3/4 cup butter, room temperature
2/3 cup sugar
1 egg
1 teaspoon vanilla extract
1/2 teaspoon salt
2 cups flour
1/2 cup chocolate chips (for Swedish Butter Strips) or 3/4 teaspoon maple flavoring (for maple pecan squares)
1/2 cup pecans, chopped

Steps:

  • Preheat oven to 350°F (360° at high altitude).
  • In a mixing bowl, cream together butter, sugar, egg, vanilla, and salt; blend in remaining ingredients.
  • Divide dough into 4 equal parts, and shape into 12" rolls.
  • Place 3" apart on ungreased cookie sheets, and flatten with a floured fork to 1/4" high.
  • Bake for 15-20 minutes or until delicately browned (golden) at the edges.
  • Cool for a few minutes and cut with a sharp knife into 1" diagonals.

When I bake cookies for the annual youth ski trip, I try at least one new recipe. When I received recipe requests for these frosted goodies, I knew I had a winner.

1 cup shortening
1/2 cup butter, softened
2 cups packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon maple flavoring
3 cups all-purpose flour
2 teaspoons baking soda
1 package (10 to 12 ounces) white baking chips
1/2 cup chopped pecans
FROSTING:
1/4 cup butter, softened
4 cups confectioners' sugar
1 teaspoon maple flavoring
3 to 5 tablespoons 2% milk
1-1/2 cups pecan halves

Steps:

  • In a large bowl, cream the shortening, butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla and maple flavoring. Combine flour and baking soda; gradually add to the creamed mixture and mix well. Stir in white chips and pecans., Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 9-11 minutes or until golden brown. Cool for 2 minutes before removing to wire racks. , In a large bowl, cream the butter, confectioners' sugar, maple flavoring and enough milk to achieve spreading consistency. Frost each cookie with 1 teaspoon frosting; top with a pecan half.

8 eggs
2 cups salted butter, softened
1 cup white sugar
1 ¼ teaspoons almond extract
4 cups all-purpose flour

Steps:

  • Place the eggs into a saucepan with enough water to cover by 1 inch. Cover the saucepan, and bring the water to a boil over high heat. Once the water is boiling, remove from the heat and let the eggs stand in the hot water for 15 minutes. Pour out the hot water; cool the eggs under cold running water. Peel eggs, separate yolks from whites. Sieve or finely grate yolks. Reserve whites for another use.
  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Beat the butter and sugar with an electric mixer in a large bowl until smooth. Beat in the egg yolks and the almond extract. Slowly mix in the flour, just until incorporated. Use a spritz style cookie maker to press cookies onto prepared baking sheet.
  • Bake in the preheated oven just until the edges begin to brown, 8 to 10 minutes.

Mom's Swedish Strips Recipe - (4.5/5) image

1 cup shortening
1 cup brown sugar
1 Egg
1 tsp. vanilla
1/2 tsp. salt
2 1/4 cups sifted cake flour
1/2 cup raspberry jam
2 Tbsp. icing sugar
1/2 cup finely chopped walnuts

Steps:

  • Cream sugar and shortening until light and fluffy. Add egg, vanilla, and salt, mix well. Add flour and combine. Place cookie batter on an ungreased 12"x15" cookie sheet and roll with a rolling pin to 1/4" thickness. Bake at 350 degrees for 15 minutes. While cookie is hot, spread thinly with jam and dust with icing sugar. Sprinkle with nuts. Press nuts gently into cookie to stick. Cut immediately into 1"x3" strips.
