4 cups sliced potatoes
1 (16 ounce) can salmon, drained (liquid reserved) and salmon flaked
1 cup milk, or as needed
3 tablespoons butter
3 tablespoons all-purpose flour
½ cup mayonnaise
½ cup grated Parmesan cheese
1 teaspoon Worcestershire sauce
1 teaspoon prepared mustard

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 15 minutes. Drain.
  • Mix reserved liquid from salmon and enough milk to make a total of 2 cups together in a measuring cup or bowl.
  • Preheat oven to 375 degrees F (190 degrees C). Generously grease a casserole dish.
  • Melt butter in a saucepan over medium-low heat. Stir flour into melted butter and cook until dissolved, about 1 minute. Gradually add milk mixture to butter-flour mixture; cook, stirring constantly, until sauce is thickened and smooth, 5 to 10 minutes.
  • Layer potatoes, salmon, and sauce, alternating 1 or 2 times, into the prepared casserole dish.
  • Whisk mayonnaise, Parmesan cheese, Worcestershire sauce, and mustard together in a bowl; pour over casserole.
  • Bake in the preheated oven until casserole is bubbling, about 30 minutes.

This gem comes from the Turkey Run Inn at the Turkey Run State Park in Indiana. Perfect make ahead dish for a special holiday breakfast or brunch. Prep time does not include overnight chill time.

12 slices dry white bread, cut into 1/2 inch cubes (about 8 cups, see NOTE)
2 (8 ounce) packages cream cheese, cut into 3/4 inch cubes
1 cup fresh blueberries or 1 cup frozen blueberries
12 eggs
2 cups milk
1/2 cup maple syrup or 1/2 cup maple syrup
maple syrup or maple syrup

Steps:

  • Place half of the bread cubes over the bottom of a well-buttered 13x9x2-inch baking dish.
  • Sprinkle cream cheese and blueberries over bread cubes.
  • Arrange remaining bread cubes over blueberries.
  • In a large mixing bowl, beat eggs with a rotary beater, beat in milk and the 1/2 cup syrup.
  • Carefully pour egg mixture over the bread mixture.
  • Cover and chill in the refrigerator for 2 to 24 hours.
  • Bake, covered, in a 375 oven for 25 minutes.
  • Uncover and bake about 25 minutes more or till a knife inserted near the center comes out clean, and topping is puffed and golden brown.
  • Let stand for 10 minutes before serving.
  • Serve warm with blueberry-flavored or maple syrup.
  • NOTE: To dry bread slices, arrange bread in a single layer on a wire rack, cover loosely and let stand overnight.
  • Or cut bread into 1/2-inch cubes, spread in a large baking pan.
  • Bake, uncovered in a 300 oven for 10 to 15 minutes or till dry, stirring twice, cool.

This is one of those little gems of ingenuity from my Nana's kitchen. Nana always made this every Thanksgiving, and all of us kids took turns helping her make it. It is a simple dish, but it really hits the spot on a cold November day. I remember how my sister was absolutely shocked when she learned there was tuna in this dish. This is definitely a dish you'll want to make again and again.

¼ cup minced onion

2 1/2 lbs ground beef (or any ground meat)
3 (1 ounce) packages taco seasoning
taco chips
2 (14 ounce) cans refried beans
1 (16 ounce) jar salsa
2 -3 cups shredded cheese

Steps:

  • Preheat oven to 350 degrees.
  • Cook beef and add taco seasoning.
  • Mix both cans of refried beans with the jar of salsa, set aside.
  • Layer the bottom of a 13" x 9" (lasagna) pan with taco chips.
  • Place the cooked ground beef on top of the taco chip layer.
  • Add any remaining liquid to the bean and salsa mixture, mix together.
  • Place this mixture over the ground beef.
  • Cover with aluminum foil and bake for 30-40 minutes in preheated oven.
  • Uncover, crumble taco chips and cheese over the top and bake for another 5-10 minutes.

1/4 cup plus 2 tablespoons (3/4 stick) unsalted butter
3 medium Texas 1015 onions or 3 Vidalia onions, chopped
8 ounces Swiss cheese, grated (2 cups)
1 cup crushed saltine crackers
2 large eggs
3/4 cup heavy cream
1 teaspoon salt
1/8 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350°F.
  • Melt 1/4 cup (4 tablespoons) of the butter in a large skillet set over medium-high heat. Add the onions and sauté until tender and translucent, about 8 minutes. Put half of the onions into a 9 x 13-inch casserole dish. Sprinkle with 1 cup of the cheese and 1/2 cup of the cracker crumbs. Repeat the layers of onion and cheese.
  • In a medium bowl, lightly beat the eggs, then add the cream, salt, and pepper. Pour the mixture evenly over the casserole.
  • Melt the remaining 2 tablespoons of butter in a small skillet and stir in the remaining 1/2 cup cracker crumbs. Toast the crumbs until they are lightly brown, about 10 minutes, then sprinkle over the casserole.

This recipe is my own creation. It works great with the pre-packaged taco kits. If you like the crust a little softer, add more taco sauce and bake for a few more minutes.

12 corn crunchy taco shells
1 jar taco sauce (not salsa)
1 lb ground beef
1 medium onion, chopped
1 package taco seasoning
1 (14 1/2 ounce) can diced tomatoes, drained

Steps:

  • Brown the ground beef with the onion and drain.
  • Add the taco seasoning and the water.
  • Simmer until water is cooked away.

  • This will be the crust.
  • Spread beef and onion over taco shells evenly.

  • Cook macaroni and rinse with cold water. While cooking, mix sour cream, ranch and water together in a small bowl. Once mixed, add broccoli and ham. Set aside.

