GERMAN-STYLE SWEET AND SOUR RED CABBAGE SOUP



German-Style Sweet and Sour Red Cabbage Soup image

1 tablespoon extra-virgin olive oil
6 slices good quality smoky bacon, chopped or very thinly sliced across
1 large onion, finely chopped
1 large carrot, peeled and finely chopped
1 1/2 teaspoons caraway or cumin seed
1 Braeburn, Northern Spy apple or other firm slightly tart variety, finely chopped
1 small red cabbage, quartered, cored and very thinly sliced (about 1 1/2 pounds)
Freshly ground black pepper
Freshly grated nutmeg
5 to 6 juniper berries
3 to 4 whole cloves
2 fresh bay leaves
Curl orange rind
1 small cinnamon stick
1/4 cup cider vinegar or wine vinegar
2 rounded tablespoons dark brown sugar
6 cups chicken stock
Kosher salt
Special equipment: Kitchen twine

Steps:

  • Serve with grilled Swiss or extra-sharp white Cheddar cheese on pumpernickel or whole grain bread.;
  • Heat a large Dutch oven or soup pot over medium-high heat. Add 1 tablespoon extra-virgin olive oil, and bacon. Brown and crisp bacon and remove to a plate, draining off some fat if you have more than enough to lightly coat the bottom of the pot.
  • Add the onions, carrots, caraway, and apples, and stir a few minutes. Then wilt in the cabbage and season with black pepper and some freshly grated nutmeg. Cover with the lid slightly ajar and wilt cabbage while you prepare the sachet. Fill the cheesecloth with the juniper berries, cloves, bay leaves, orange rind, and cinnamon, and use kitchen twine to tie it to the side of the pot. Drop it into the pot and stir into the cabbage. Add the vinegar, keeping your head back from the hot pot, brown sugar, stock, and water, and bring the soup to a boil. Reduce heat and simmer 1 to 1 1/2 hours, until cabbage is very tender and soup has thickened. Stir the bacon bits back in, then adjust the salt to your taste.
  • Cool and store for a make-ahead meal, or serve with grilled cheese sandwiches.

My version of an old favorite Ashkenazi Jewish recipe. I make a stock first, then make the soup. This allows for de-fatting for a healthier soup, but you need to make this on two days, so time accordingly. For a healthier version, use sucralose instead of sugar - there is virtually no taste difference in sweet and sour recipes such as this one. Using Savoy cabbage gives the soup superlative texture and flavor.

4 pounds bone-in beef shank
12 cups water
3 carrots, peeled and cut into 3-inch pieces
3 onions, peeled
4 stalks celery with leaves
1 bay leaf
16 peppercorns
2 tablespoons vegetable oil
1 onion, peeled and diced
2 cloves garlic, minced
1 tablespoon sweet Hungarian paprika
1 head Savoy cabbage, coarsely chopped
1 (14.5 ounce) can diced tomatoes with juice
1 lemon, juiced
¼ cup white sugar
¼ cup chopped fresh dill
salt and freshly ground black pepper to taste

Steps:

  • Combine the beef shanks and water in a large stock pot. Bring to a boil and reduce the heat to a very low simmer. Use a strainer to skim off any foam on the surface. Add the carrot pieces, whole onions, celery stalks, bay leaf, and peppercorns. Simmer for 4 hours, skimming the surface occasionally.
  • Strain the stock. Discard the vegetables but reserve the meat. Allow the stock to cool to room temperature, then transfer to a covered container and refrigerate overnight. When the beef shanks are cool, remove the meat from the bones. Discard bones and gristle. Dice the meat and any remaining marrow into small cubes. Cover the container and refrigerate overnight.
  • The next day, heat the vegetable oil in a stock pot or Dutch oven over medium heat. Stir in the garlic and 1 diced onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the paprika and cook 1 additional minute, stirring constantly. Gradually add the cabbage and cook, stirring occasionally, until slightly wilted and reduced in bulk, about 8 minutes.
  • Remove the beef stock from the refrigerator; skim and discard any fat. Pour the stock into the pot; stir in the reserved chopped beef. Add the tomatoes with their juice. Bring the soup to a boil, and then reduce the heat to a simmer. Cook the soup, partially covered, until the cabbage is quite soft, about 1 hour.
  • Stir in the lemon juice, sugar, dill, salt, and pepper. Add more water, if desired, for a thinner soup. Cook for 5 minutes, uncovered. Taste and adjust the seasonings before serving.

