SWEDISH TEA RING
This is a hand-shaped, filled yeast bread that my 2-year-old daughter loves to help prepare. The dough can be made ahead and refrigerated, then baked in the morning. Sprinkle chopped, toasted almonds over the ring if you wish. Nuts can also be added to the filling along with the raisins.

Steps:
- In a bread machine, put milk, egg, butter, sugar, salt, bread flour, and yeast in the order suggested by the manufacturer. Select the Dough cycle and press Start. When dough is mixed, transfer to a greased bowl; cover with plastic wrap and let rise until doubled, about 1 to 1 1/2 hours.
- Grease 2 baking sheets or line them with parchment paper; set aside.
- Divide dough in half. Roll each piece out into rectangles about 12x16 inches. Spread each dough rectangle with 1 tablespoon softened butter. In a small bowl, combine 2 teaspoons ground cinnamon, 3/4 cup light brown sugar, and 1/2 cup raisins.
- Sprinkle cinnamon mixture onto buttered dough. Roll them up jelly-roll fashion, along long side. Pinch edges to seal. Stretch and twist into rings, pinching ends to seal. Place them seam-side down onto prepared baking sheets. Using clean scissors, cut 2/3 way of the way through the loaf at about 1-inch intervals. Spread each cut slightly. you wish to

- Alternately, cover each ring with a clean towel or greased plastic wrap and let loaves rise until double, about 40 minutes.
- Arrange two oven racks so that both baking sheets will fit. Preheat oven to 350 degrees F (175 degrees C).
- Bake for 10 minutes in preheated; rotate baking sheets. Bake until rings are light brown and the filling is oozing and bubbling, about 10 minutes more.
- In a small mixing bowl, combine confectioners sugar, almond extract, and milk until icing is desired consistency. Drizzle icing over warm pastries.

- In a large bowl, dissolve yeast in warm water. Add the sugar, oil, egg whites, salt and 1 cup flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a lightly floured surface; knead until smooth, about 6-8 minutes. These are made like cinnamon rolls; however, you make a circle with the dough log and cut only part way through, turning each piece partially on its side to make a beautiful design.

- In a small bowl, dissolve yeast in the warm water and let stand until creamy, about 15 minutes. Zest and juice the lemon; set juice aside for later use.
- In a large mixing bowl, combine the yeast mixture, milk, butter, salt, sugar, eggs, lemon zest, and 2 cups of the flour. Stir until smooth and well combined. Mix in the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has come together, turn it out onto a lightly floured surface and knead until smooth and satiny; about 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume; about 1 hour.
- Punch down the dough and turn out onto a lightly floured surface. Roll the dough out into a rectangle approximately 12x24 inches.
- In a small bowl, mix together the cinnamon, 1/4 cup sugar and pecans; spread this mixture evenly across the dough. Roll the dough into a long roll and press the seam closed. With the seam turned downward, seal the two ends together to make a ring. Use a little water to help you seal the ends.
- Place the ring on a lightly greased cookie pan. Using a sharp knife or kitchen shears, make cuts every inch or so along the ring, cutting only three quarters of the way through. Twist each piece slightly so that the rolls fan out from the center of the ring. Cover the roll with greased plastic wrap and let rise in a warm place until nearly doubled in volume, about 1 hour.
- Preheat oven to 375 degrees F (190 degrees C).
- Bake until golden brown, 25 to 30 minutes. Remove the ring from the oven, place on a rack to cool.
- Place the lemon juice in a small bowl along with the vanilla. Add 1/4 cup of powdered sugar and stir until the sugar is dissolved. Continue adding powdered sugar, 1 tablespoon at a time, until the mixture is fairly thick but still pourable. Drizzle the lemon-sugar topping over the ring.

- Warm a teapot by rinsing with hot tap water. Place ginger, cinnamon, and cloves into the warmed pot, and cover with boiling water. Steep for 5 minutes. Strain and allow to cool. Add honey and serve.

- Dissolve yeast in warm water until dissolved.
- Add next three ingredients and beat well.
- Add egg and lard then stir.
- Mix in 3 1/2 cups of flour.
- Gradually add the rest of the flour until dough is easy to handle.
- Place in large bowl.
- Grease top of dough and cover.
- Refrigerate until double.
- (May be left overnight and used early the next morning).
- Preheat oven to 375 degrees F.
- Punch down dough.
- Roll out 1/2 the dough into an oblong and butter well.
- Sprinkle w/ sugar and spice mix.
- Add fruit layer if you like.
- Roll up as a jellyroll.
- Place on large baking sheet and join ends together to form circle of dough.
- Using kitchen scissors, snip 2/3 way thru in 1 inch intervals.
- Turn sections until one sections lays on top of the next completing the ring.
- Let raise until double.
- Bake until 30 minutes or so until done.
- Using spatulas remove ring to seving plate while it is still very warm.
- Pour confectioners sugar glaze over warm ring and decorate w/ nuts, cherries etc.
FRUITED SWEDISH TEA RING

