A few years ago, I saw a man in the grocery store buying a big bag of jalapeno peppers. I asked him what he intended to do with them, and right there in the store he gave me this fabulous recipe for stuffed jalapenos! -Janice Montiverdi, Sugar Land, Texas

24 medium fresh jalapeno peppers
1 package (8 ounces) cream cheese, softened
3 cups finely shredded cheddar cheese
1-1/2 teaspoons Worcestershire sauce
4 bacon strips, cooked and crumbled

Steps:

  • Preheat oven to 400°. Cut jalapenos in half lengthwise; remove seeds and membranes. In a large saucepan, boil peppers in water for 5-10 minutes (the longer you boil the peppers, the milder they become). Drain and rinse in cold water; set aside., In a small bowl, beat the cream cheese, cheddar cheese and Worcestershire sauce until smooth. Spoon 2 teaspoonfuls into each jalapeno; sprinkle with bacon. Arrange on greased baking sheets. Bake until filling is warmed, 3-5 minutes.

1 pound bulk pork sausage
20-22 large jalapeno peppers
8 oz cream cheese softened
1 cup parmesan cheese shredded

Steps:

  • 1. Cook sausage in skillet until no longer pink, drain, set aside
  • 2. Mix together at low speed the cream and parmesan cheese then mix in sausage
  • 3. Use a glove to seed and cut the peppers then fill each one with about 1 tablespoon of the mixture
  • 4. Bake at 425 for about 15 minutes or until slightly browned

1 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped sweet red peppers or 1/2 cup chopped green sweet pepper
2 tablespoons finely chopped seeded jalapeno peppers
1 tablespoon minced garlic (6 cloves)
1 tablespoon olive oil
2 tablespoons balsamic vinegar
1 (14 1/2 ounce) can diced tomatoes, drained
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1 lb extra lean ground beef
1/4 cup fine dry breadcrumb
2 slightly beaten eggs
1/2 cup milk
1 tablespoon all-purpose flour
1/4 teaspoon salt
2 3/4 cups fresh whole kernel corn or 2 3/4 cups fresh frozen whole kernel corn, thawed and drained
2 green onions, thinly sliced

Steps:

  • In a large skillet, cook onion, celery, sweet pepper, jalapeño pepper, and garlic in hot oil about 5 minutes or until tender, stirring occasionally.
  • Remove from heat and drain off fat.
  • Stir in drained tomatoes,balsamic vinegar, chili powder, cumin, the 1/2 teaspoon salt, and the crushed red pepper.
  • In a large bowl, combine ground beef, bread crumbs, and the onion-tomato mixture.
  • Spread meat mixture evenly in an ungreased 2-quart square baking dish.
  • In same bowl, combine eggs, milk, flour, and the 1/4 teaspoon salt; beat with a wire whisk until smooth.
  • Stir in corn and green onions.
  • Spoon evenly over meat layer.
  • Bake, uncovered, in a 350°F oven about 40 minutes or until corn layer is just set and meat layer is no longer pink.
  • Let stand for 10 minutes; cut into portions to serve.

This is the stuffing that has been passed down in our family. No turkey is complete without this tasty addition. I've seen these ingredients in other stuffing recipes, but they call for cooking the sausage in a fry pan. My sister and I agree that this method makes a more moist stuffing.

2 lbs lean ground pork (I like to use 1 lb pork and 1 lb mild sausage) or 2 lbs bulk sausage (I like to use 1 lb pork and 1 lb mild sausage)
2 (14 ounce) packages Pepperidge Farm Herb Stuffing (not cubed not cornbread. I use about one and a half packages.)
1 -2 large onion, chopped
6 celery & leaves, chopped
1 -2 cup water (need enough to cover pork as it cooks)
1 teaspoon Bell's seasoning (may omit)

Steps:

  • Place meat, onion, celery and seasoning in a pot. Cover with water. Bring to a boil and simmer for one hour stirring occasionally to break up meat chunks.
  • Remove from heat. If there is an excess amount of liquid pour in a cup and reserve. Stir in the stuffing mixture. This mixture should be a little dryer than you like it since it will absorb some of the turkey juices. If too dry, add some of the reserved liquid.
  • The stuffing can be prepared the night before and refrigerated overnight. This makes enough to stuff a 20 lb bird. Remember not to stuff your turkey until it is ready to cook. You can cook the stuffing that didn't fit in your bird in a crock pot (or in the oven if you have room).

This is a bakery-quality bread that is on regular rotation at my house and has been so for many years it is one of my family's favorite breads, because of the addition of egg the rising time will be slightly longer than usual --- there is very little sugar and no butter or shortening in this bread which gives this bread a spongy-like texture, perfect for dipping! If you are a jalapeño lover then by all means add in as much jalapeño peppers as you desire, this bread does not require forming into a loaf shape just shape into two large balls which makes it an easy recipe for a beginner baker :)

1 1/2 tablespoons dry yeast
1 teaspoon sugar
1 cup warm water
4 cups flour (more as needed)
2 large jalapeno peppers, coarsely chopped, and seeds removed (can use more jalapeno if desired)
1 3/4 teaspoons salt
1 tablespoon sugar
1 egg (room temperature, let egg sit in hot water for about 5-7 minutes to warm)
1 teaspoon hot pepper sauce (optional)
3/4 cup milk, warmed
2 1/2 cups cheddar cheese (chopped into about 1/2-inch cubes or a little larger if desired)

Steps:

