ROUND STEAK IN THE CROCK POT
This Slow Cooker Round Steak uses the power of the crock pot to deliver tender steaks in a rich mushroom and onion gravy.

Steps:
- Preheat the slow cooker while you prepare the rest of the ingredients.
- Spread half the onions and mushrooms on the bottom of a slow cooker, followed by the steaks. Sprinkle the steaks with the onion soup mix, flipping them over to coat both sides with the seasoning.
- Spread the remaining onions and mushrooms on top, then pour in the beef broth.
- Cover and cook on low for 8 hours. Remove about 1/4 cup of the juices from the crock pot. Whisk in the cornstarch to form a slurry. Stir the slurry back into the slow cooker, turn the heat up to high, and continue to cook uncovered, stirring occasionally, another 15-20 minutes, or until juices are thickened. Season to taste with salt and pepper.

- In 3- to 4-quart slow cooker, layer onion, carrots, mushrooms and beef. Sprinkle pepper over beef. In medium bowl, mix soup and tomato sauce; pour over beef.
- Cover; cook on Low heat setting 8 to 10 hours.
- Place beef on serving platter. With slotted spoon, remove vegetables from cooker and spoon over beef. Stir gravy in cooker with wire whisk to blend. Serve gravy with beef.

Steps:
- Trim fat from meat.
- Cut meat into 4 serving-size pieces.
- In a 3 1/2 to 4 quart slow cooker place onion slices.
- Arrange mushrooms over onions; add beef.
- Stir together gravy and wine or apple juice.
- Pour over beef.
- Cover and cook on low heat setting for 8 to 10 hours or on high heat setting for 4 to 5 hours.
- Excellent served with mashed potatoes and a salad.
SUSSEX STYLE STEAK WITH MUSHROOMS FOR THE CROCK POT!
I found this recipe in a cookbook I took out from the Library (have forgotten title). It looks really good. The author suggests if you have a large crock pot, to keep the steak in one piece, but if your crock pot is smaller, cut the steak in half. Haven't tried yet.

- Season the meat with salt and pepper and rub each side with flour. Place in bottom of slow cooker. Lay onions over top and pour in beef broth and port.
- Brush mushrooms with olive oil and lay evenly over meat. Sprinkle with vinegar. Cover and cook on low for 8-10 hours or on high for 4-5 hours.
- When ready to serve, transfer steak with mushrooms to a deep platter. Stir in goat cheese, if using and pour gravy over meat.
- Enjoy!
