, reserving juice; set pineapple aside. Add enough additional pineapple juice to make 1 1/2 cups total.