1 1/2 lbs short rib of beef
1 head cabbage, cut into 1-inch pieces (about 3 pounds)

  • Boil meat in water using a stainless steel or enameled kettle. Skim froth as it rises; then simmer for 1 hour, Transfer meat with a slotted spoon to a cutting board and trim away bones and fat. Skim fat off broth.
  • Cube meat into small pieces then add back to broth. Add remaining ingredients and simmer for 30 to 60 minutes.

  • Heat the oil in a 4-quart pot over medium-high heat. When hot, add the onion. Cook, stirring often, until softened, about 5 minutes. 2 can(s) diced tomatoes with juice (14.5 oz)
1 can(s) tomato sauce (8 oz)
2 c baby carrots, halved
1 medium onion
1/2 c white vinegar
1/2 c white sugar
1 1/2 tsp salt
1/2 tsp ground black pepper
2 qt water or vegetable broth
3 Tbsp minced garlic
1 medium cabbage head

Steps:

  • 1. In a large crock pot or stock pot add all of the ingredients, except for the cabbage. Note that if you less of a tang to your soup, adjust the vinegar from ½ a cup to 1/3 of a cup. If you want a sweeter soup, just increase the measurement by a tablespoon at a time and taste test it until satisfied. Start heating all the ingredients on high if cooking in a crock pot and over medium heat if cooking on the stove top.
  • 2. Core the head of cabbage. Cut into quarters and slice the quarters into one inch segments, keeping the shape of the wedge. Then cut the wedge in the other direction so that you end up with spoon sized pieces of cabbage. Add the cut cabbage to the broth, working the cabbage down into the pot as much as possible.
  • 3. Cook until cabbage is soft. I cooked mine in the crock pot for six hours on the high setting. Four probably would have been enough, but you can try it and judge for yourself. If cooking on the stove top, this should be about an hour and a half to two hours over medium heat.

2 tablespoons minced garlic
1 cup finely chopped onion
6 cups vegetable broth
1 cup peeled thinly sliced carrot
1 (28 ounce) can plum tomatoes in puree
1 cup tomato paste
1/2 cup tomato ketchup
1/4-1/2 cup dark brown sugar (to taste or can omit)
1 bay leaf
1/2 cup lemon juice
3 lbs cabbage, sliced into 1/4-inch-wide ribbons
1/2 cup golden raisin
sour cream (can use vegan) or Greek yogurt (can use vegan)

Steps:

  • Heat oil in a large pot over medium heat; add garlic and cook until soft.
  • Add the onion and sauté until transluscent.
  • Add 3 c vegetable broth, carrots, tomatoes and purée, tomato paste, ketchup, sugar and the bay leaf.
  • Bring to a boil then reduce to a simmer and cook for 10 minutes.
  • Crush the whole tomatoes and continue to simmer until carrots are tender (10 more minutes).
  • Discard bay leaf and, using an immersion blender, blend until slightly chunky (this step is not necessary, texture is good).
  • Add lemon juice and cabbage and remaining 3 cups vegetable broth (there will be a LOT of cabbage, but it will cook down).
  • Again, bring to a boil, then reduce heat and simmer until the cabbage is done however you like it (1 hour for al dente,2 hours for soft, or anywhere in between).
  • Add 3-6 cups water, until the soup reaches your desired consistency.
  • Add the raisins 10 minutes before serving.
  • Season with salt and pepper.
  • Serve with sour cream.

