BASIC RICH SWEET YEAST DOUGH



Basic Rich Sweet Yeast Dough image

An old fashioned sweet dough recipe for coffee cakes, coffee bread, babka, buns, kolacky, rolls, and so on. Prepare 24 hours ahead of time. This rich dough needs the chilling and long rest period to produce a wonderful versatile dough. You may halve the recipe if you wish.

Number Of Ingredients 15

1/2 lb butter (2 sticks)
1/2 teaspoon salt
1 1/4 cups milk
1 cup sugar
6 -8 cups flour
2 packages active dry yeast
1/4 cup water
4 egg yolks
2 whole eggs
1 teaspoon ground cardamom (this really adds a special flavor) (optional)
1 cup powdered sugar
1 tablespoon water
1 tablespoon cream, more if needed to thin to desired consistency
1 teaspoon rum extract or 1 teaspoon vanilla extract
2 tablespoons finely grated coconut (optional)

Steps:

  • (Icing may be doubled and used for any cake or bun icing).
  • Dissolve yeast in 1/4 cup warm water and set aside until foamy.
  • Heat milk, shortening, sugar and salt to melt shortening.
  • Cool to warm and add yeast mixture, egg yolks and whole eggs.
  • Beat well by hand.
  • Gradually beat in by hand 6 cups of flour and the cardamom.
  • Knead well on a floured surface only adding additional flour to make a smooth and elastic dough.
  • Place dough in an oiled bowl, turn to coat with oil and cover and let rise double in volume.
  • Punch down and cover dough and refrigerate overnight in large bowl.
  • When ready to use, punch down and knead briefly to warm up dough.
  • Use dough as you wish for coffee cakes, sweet breads, buns, etc.
  • You may divide dough into 6 buns, or 4 equal pieces to make 4 small loaves or braids.
  • If braiding, divide each piece into 3 loose strands and braid and tuck under ends.
  • Brush with melted butter.
  • Place on baking sheets/pans and let rise double in volume.
  • Bake in a 350F oven about 30 minutes or golden and tested done.
  • Remove from pans/baking sheet to cool on rack.
  • Mix icing ingredients and drizzle over warm cake/bread.
  • Yield: approx.
  • 6 buns, 4 small braids, or 2 large loaves.

My mother taught me how to cook, and this delightful recipe is from her. Whoever tries it says it's the best coffee cake ever invented! It requires no kneading, and you can tint the icing any color you want.

2-1/2 to 3 cups all-purpose flour
1/4 cup sugar
1 package (1/4 ounce) active dry yeast
1 teaspoon salt
1/2 cup water
1/2 cup 2% milk
1/2 cup butter, cubed
2 eggs
1 can (21 ounces) cherry pie filling
GLAZE:
1/2 cup confectioners' sugar
1/4 teaspoon almond extract
3 to 4 teaspoons 2% milk

Steps:

  • In a large bowl, combine 1-1/2 cups flour, sugar, yeast and salt. In a small saucepan, heat the water, milk and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Beat in eggs until smooth., Stir in enough remaining flour to form a soft dough (dough will be sticky). Cover and let rise in a warm place until doubled, about 40 minutes., Stir dough down and spoon two-thirds into a greased 13-in. x 9-in. baking pan. Top with pie filling. Drop remaining dough by tablespoonfuls over pie filling. Cover and let rise in a warm place until doubled, about 30 minutes., Bake at 350° for 35-40 minutes or until golden brown. Place pan on a wire rack. Combine the confectioners' sugar, extract and enough milk to achieve a drizzling consistency; drizzle over warm coffee cake.

2 cups milk, divided
1 (1/4 ounce) package dry yeast
4 cups flour, divided
1/2 cup melted butter
1/2 cup sugar
1/2 lemon rind, grated
3 eggs, beaten
1 teaspoon cinnamon
2 tablespoons chopped almonds
2 tablespoons firm butter

Steps:

  • Scald milk; cool to lukewarm.
  • Pour 1/4 cup of the cooled milk over the yeast and let stand.
  • Beat remaining milk into 2-1/4 cups flour.
  • Stir in the yeast mixture; let rise until dough springs back to touch,
  • then mix in melted butter, sugar, lemon rind, and beaten eggs.
  • Stir in the remaining flour.
  • Spread dough about 1 inch thick on two greased baking sheets and let rise again.
  • When well risen, sprinkle with cinnamon and almonds; dot with firm butter.
  • Bake in preheated 400 degree oven for 15 minutes; lower heat to 375 degrees and bake until brown, about 12-15 minutes.

Here is another coffee cake recipe but this one is made like a yeast bread, put in the fridge over night, rolled out in the morning, sprinkled with the filling and then rolled up and put in a tube pan, raised, and then baked. Served with a little lemon glaze, too. Could not find an exact recipe online so...