- Dissolve yeast in lukewarm water.
- Combine milk, butter, eggs, salt, and sugar in the bowl of a stand mixer; stir in yeast mixture.
- Gradually stir in flour at speed setting 2 or 3 until dough is slightly stiff and pulls away from the sides of the bowl; replace paddle with dough hook and knead at speed setting 2 or 3 for seven minutes.
- After kneading, place dough in a greased bowl, cover with cling wrap, and allow to rise for 1 hour in a warmed oven (set at about 200 F then turned off).
- After dough has risen, punch down and divide in half. Use a rolling pin to form each half into an 8"x14" rectangle. Spread 3 tablespoons of lemon curd on each half; divide the candied lemon peel, citron, and pecans evenly and sprinkle over top of the lemon curd.
- Starting at the wide side, tightly roll each rectangle into a cylinder. Pinch together seams, then shape roll into a circle, pinching together the two ends.
- Place rings on lightly greased baking sheets, seam down. With scissors or a sharp knife, cut down 2/3rd through each ring at 1-inch intervals. Gently pull and twist each section outward so that it lays on its side but is still connected to the ring. Allow to rise for an additional hour in warmed oven until doubled.

- Preheat your oven to 325 F.
- Cream margarine and brown sugar in a large bowl. Add egg yolk and beat well.
- Combine flour, baking powder, and salt in a small bowl. Add to margarine mixture, stirring until stiff dough forms. Roll dough into balls, using 2 tsp for each.
- Dip balls into egg white, then roll in nuts. Arrange balls, about 2 inches apart, ona greased cookie sheet. Dent each one with your thumb.
- Bake for 5 minutes, then remove from oven and press dents again. Bake for 10 to 15 minutes until golden. Let stand on cookie sheets for 5 minutes before moving to wire racks.

- Preheat oven to 375 degrees F (190 degrees C).
- Cut 1 cup of the butter into the flour until the mixture resembles coarse crumbs. Stir in the cream and form the dough into a ball.
- Roll dough out 1/2 inch thick and cut with a small round cutter. Roll cut circles in granulated sugar and place on ungreased cookies sheets. Prick cookies a few times with a fork.

- 1. In a saucepan, heat the milk and water just until warm (or at 80°F). Add the yeast and 1 Tbsp of the sugar, and stir until the yeast is dissolved.
- 2. Pour the yeast mixture into a large mixing bowl, and add 2 cups flour. Mix until dough is smooth and well blended. Stir in the butter, remaining sugar, eggs, salt and cardamom. Stir in 2 more cups of flour, and mix until a crumbly dough forms. Turn dough onto a floured surface, and knead about 5 minutes or until dough is smooth and elastic (easily springs back when you pinch a portion of dough and pull it toward you). Add more flour if needed to keep dough from sticking to your work surface. After kneading, the dough should be soft, supple and retain its shape when you form it into a ball. (If dough sinks or flattens, it needs more kneading.)
- 3. Place dough in a greased bowl, cover, and let rise in a warm location for about 60 to 90 minutes, or until doubled in size.
- 4. Punch dough down, and divide into two portions. Set half of the dough aside.
- 5. Roll one dough half into a rectangle about 18x10-inches in size. In a small bowl, stir together 1 tablespoon of the melted butter and the almond extract. Brush the almond butter on the pastry surface. Combine the sugar and chopped almonds, and sprinkle it evenly over the butter layer.
- 6. Preheat oven to 375°F. Lightly butter two small baking sheets; set aside.
- 7. Roll the wide edge of the dough like a jelly roll (it should be about 18 inches in length). Place the rolled log on one of the baking sheets. Bring the ends together to form a ring, and pinch ends together to seal. Cut dough at about 1 inch intervals about 3/4 of the way through (being careful not to cut it into slices). Repeat with remaining dough half. Set aside for 1 hour to let the tea rings double in size.
- 8. Mix the egg and water, and brush the tops of the dough with the egg wash.
- 9. Place baking sheets in the oven and bake 25 to 30 minutes.
- 10. Whisk the butter, powdered sugar, vanilla extract and 1 tablespoon milk until smooth but still thin. If needed for consistency, add more milk a little at a time and keep whisking until glaze is thin and smooth. Drizzle a thin line of the glaze over the top of the tea rings. Slice and serve while still warm.

