2 1/2 cups shredded cooked chicken
1 (1 1/4 ounce) package fajita seasoning mix
1/3 cup water
8 ounces tortilla chips
1 1/4 cups grated cheddar cheese
1 cup grated monterey jack cheese
1 (2 1/2 ounce) can sliced ripe olives, drained
1/4 cup green onion, sliced
1 large tomatoes, diced
guacamole (optional)
sour cream (OPT)
canned jalapeno slices (optional)
salsa (optional)

Steps:

  • Combine chicken, fajita seasoning, and water in a medium saucepan.
  • Bring to a boil, reduce heat and simmer about 7 minutes.
  • In a large, shallow ovenproof platter or pizza pan arrange the tortilla chips.
  • Top with the chicken and cheeses.
  • Broil in the oven until cheese is melted.
  • Top with tomatoes, olives, green onions, salsa, and jalapenos, if desired.
  • Serve optional sour cream and guacamole on the side.

Love, Love ,Love Nachos! Love the crunch of the tortilla chips and the melted cheese. Mmmm.

1 lb cooked and shredded chicken
1 16 oz can of your favorite chili
1-2 bag(s) tortilla chips
1 tomato, diced
½ c jalapenos, sliced
¼ c black olives, sliced
8 oz cheddar and monterey jack cheese, shredded
2 stalk(s) green onions, chopped
2 Tbsp cilantro for garnish
SERVE WITH SOUR CREAM, SALSA, GUACAMOLE

Steps:

  • 1. Preheat the oven to broil. Heat the chili in the microwave until hot. You can use any sort of oven safe dish or cast iron skillet. Layer 1/2 of the chips in the dish. Spread 1/2 of the chili, chicken, olives, jalapenos, and cheese over top. Layer the other half of the chips, chili, chicken, olives, jalapenos, and cheese over top.
  • 2. Put in the oven for 4-8 minutes or until the cheese fully melts and the tips of the chips begin to brown. Remove from oven and top with tomatoes, green onions, and cilantro if you wish.
  • 3. Serve with sour cream, salsa, and guacamole.