  • Prepare a heavy-duty stand mixer with a kneader blade.
  • Proof yeast in water with 1 teaspoon sugar for 8-10 minutes, or until foamy.
  • Heat milk in the microwave for about 50 seconds on HIGH.
  • In the stainless steel bowl, add in 4 cups flour, chopped jalepenos, salt, sugar, egg, hot pepper sauce (if using) and warmed milk.
  • After the yeast has proofed, add to the bowl and start kneading, adding in more flour as needed to create a soft smooth semi-sticky dough, keep kneading for about 8-10 minutes.
  • Towards the end of the kneading add in the cubed cheddar cheese, and mix until combined (the dough can be removed from the bowl and you can add/mix in the cheese by hand if dresired).
  • After the kneading, let the dough sit out on a board or counter top to rest, covered with a clean tea towel for 8-10 minutes.
  • Gather up dough and knead gently for 30 seconds.
  • Then place the dough in a well greased bowl, and let rise until doubled (about 1-1/2 hours or could take a little longer).
  • Punch down dough and slice into two even pieces.
  • Shape into two large balls, and place on a cookie/baking sheet that has been sprayed with cooking spray.
  • Cover with a clean tea towel and rise again for another 1 hour or more until doubled.
  • Brush tops with an egg white that has been mixed with 1 teaspoon cold water.
  • Sprinkle on grated Parmesan cheese or sesame seeds.
  • Bake in a 375 degree oven for about 25-35 minutes or until the crust is a dark golden brown.

6 tablespoons butter
1 1/2 cups chopped onions
1 1/2 cups chopped red bell peppers (stemmed and seeded)
2 cups chopped poblano peppers (stemmed and seeded)
3 large jalapenos, stemmed, seeded and chopped
1 tablespoon chopped fresh sage or 4 teaspoons dried sage
1 1/2 tablespoons dried oregano
6 cups crumbled cornbread (one recipe for 9-inch-by-13-inch pan)
3/4 cup chopped fresh cilantro
1 1/2 cups crumbled corn chips (tostadas)
1 1/2 cups frozen corn kernels, thawed
3 cups chicken stock
1 1/4 cups canned cream-style corn
1 dozen pork tamale, unwrapped, chopped in 1-inch chunks
salt and pepper

Steps:

  • Melt butter in heavy large skillet over medium heat.
  • Add onions, bell peppers, all chiles, sage and oregano.
  • Sauté until vegetables are tender.
  • Transfer to a bowl with corn bread.
  • Mix in cilantro, corn chips, corn kernels, cream-style corn and heated chicken stock.
  • Add tamales at the end and do not break up.
  • Salt and pepper to taste.
  • If stuffing is too dry, add a little melted butter.
  • Place dressing in a buttered 9-inch-by-13-inchbaking pan.
  • Cover with foil and bake dressing in a preheated 325-degree oven for 45 minutes.
  • Remove foil and bake another 15 minutes, until brown.

3 Spanish onions
1 carrot
1 1/2 lbs ground pork loin
1/2 cup parmesan cheese, shredded
1/2 cup romano cheese, shredded
1/2 teaspoon garlic powder (guessing on quantity)
2 tablespoons dried parsley, to taste (guessing on quantity)
1 (12 ounce) package fresh mushrooms (guessing on quantity)
2 (8 ounce) boxes croutons (or bags, guessing on quantity)
2 (12 ounce) cans chicken broth
salt and pepper

Steps:

  • Preheat oven to 350 degrees. Chop celery, onion, and carrot, and saute in butter. Set aside.
  • Brown the ground pork with salt and pepper to taste until cooked thoroughly.
  • Add the celery, onion, and carrot, to the cooked pork, along with the cheeses, garlic powder, parsley, and mushroom (optional). Stir until blended over low-medium heat.
  • Add croutons and chicken broth, and stir until blended.
  • Bake at 350 degrees until croutons start to get a little crunchy on top (20 minutes?).

8 slices firm white bread, toasted
1 tablespoon butter
1 lb medium peeled and deveined shrimp
1/4 cup heavy cream
2 tablespoons lemon juice
1 tablespoon gin
1 tablespoon soy sauce
1 tablespoon finely chopped fresh ginger
1/2 teaspoon fresh ground black pepper
2 eggs
1 cup thinly sliced scallion
1/2 cup drained and coarsely chopped canned water chestnut
1/3 cup chopped cilantro
1/2 lb fresh lump crabmeat, picked over

Steps:

  • Preheat oven to 350°; butter a shallow 2-quart baking dish.
  • In a food processor, make crumbs of the toasted bread; measure out 1 ½ cups of the crumbs into a mixing bowl.
  • Heat the butter in a small skillet; toss with the remaining crumbs to moisten; set aside for the topping.
  • Coarsely chop ½ pound of the shrimp; set aside.
  • In a food processor, puree the remaining ½ pound of the shrimp with the cream, lemon juice, gin, soy sauce, ginger, and pepper.
  • Add in the eggs and process to blend.
  • Transfer the mixture to the mixing bowl with the breadcrumbs.
  • Add in the scallions, water chestnuts, and cilantro.
  • Using your hands, blend the mixture together.
  • Add in the chopped shrimp and the crabmeat; again, using your hands, gently but thoroughly blend mixture.
  • Pat the mixture into the prepared pan and sprinkle the top with the buttered crumbs.
  • Bake 40-45 minutes or until the loaf is firm and browned.
  • Let loaf rest 5-10 minutes before cutting into squares to serve.