- Dough: Combine ingredients in bread machine, set on manual - white bread. Add milk as needed to make moderately stiff dough through mixing. After the first rise, remove from machine and roll out to 12" x 18" rectangle on lightly greased surface. Dough will be elastic and require much rolling and resting to hold shape. Apply filling as directed below leaving 3/4" uncovered along one long edge. Carefully roll the dough along the long side, rolling toward the edge without filling. Pinch edge to seal. If roll is uneven in thickness or too short, gently roll out to proper length and even diameter. Bring ends together to form a ring - sealing ends is not critical but if there is excess uneven dough at an end snip it off with scissors. Place ring on parchment paper. Taking scissors, cut through the roll every 1 to 2 inches around the perimeter, leaving about 1/3 of the roll uncut at the center. Twist 'slices' sideways like dominoes that have fallen. Cover and let rise 1 hour. Cinnamon Filling: Combine sugar, cinnamon and melted butter just before applying to dough. Sprinkle with chopped walnuts. Almond Filling: Brush with melted butter and crumble almond paste onto rectangle and sprinkle with sugar and sliced almonds. Preheat oven to 375 degrees. Slide ring with parchment onto baking stone in the oven and bake for 10 minutes. Place foil loosely over ring and continue baking for another 10 minutes. After cooling drizzle sugar glaze over ring.

- Dissolve yeast in warm milk and let sit for 5 minutes until frothy. Meanwhile, put flour, 1/4 cup sugar and salt into a large mixing bowl and cut in 1 cup butter until particles are fine. Add 1/2 cup cream, eggs, softened yeast and currants; mix well. Cover and chill at least 2 hours.
- For filling: cream 1/2 cup butter and brown sugar until smooth. Stir in pecans and set aside.
- Divide dough into 6 parts. Roll out each part on floured surface to a 12x6" rectangle and spread each with 1/6 of the pecan filling. Roll up, starting with 12" side, pinching dough to seal. Place in a crescent shape on foil-lined or parchment-lined cookie sheets, seam side down. Make cuts along outside edge of crescent, 1" apart, to within 1/2" of other side. Turn cut pieces on their sides, twisting the dough slightly. Repeat with remaining dough to make six tea cakes. (Three cakes may fit on one cookie sheet.).
- Let rise in warm place until light, about 45 minutes. You can also, at this point, refrigerate the tea cakes, covered, overnight. Then bake as directed in the morning, adding 5-10 minutes to baking time. Bake at 350 degrees for 20-25 minutes until golden brown. Carefully remove from cookie sheets to wire racks using 2 spatulas and frost while warm.
- For frosting, heat 1/2 cup butter in heavy saucepan. Watching carefully, cook butter until it just begins to turn light brown. It burns very easily, so don't leave the stove during this step! Beat in powdered sugar, vanilla, and enough cream for desired spreading consistency. Frost tea cakes.

- Stir in cream until combined.
- Turn out onto a lightly floured surface.
- Roll to 1/8 inch thickness.
- Cut into circles using a 2 inch round cookie cutter.

- Combine milk, sugar, eggs, salt, butter, and cardamon in a large bowl.
- Dissolve yeast in 1 cup warm water (105 to 115 degrees) and stir in brown sugar.
- Add yeast mixture to milk mixture. Gradually add flour, using a dough hook on an electric mixer or wooden spoon. Add enough additional flour to form a soft dough.
- Place in greased bowl and let rise until doubled, about 45 minutes.
- Divide dough in half, rolling each half into an 18x12 inch rectangle.
- Filling:.

- 1. Sprinkle yeast into mixture. stir until yeast is dissolved Stir in eggs and shortening.
- 2. Mix in first with spoon then with hand. Add flour in two additions, using the amount necessary to make it easy to handle.
- 3. Let rise in a warm, covered place until doubled in size. Punch down and let rise again, at least an hour maybe two. then roll out into a 9 by 18 inch rectangle.
- 4. Spread with softened butter and sprinkle with 1/2 cup sugar and 2 teaspoons cinnamon. Sprinkle with raisins. Roll up tightly, beginning at wide side. SEAL BY PINCHING EDGES OF ROLL TOGETHER.
- 5. Place sealed-side down in ring on lightly greased baking sheet. Join ends of ring , seal
- 6. With scissors, make cuts 2/3of the way through the ring, at 1 inch intervals. Turn each section on its side making a wreath shape. Let rise and bake at 375 degrees for 25 to 30 minutes.
- 7. Drizzle with a thin, powdered sugar icing and decorate with cherries and nuts.

- Preheat oven to 375 degrees. Cream butter and sugar until fluffy. Beat in the eggs and egg yolks and the extracts. Add sifted dry ingredients mix well. Chill in frig for about 30 minutes. Now roll out small amounts of dough in about 1 inch thick rope and cut in 2 1/2 to 3 inch long pieces. Place on cookie sheet brush top of cookie with egg white and top with chopped almonds and sprinkle with sugar. Bake @375 degrees for 10 minutes, cool on wire rack.

