SUPREME DREAM LIME MOLD!
This is undoubtedly the best lime mold salad/dessert I've ever had, and my family has come to expect it for part of our Xmas dinner. You may use jelly from Australia or flavored gelatin from other countries as a substitution for American jello, adjusting the sugar to taste.

Steps:
- Whip the cream with a hand mixer until peaks form.
- Set aside.
- Dissolve the jello in 1 cup very hot water.
- Add the cream cheese and mash with a fork until smooth.
- Add pineapple and cherries and mix.
- Add the mayonnaise and whipped cream and mix.
- Add nuts and green food coloring.
- Mix until all ingredients are evenly distributed.
- Butter a ring mold or Tupperware mold.
- When mixture begins to set, then pour it all into the mold or into small, individual dessert bowls.
- Cover and refrigerate until firmly set.

RHUBARB LIME JELLY
This Jelly is so pretty---it is a bubble gum color! Is great for gifts. A lovely treat for the summer.

Steps:
- Wash rhubarb, cut into chunks, and puree in food processor.
- Use cheesecloth to extract 5 cups of juice.
- Mix rhubarb, lime juice, and calcium water in pot.
- Mix pectin and sugar in another bowl.
- Bring to boil and add sugar/pectin.
- Bring to boil again, then remove from heat and ladle into prepared sterilized jars, process for 10 minutes, or whatever method you do to can.
- Note: If you use a surejell or certo, then i suppose just forget the calcium water, but with those you'll have to use about 6 cups of sugar!

- In a medium bowl, combine the gelatin, sugar, lime juice and boiling water, stirring until the gelatin and sugar are dissolved.
- Chill for about 1 hour or until slightly thickened.
- Beat the gelatin until light-colored and doubled in volume.
- Beat in the whipped topping, then gently fold in the blueberries.
- Pour into a 4-to 5-cup gelatin mold.
- Cover and chill for 3 to 4 hours, or until firm.
- Dip the mold briefly into warm water, then unmold onto a large serving platter.

- Refrigerate until slightly thickened.
- In a small mixing bowl, beat cream cheese until smooth.

This is my Grandmother's recipe. I haven't thought about it much over the past few years, but remember always having it in the summer when I was growing up! This "salad" is great for BBQ's, Family Reunions and just because you want some on those warm days!!

- Spray a 6-cup silicone jello mold with nonstick cooking spray and place on a plate or baking sheet.
- To make simple syrup, in a small saucepan over medium high heat. stir to combine water and sugar. Bring to a boil, then reduce to a simmer. Cook until sugar is completely dissolved, about 2 minutes. Remove from heat and let cool slightly.
- Place gelatin leaves in a bowl of cold water for 5 minutes. Once gelatin is softened, squeeze to remove excess moisture and then stir into warm simple syrup to dissolve. Combine syrup with remaining ingredients and then pour into prepared jello mold. Let cool to room temperature, then transfer to a refrigerator and let set for at least 4- 6 hours and up to overnight.
- To remove jello from mold, rest mold in a bowl of warm water for 30 seconds. Invert mold onto a plate and slowly lift mold off to reveal the jello ring.

LIME GELATIN SALAD I
This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

- In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
- Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
- In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.
