SWEDISH OATMEAL PANCAKES
These were my favorite growing up. My brothers and I would eat way too many of these. Incredible with real maple (or birch) syrup. They reheat very well, and we would actually freeze large batches for future meals.

Steps:
- Mix all the dry ingredients.
- Blend in liquid ingredients, mix well.
- Let stand 30-45 minutes, will thicken DO NOT ADD LIQUID.
- Cook on hot griddle.

Steps:
- Mix the oats and buttermilk and let stand overnight in the fridge.
- In the morning mix in the flour, sugar, baking soda, and baking powder. Then add the eggs and butter. If the mix is too thick add more buttermilk.
- Drop 2 Tbsp. onto hot griddle for each pancake (for small pancakes).

Steps:
- * In lg bowl combine oats and 3 c buttermilk ans soak 30 min-overnight. *In med bowl, stir flour, sugar, baking powder, baking soda. Stir dry ingredients into oat mixture. Stir in eggs and melted butter. Batter should be thick, but add 2-3 tbspns more if seems too thick. * Heat large skillet over med heat. Coat lightly w/oil. Pour batter 1/4 c onto skillet. Distribute 3-4 slices of pear and 1 tspn almonds over each pancake. Cook until nicely browned on bottom, 2-3 min. Flip,cook2-3 min. Keep warm in low oven. Serve with maple syrup and servant of your choice.