- Cool to lukewarm (tip: be patient and make sure to cool it or you'll kill the yeast and/or cook the eggs, neither are good). Put water in a large bowl, sprinkle yeast on top. We did this in a small bowl and then remembered it should have been in the large bowl, so had to pour it over.
- Add milk and mix. Beat 2 eggs.And mix.
- Add 2 cups of flour.
- Beat until smooth. Stir in remaining flour one cup at a time.
- When it begins to form a ball like so...
- Put it onto a floured surface and knead for 10 minutes.
- Place in a greased bowl, turn over once.
- Cover with a wet towel. Rest 1-1/2 hours until doubled in size.
- Punch down. Roll into a 14″ x 18″ rectangle.
- Brush with melted butter. Mix the topping - sugar, cinnamon, and nuts or raisins. Sprinkle with the sugar. And the nuts or raisins, really as much or as little as you'd like.
- Roll up from one end. Bend into a circle and tuck ends together best you can.
- Snip every inch 2/3 the way...
- ...and twist open.
- Lay a towel on top and allow to double in size. We usually let it go overnight but if you live in a warmer climate that may be too long.
- Bake 25-30 minutes in a 350 degree oven. Make frosting and top with cherries.
SWEDISH TEA RING
Swedish Tea Rings are a delicious and different take on the classic cinnamon rolls or danish. It is full of dried fruit and nuts and covered in a sweet almond glaze. It looks beautiful on a Christmas breakfast table and also makes a delicious all day Christmas treat. The yeasty bread requires a dough which takes a while to rise, but the finished product is so worth it! This recipe makes a large amount of dough. You make make 2-3 tea rings, depending on the size that you make them. It's definitely worth it to make a large batch, because it is time consuming and they will go fast!

- Heat the milk, butter and sugar in a saucepan over medium heat. Just let it simmer, not boil. Remove from the heat and let it cool to lukewarm. This may take ten minutes or so. You can transfer it to the fridge in another bowl if you need to speed up the process!
- Pour the yeast over the top of the milk mixture and then stir to combine. Add about 7 cups of the flour and stir together gently. cover with a towel and put it in a warm place to rise for about 1 hour.
- Add the rest of the flour and the baking powder and stir to combine. Divide the dough into two or three large pieces. Roll out one piece at a time into a large rectangle. Leave it relatively thick, about 1/2 inch. Make sure the rectangle is long, width-wise. Think hot dog, not hamburger.
- Pour about 3/4 cup of butter over the dough and sprinkle about half the cinnamon and sugar over the top. Sprinkle with half of the dried fruits and chopped pecans.
- Roll the dough away from you in a tight roll until it is completely rolled up. Pinch the seam together and then cut into 2 inch slices. Bring the two ends of the the roll together and pinch them together. Gently transfer onto a parchment lined baking sheet. Cut large slits 3/4 of the way through the dough, make about 10 cuts. Turn each cut section onto its side.
- Brush the top of the ring with melted butter and cover gently with a cloth. Repeat with the rest of the dough. Let it rise for about 30 minutes. While it is rising, preheat the oven to 375 F. Bake rolls for about 25 minutes, do not over bake. They should be lightly brown and slightly firm to the touch. Tent with some foil if it is browning too quickly.
- Whisk together the powdered sugar, milk, almond extract, and vanilla extract. If it is too thick add a little more milk, if it is too thin add a little more powdered sugar. Remove rings from the oven and if you can manage let them cool a bit and then drizzle icing over the top, slice and serve!
SWEDISH TEA COOKIES

- Preheat oven to 375 degrees F (190 degrees C).
- Cut 1 cup of the butter into the flour until the mixture resembles coarse crumbs. Stir in the cream and form the dough into a ball.
- Roll dough out 1/2 inch thick and cut with a small round cutter. Roll cut circles in granulated sugar and place on ungreased cookies sheets. Prick cookies a few times with a fork.
- Bake at 375 degrees F (190 degrees C) for 8 to 10 minutes. Let cookies cool before frosting.
- To Assemble: Frost bottoms of half of the cookies and place the remaining cookies on top to make sandwich cookies.
- To Make Buttercream Frosting: Beat 1/2 cup of the butter until fluffy. Gradually add the confectioners' sugar. Beat in the evaporated milk and the vanilla. Adjust milk and confectioners' sugar amounts to get buttercream to a good spreading consistency.
SWEDISH TEA

- In a large saucepan add 1 tablespoon Lipton orange pekoe loose tea to 2 cups of water.
- Bring mixture to a low boil,.
- Add 1 cup of sugar and the juice of 1 lemon.
- Slice lemon pieces and add to mixture.
- Stir to help sugar dissolve, then turn the heat to low.
- Cover saucepan with a lid and simmer for 20 to 25 minutes. Do not boil.
- Strain tea mixture well and add enough water to make 1/2 gallon of tea.
- Note:.
- I usually triple this recipe. I divide the concentrate and refrigerate or freeze two 1/3 portions for later use. I just add water as directed above.