IN SMALL BOWL COMBINE AND SET ASIDE:
1 yeast cake
1/4 c luke warm milk
2 tsp sugar
CRUMB TOGETHER LIKE PIE CRUST:
3 c flour
1 tsp salt
1/2 c butter
2 Tbsp sugar
COMBINE IN A SEPARATE BOWL:
3 egg yolks, beaten
1 c cream
FILLING:
1 tsp cinnamon
1/2 c sugar
3/4 c walnuts
1/2 c raisins
GLAZE:
1 c powdered sugar
2 Tbsp hot water
1 tsp lemon juice

  • 2. Dough: Begin by crumbling your 1 cake of yeast (or equivalent) into the 1/4 cup of luke-warm milk plus 2 tsp sugar and let it sit while you prepare the rest of the dough recipe
  • 3. Crumb together as if you were making pie dough, the flour, salt, butter and sugar
  • 4. Lightly beat the egg yolks then add the cream and mix
  • 5. Combine the egg yolk mix with the yeast milk and then add to the flour mixture and make the dough. Cover the dough and place in the fridge over night.
  • 6. IN THE A.M. Pull the dough out of the fridge and roll it out on a floured surface while it is still cold to about pizza dough thickness (about 1/4 inch or there abouts).
  • 7. Sprinkle with the cinnamon, sugar, walnuts, and raisins.
  • 8. Roll the dough up jelly-roll style and place in a tube pan. (The recipe does not say a greased pan but it might be helpful. You may put parchment paper on the bottom, instead, if you like.)
  • 9. Then, let the dough rest and rise for the next 3 hours.
  • 10. Bake 350 F, for 1 hour
  • 11. After done baking, remove from pan and place on pretty plate. Let cool.
  • 12. Glaze: Combine 1 cup Powdered sugar with two Tbsps of HOT water and 1 teaspoon of lemon juice. Drizzle over cooled coffee cake and serve along side a nice hot cup of coffee.
  • 13. NOTE: Some other recipes that I checked used the left over egg whites (beaten stiff) as a layer under the filling ingredients after the dough is rolled out. But, I wondered about keeping them overnight in the fridge... ALSO: Some other recipes don't place it in a tube pan (which holds it's shape) but they place it on a cookie sheet, rolled up like a giant cinnamon roll. Which I think is prettier, but it makes it more "flat"... your choice.

1 cup milk
1/2 cup lard or 1/2 cup butter
1/4 cup water
1 egg, beaten
1/2 cup sugar
1 teaspoon salt
1 (1/4 ounce) package dry yeast
4 -4 1/2 cups flour

Steps:

  • Scald milk.
  • Stir in sugar, salt and lard.
  • Cool to lukewarm.
  • Measure water into large warm bowl.
  • Sprinkle in yeast, stir until dissolved.
  • Stir in milk mixture, egg and half of flour.
  • Beat until smooth.
  • Add remaining flour to make a stiff batter.
  • Cover loosely.
  • Keep in cool place for at least 2 hours.
  • (Dough may be kept in refrigerator up to 3 days).
  • Take 1/2 of the dough and pat dough into a greased 13" x 9-1/2" x 2" pan, pushing dough up pan sides to form a ridge.
  • Add the topping of your choice from the following recipes: Recipe #40284, Recipe #40283, Recipe #40282, Recipe #40279, Recipe #40270 and Recipe #40276.
  • Cover and let rise until doubled (45 to 60 minutes).
  • Bake at 375° for 35 minutes or until done.

2 1/4 cups bread flour
2 teaspoons active dry yeast
1 egg yolk
7/8 cup milk
1 tablespoon butter
2 tablespoons butter, melted
1 teaspoon cinnamon
1/2 cup sugar
1/2 cup chopped pecans or 1/2 cup chopped walnuts
1 cup sifted powdered sugar (optional)
2 tablespoons milk (optional)
1 teaspoon butter, softened (optional)
1/2 teaspoon vanilla (optional)

Steps:

  • Add all cake ingredients to bread pan.
  • Select "Dough" setting on your machine and press start.
  • Grease a 9 inch round pan or an 8 x 8 inch square pan.
  • After cycle is through (about 90 minutes), remove dough and pat dough into prepared pan.
  • Topping: Drizzle melted butter over dough.
  • Mix together sugar, cinnamon and nuts; sprinkle over butter.
  • Cover and let rise in a warm place for 30 minutes.
  • Preheat oven to 375* and bake cake for 20-25 minutes, until golden.
  • Cool 10 minutes in pan on wire rack.
  • Drizzle with optional glaze, if desired.
  • Combine all glaze ingredients in a small bowl and whisk until smooth.
  • Spread or drizzle glaze over slightly warm cake.
