These were my favorite growing up. My brothers and I would eat way too many of these. Incredible with real maple (or birch) syrup. They reheat very well, and we would actually freeze large batches for future meals.

Number Of Ingredients 10

4 cups quick-cooking rolled oats
1 cup all-purpose flour
1/4 cup sugar
2 teaspoons baking soda
2 teaspoons baking powder
1 pinch salt
4 cups buttermilk
4 eggs (beaten)
1/2 cup butter
2 teaspoons vanilla

Steps:

  • Mix all the dry ingredients.
  • Blend in liquid ingredients, mix well.
  • Let stand 30-45 minutes, will thicken DO NOT ADD LIQUID.
  • Cook on hot griddle.

2 cups old fashioned oats
2 cups buttermilk
1/2 cup flour
2 Tbsp sugar
1 tsp baking soda
1 tsp baking powder
2 eggs, lightly beaten
1/4 cup melted butter, cooled

Steps:

  • Mix the oats and buttermilk and let stand overnight in the fridge.
  • In the morning mix in the flour, sugar, baking soda, and baking powder. Then add the eggs and butter. If the mix is too thick add more buttermilk.
  • Drop 2 Tbsp. onto hot griddle for each pancake (for small pancakes).

3 c oatmeal
3 c buttermilk
3/4 c flour
3 tbsp sugar
1 1/2 tspn baking powder
1 1/2 tspn baking soda
3 eggs lightly beaten
6 tbs unsalted butter
canola oil
2 pears cored,peeled, sliced
3/8 c sliced almonds

Steps:

  • * In lg bowl combine oats and 3 c buttermilk ans soak 30 min-overnight. *In med bowl, stir flour, sugar, baking powder, baking soda. Stir dry ingredients into oat mixture. Stir in eggs and melted butter. Batter should be thick, but add 2-3 tbspns more if seems too thick. * Heat large skillet over med heat. Coat lightly w/oil. Pour batter 1/4 c onto skillet. Distribute 3-4 slices of pear and 1 tspn almonds over each pancake. Cook until nicely browned on bottom, 2-3 min. Flip,cook2-3 min. Keep warm in low oven. Serve with maple syrup and servant of your choice.
