This cucumber salad goes well with just any kind of meal. In Sweden, strong white distilled vinegar is usually used (12%), which gives the cucumber salad the correct sweet-and-sour flavour and a wonderful fresh and refreshing taste.

2 fresh cucumbers
1 tablespoon parsley, chopped
1 -2 teaspoon rough ground black pepper
1 teaspoon salt
3 tablespoons sugar
3 tablespoons white distilled vinegar
1 teaspoon caraway seed (optional)

Steps:

  • Cut cucumbers into the thinnest possible slices.
  • Arrange slices in a bowl.
  • Whisk together the white distilled vinegar, sugar, salt, pepper and parsley.
  • Pour over the cucumbers.
  • Place a plate with a weight over the cucumbers to squeeze out the liquid.
  • Chill for 1 hour.

I can't think of a family event where these haven't appeared on the table. My Swedish grandmother made these for her family and the tradition continues - it was originally made with without dill - as it's written here - but feel free to add fresh dill - it's yummy both ways!

1 fresh cucumber, 6 to 7 inches long
1/2 cup white vinegar
2 tablespoons water
1/4 teaspoon salt
white pepper, 3 grinds
3 tablespoons sugar

Steps:

  • Wash and dry cucumber. Slice very thinly without peeling. Place in serving dish.
  • Mix together, vinegar, water, salt, pepper, and sugar. Pour this over cucumbers. Sprinkle with optional dill.
  • Let stand 2-3 hours in refrigerator before serving.

2 large cucumbers
1 teaspoon salt
1 cup sour cream
2 tablespoons vinegar
1 tablespoon chives, chopped (or thin-sliced red onion)
1 teaspoon dill weed
1/2 teaspoon sugar
1 dash pepper
lettuce (several leaves)
parsley, chopped

Steps:

  • Peel the cucumbers and slice them thin.
  • Sprinkle the cucumbers with 1 tsp salt and let stand 30 minutes. Drain.
  • Combine sour cream, vinegar, chives, dill, sugar and pepper. Pour over cucumbers. Add salt, if needed, to taste.
  • Chill in the refrigerator for 30 minutes.
  • Arrange chilled cucumbers on bed of lettuce. Sprinkle with chopped parsley.

2 cucumbers, peeled and very thinly sliced
2 teaspoons salt
3 tablespoons white vinegar
2 tablespoons sugar
Freshly ground pepper

Steps:

  • Place the cucumber slices in a colander and sprinkle with the salt. Cover with a plate and place something heavy on top to press them (a large can works well). Chill for 1 hour. Pour off the juices and put the cucumbers in a bowl. Combine the vinegar and sugar and pour over the top. Add pepper to taste. Chill for 1 hour.

2 large firm cucumbers
1 teaspoon salt
6 tablespoons sugar
2/3 cup white vinegar or 2/3 cup cider vinegar

Steps:

  • Note: Do not used waxed cucumbers.
  • Wash cucumbers, dry off and remove the ends.
  • Score the skins with the tines if a fork, dragging it the length of the cuke; repeat all the way around.
  • Slice cucumbers very, very thin.
  • Place in a bowl; sprinkle with salt and sugar.
  • Add vinegar and press slightly with back of a spoon.
  • Cover and refrigerate overnight.
  • Keeps well in a covered jar.
  • The end result is similar to an uncooked pickle.

1 teaspoon tarragon chopped fresh leaves
1/4 teaspoon salt

Steps:

  • Peel cucumbers, scoring lengthwise with fork if desired. Thinly slice and place in a medium bowl.In a small bowl, stir vinegar, sugar, parsley, dill, tarragon, and salt. Pour over cucumbers and stir. Cover and refrigerate at least 3 hours for flavor to develop, stirring several times.Serve in a bowl with a slotted spoon.NOTE: Recipe is easily doubled.