As a matter of fact, it is not unusual to see most of my houseguests arriving at the breakfast table in their jim jams... It is a homey site. A dish like this is excellent for a casual morning. Serve in the baking dish, and let everyone scoop out...

1 lb breakfast sausage
1 tsp dry mustard
1/2 tsp table salt
6 eggs, beaten
2 c whole milk
6 slice firm white bread, or whole wheat, toasted and cut into cubes
8 oz sharp cheddar cheese, shredded
salt, and pepper, to taste

Steps:

  • 1. Crumble the sausage, and cook over medium heat until browned. Drain the sausage on paper towels to remove any excess grease.
  • 2. Combine the mustard powder, salt, eggs, and milk in a bowl.
  • 3. Add the sausage, bread, and cheese. Then gently stir to incorporate.
  • 4. Grease a 9x13 inch baking dish (or ceramic baking bowl) with butter, and then add the casserole mixture. Spread into an even layer.
  • 5. Let cool overnight in the fridge. Cover with some cling foil to keep the casserole from absorbing any odors from the fridge. This step is important because it give the ingredients a chance to get to know each other.
  • 6. The following morning, preheat your oven to 350f (175c), and begin waking up your sleeping guests.
  • 7. Cover the dish with foil, and bake 45 to 60 minutes, or until the eggs are beginning to set.
  • 8. Uncover, reduce heat to 325f (165c), and then bake an additional 30 minutes, or until eggs are firmly set.
  • 9. Remove from the oven, tell your guests that breakfast is ready, and then serve immediately. Don't forget to mention to your sleepy-eyed guests that the serving dish is hot, hot, hot.
  • 10. This is one of my holiday specials. I place the dish on a trivet on one of my sideboards; along with some homemade buttermilk biscuits, butter, honey, and assorted jams. The plates and utensils; along with coffee and juice are at the ready for my guests to dig in...

3 large cooked chicken breasts (already cooked)
2 cups instant cooked rice (or brown)
1 (10 1/2 ounce) can fat-free cream of mushroom soup (undiluted)
1 (1 ounce) envelope onion soup mix
1 cup non-fat soymilk
salt and pepper

Steps:

  • Mix the mushroom soup with the rice then stir in the onion soup. Add the milk and mix.
  • Cut up the chicken in bite size pieces and encoorporate all.
  • Pour in a 9x13 pan that has been sprayed with cooking spray.
  • Sprinkle 1 cup of fat free cheddar cheese on top and bake 375 degrees for 30-45 minutes or until the cheese has melted.

Okay, I call this a "Surprise", because I just made the thing up. Did not know if I would love it, or hate it; however, it came out surprisingly yummy. It is easy/peasy to assemble, and requires a quick meat sauce, a few select spices, and some cheese. You can vary the spices, and/or the cheese, to make your own version....

PLAN/PURCHASE
2 medium tomatoes, chopped
1/4 c carrots, small dice
1 clove garlic, minced
1/2 lb ground sirloin
1/4 tsp ground cumin
1/4 tsp dried basil
1/4 tsp dried oregano
1/4 tsp dried parsley
1/4 tsp salt, kosher variety, or to taste
1/4 tsp black pepper, freshly ground, or to taste
2 - 3 oz tomato sauce
3 slice provolone cheese, or cheese of choice
ADDITIONAL ITEMS
add some cayenne or red pepper, for kick
throw in a handful of al dente pasta, for some carbs
some crusty bread for serving would not be amiss

Steps:

  • 1. PREP/PREPARE
  • 2. Besides a skillet for cooking up the meat sauce, you will need an ovenproof dish for the baking process. I used a ramekin that was 5 x 2.5 inches (12.5 x 6.3cm), and holds a volume of 10 ounces (0.3L).
  • 3. Gather your ingredients (mise en place).
  • 4. Place a rack in the middle position, and preheat the oven to 350f (175c).
  • 5. Rough chop the tomatoes, dice the carrots, and reserve.
  • 6. Add the sirloin to a skillet over medium heat, and cook until just a hint of pink remains, about 3 - 5 minutes.
  • 7. Add the minced garlic, and dry spices, then stir to combine, about 60 seconds.
  • 8. Add the tomatoes, tomato sauce, and carrots, then lightly simmer, for about 3 minutes.
  • 9. Chef's Note: If you are using some al dente pasta, add it at the end of the 3 minutes.
  • 10. Chef's Tip: Give the meat sauce a tasting for proper seasoning, before adding to the ovenproof dish.
  • 11. Coat an ovenproof dish with a bit of olive oil, and add a slice or provolone to the bottom.
  • 12. Add half of the meat sauce, then top with another slice of provolone.
  • 13. Add the remainder of the meat sauce, then top with the final slice of provolone.
  • 14. Place dish into the preheated oven, and bake until the cheese is nice and bubbly, about 12 - 14 minutes. Then, raise the heat to 375f (190c), and cook until the cheese begins to brown in spots, about 3 - 4 additional minutes.
  • 15. PLATE/PRESENT
  • 16. Allow to rest for 10 minutes, then serve with some crusty bread. Enjoy.
  • 17. Keep the faith, and keep cooking.

  • Heat oil in a saucepan over medium heat. Add tofu. Cook, stirring occasionally, until all sides are browned, 5 to 7 minutes. Add cream of mushroom soup, milk, curry powder, salt, and pepper. Stir until combined. Pour into a casserole dish; mix in pasta. Cover with Muenster cheese slices.
  • Bake in the preheated oven until casserole is heated through and top is bubbling, about 30 minutes.