1 lb ground beef
1 1/2 tsp caraway seeds
1 tsp thyme, dried
2 1/2 c chopped bell pepper and onions
1 medium apple, diced with skins on
6 c beef broth
1 can(s) crushed tomatoes
1 1/2 Tbsp sugar
1 Tbsp paprika
3 c cabbage, chopped
1 Tbsp cider vinegar
1/4 tsp salt
pepper, to taste

Steps:

  • 1. Heat oil on Med-High in a lg stock pot.
  • 2. Brown ground beef with caraway seeds and thyme.
  • 3. Stir in bell peppers, onions and apples cooking for 2-3 min.
  • 4. Add broth, tomatoes, sugar and paprika. Simmer for 10 min.
  • 5. Add cabbage and cook for 3-4 min.
  • 6. Turn off the heat and add the vinegar. Add salt and pepper to taste.

This soup is simple and cheap to make, and a favorite comfort food in my family. My mother got the recipe from a former employer and friend, and passed it along to me. It is not a highly flavored soup, so feel free to add extra seasoning if you are eating it as a main dish. The cracked black pepper and fresh lemon juice are important to the flavor of the dish. I usually add extra raisins because I like them so well.

1 lb lean ground beef
1 medium onion, chopped
1/2 cabbage, thinly sliced
1 (15 ounce) can stewed tomatoes
4 cups water
2 tablespoons fresh lemon juice
2 tablespoons honey
1/4 cup golden raisin
1/2 teaspoon salt (to taste)
1/2 teaspoon black pepper, coarsly ground

Steps:

  • Brown the beef in in large dutch oven or stock pot over medium high heat.
  • After a few minutes, add the onion, and continue cooking until the onions are transparent, and most of the pink is gone from the meat, about 10 minutes total.
  • Drain any excess grease from the meat and onions, and return to the pan.
  • Add the cabbage and 1/4 cup of the water, cover, and cook over medium heat until the cabbage is limp and getting tender, but still holds its shape, stirring occasionally, about 15 minutes.
  • Add the remaining ingredients, and simmer until the vegetables in the soup are as tender as you would like, about 30 minutes.
  • Serve with additional lemon juice and fresh ground pepper, to taste.
  • Like many soups, this is much better the second day after the flavors have a chance to blend.

1 qt chicken broth or 1 qt equiv of dry bouillon
1 qt additional equiv of dry chicken bouillon
1 qt equiv dry beef bouillon
1 lb shredded beef or Steakums
2 lg cans of petite diced tomatoes with liquid
4 oz (1/2 cup) ketchup
6 cloves of sliced garlic
1/2 cup of white vinegar
1/2 cup of sugar
salt and red pepper to taste
water

Steps:

  • 1. In a 8-qt pot, saute onion in margarine over medium to high heat. Add cabbage and saute with onions until translucent, about 5 minutes total, stirring occasionally. 2. Add canned tomatoes, chicken broth, and chicken and beef bouillon. Stir. Add ketchup, garlic, vinegar and sugar. Add water to cover ingredients to about 1 inch from top of pot. Add beef and stir. Once boils, lower to simmer. Add salt and red pepper to taste. Makes about 12 servings.

1 Jar Red Cabbage (Sweet and Sour)
1 Small Can Sauer Kraut
1 large can whole tomatoes
1 piece of Chuck Roast (about 3 lbs cut into large chunks)
1/2 tsp Citric Acid Salt (Sour salt)
Can be found in the Jewish (Ethnic) food aisle in a bottle about the size and shape of a lemon pepper seasoning bottle
About 1/4 cup sugar (to taste)

Steps:

  • In Dutch Oven, add meat, beets, cabbage, canned tomatoes. sour salt and sugar. Fill with water that you have gotten from swishing out the jars and tomato can. Bring to boil, then cover and simmer for 1-1/2 hour. Then add kraut, mix well and taste-you will probably want to add sugar by the tablespoonful. Simmer for another 1 hour. The meat can be served separately with horseradish. As with all soups, it always is better reheated especially if you freeze some of it. After refrigerating, remove any fat on top.

