These savory mashed sweet potatoes are ready in less than 25 minutes, making them a great addition to your weeknight routine, or a last-minute party or potluck side. Naturally sweet on their own, sweet potatoes pair perfectly with savory flavors such as chopped fresh thyme, salt, and pepper. Serve these mashed sweet potatoes as a side to proteins such as chicken, turkey, or pork, and you've got an easy meal ready in a flash. Also, unlike sweet potato casseroles, or buttery mashed potatoes, this side gives you all the comfort without all the calories. You can enjoy this creamy side for less than 205 calories per serving and pack in 4 grams of fiber.

1 1/2 pounds sweet potatoes, peeled and cubed
1 1/2 tablespoons butter
1 tablespoon extra-virgin olive oil
2 teaspoons finely chopped fresh thyme, plus leaves for garnish
1/4 cup 1% low-fat milk
1/2 teaspoon kosher salt
3/8 teaspoon black pepper

Steps:

  • Place sweet potatoes in a large saucepan; cover with water to 2 inches above potatoes. Bring to a boil over high; reduce heat to medium-low, and simmer until tender, about 18 minutes. Remove from heat. Drain and return potatoes to saucepan.
  • Combine butter and olive oil in a small skillet over medium; cook until browned and fragrant, about 3 minutes. Remove from heat; stir in thyme.
  • Add milk, salt, and pepper to sweet potatoes; mash with a potato masher to desired consistency. Drizzle with butter mixture; gently stir once or twice. Garnish with thyme leaves.

3 large garlic cloves
1 tablespoon unsalted butter
2 tablespoons olive oil
1 1/2 lbs sweet potatoes
1 (10 3/4 ounce) can condensed golden mushroom soup
1 (10 3/4 ounce) can French onion soup
1 (10 3/4 ounce) can cheddar cheese soup
1 cup water
2 cups slides white button mushrooms
1 cup chicken broth
4 tablespoons unsalted butter

Steps:

  • Preheat oven to 400F.
  • Cut sweet potatoes into 2 inch pieces. You can choose to peel yours, but I like the flavor and left mine on.
  • In a large bowl, combine potatoes and peeled garlic with olive oil. Stir to coat evenly. There is no need to chop the garlic.
  • Place on a foil lined rimmed cookie sheet and bake for 30-35 minutes.
  • While it's baking, combine the three soups and water.
  • Saute mushrooms in 1 Tbsp of butter until golden brown and most of the water has cooked off. Combine with gravy mixture.
  • When potatoes and garlic are soft, transfer to a stand mixer or large bowl. Mix with 4 tbsp of butter and chicken broth. Add salt and pepper to taste.
  • Pour gravy over potatoes and enjoy!

3 1/2 lbs baking potatoes, peeled and cut into 1 inch pieces
1 tablespoon salt, divided
1 (29 ounce) can sweet potatoes in syrup, drained and mashed
1 (8 ounce) package reduced-fat cream cheese, softened
6 slices bacon, cooked and crumbled
3/4 cup light sour cream
2/3 cup chicken broth
1/2 teaspoon pepper

Steps:

  • Bring potatoes, 1 teaspoon salt and water to to cover to a boil in a Dutch oven; cook 30 minutes or until tender.
  • Drain.
  • Return potatoes to Dutch oven.
  • Add sweet potatoes and cream cheese; mash untl smooth with a potato masher.
  • Stir in bacon, next 3 ingredients and remaining 2 teaspoons salt.
  • Spoon mixture into a lightly greased 11-x7-inch baking dish.
  • Bake, uncovered, at 350°F for 20 minutes.
  • Garnish with crumbled bacon, if desired.