1 quart light beef broth
1 quart water
2 onions, diced
3 cups tinned tomatoes, finely chopped, with their juice
1 cup tomato sauce
2 pounds cabbage, coarsely shredded or very thinly sliced
1 teaspoon sour salt
1/2 teaspoon freshly ground black pepper, or to taste
2 tablespoons sugar
3 tablespoons golden raisins

Steps:

  • Combine the top rib, broth, and water in a 10-quart soup pot or kettle. Bring to a boil over moderate heat and skim off the gray residue for 5 minutes, or until every last bit of residue has been cleaned off the top. Add the onions, tomatoes, tomato sauce, cabbage, sour salt, black pepper, and sugar. Bring to a boil, stirring occasionally, then cover and simmer 3 hours, until the meat is very tender. Stir in the raisins, set the lid to the pot slightly askew, and simmer 20 minutes. Taste, correct the seasoning, adding additional salt and pepper as necessary. Serve the soup with boiled potatoes, a side of meat accompanied by a good strong horseradish, and dark bread.

3 tablespoons olive oil
1 large onion, chopped
2 garlic cloves, minced
1 teaspoon crushed red pepper flakes
1/4 cup balsamic vinegar
2 tablespoons brown sugar
6 cups finely sliced red cabbage
1 cup chopped and drained plum tomatoes from a can
6 cups chicken stock
Salt and freshly ground black pepper
1/4 cup finely chopped fresh parsley
Sour cream and finely chopped fresh chives, as accompaniments

Steps:

  • In a large heavy pot heat olive oil over moderate heat and cook the onions until translucent. Add the minced garlic and crushed red pepper flakes and cook, stirring, for 1 minute. Stir in the balsamic vinegar and the brown sugar and bring to a simmer. Add the cabbage and stir to combine. Add the tomatoes and the chicken stock and bring to a simmer. Season with salt and pepper, to taste. Simmer the soup, uncovered, for 30 to 40 minutes until the cabbage is very tender. Taste soup and adjust seasoning with more balsamic vinegar, brown sugar, salt and/or pepper. Stir in parsley. Serve hot with a dollop of sour cream and chives.

Weight Watcher's Cabbage Soup - Sweet and Sour image

This was originally a WW recipe, from, I am guessing, the early 70s. I am pretty sure it has been altered somewhat, but it is super-easy and very tasty. We make it often in spite of its low calorie/low fat attributes ;-). My Nana always had a pot of it on the back burner because it was a "free" food, and boy, did the house smell good! Makes lots, but freezes well, also.

1 medium head of cabbage
6 large celery ribs
1 lb carrot
4 onions
2 (28 ounce) cans tomatoes with juice
1 (46 ounce) can tomato juice (or V8)
6 -8 beef bouillon cubes
1 teaspoon citric acid (sour salt)
4 (1 g) packets Sweet 'n Low or 4 (1 g) packets another sweetener
black pepper
salt, if desired (optional)

Steps:

  • Cut up all the veggies, put everything in a very large pot, cover with water, and cook at least 3 hours, until everything is very soft.
  • Taste for seasoning - judge sour and sweet separately to see weather to add more citric acid or sweetener. I usually do add plenty more of each, until it is delicious.
  • Notes:.
  • Don't even bother cutting the core out of the cabbage - it cooks down with everything else and will be delicious. Really.
  • Measurements can be approximate. Feel free to adjust for what you like or have on hand. I know I always have a glass of the juice before pouring it into the pot ;-) Speaking of the juice, I don't remember it being part of the original recipe, but I always add it for tomatoey taste and body.
  • Sometimes, my Nana added green peppers. Her recipe also mentioned to serve with "rice and veal balls", although I don't actually remember her doing this. What could be bad?.
  • When I am not on a diet, I add brown sugar instead of the sweet-and-low.
  • Oops - I Totally had to Estimate how many servings. But this does mostly fill my 10 quart pot, and then cook off a little, so I will est. 18 servings - your mileage will vary;-).
