I have used this recipe for 30 years. My husband loves it and he is picky.

½ cup milk
1 cup soft bread crumbs
1 ½ pounds ground beef
1 ¼ teaspoons salt
ground black pepper to taste
1 egg, slightly beaten
3 tablespoons steak sauce, (e.g. Heinz 57)
1 onion, chopped
½ cup diced green bell pepper
¼ cup steak sauce, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
  • Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
  • In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
  • Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.
  • Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing.

1 (1 1/4 ounce) envelope onion soup mix (I use Liptons)
2 lbs ground beef
1/2 medium onion, chopped
3/4 cup plain breadcrumbs
2 eggs
1/2 cup water
1/3 cup ketchup
1/3 cup parmesan cheese
1 cup ketchup
1/3 cup brown sugar
1 tablespoon Worcestershire sauce
1/2 cup water
3 tablespoons tomato paste

Steps:

  • preheat oven to 350.
  • combine all meatloaf ingredients.
  • press into a greased loaf pan.
  • bake 1 hour.
  • while baking meatloaf, mix ingredients for sauce in a saucpan.
  • whisk sauce while heating over medium heat.
  • keep sauce warm.
  • in the last 15 minutes of cooking meatloaf, glaze the meatloaf with the sauce.
  • save remaining sauce to spoon onto meatloaf while serving.

1 cooking spray
1 onion
1 green bell pepper
1 red bell pepper
1 yellow bell pepper
2 ½ pounds ground beef
1 (15 ounce) can tomato sauce
12 crushed saltine crackers
¼ cup brown sugar
1 egg, beaten
2 tablespoons Worcestershire sauce
2 tablespoons chicken stock
2 tablespoons olive oil
1 tablespoon Montreal steak seasoning
1 clove garlic, minced
ground black pepper to taste
¼ cup ketchup, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x11-inch baking dish with cooking spray.
  • Cut 3/4 each of onion, green bell pepper, red bell pepper, and yellow bell pepper into thin slices. Dice remaining 1/4 of onion and peppers.
  • Mix ground beef, diced onion and peppers, tomato sauce, crushed crackers, brown sugar, egg, Worcestershire sauce, chicken stock, olive oil, steak seasoning, garlic, and pepper together in a bowl until well-combined.
  • Spread 1/2 of the beef mixture into the bottom of the prepared baking dish. Top meat with sliced onion and peppers, leaving a 1-inch border. Spread remaining beef mixture over vegetables, tucking in sides to seal vegetables in the center of the meatloaf. Pour ketchup over the top of the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

I got this recipe 20+ yrs or so ago. It was presented on one of the cooking shows on PBS (before the Food Network.) I jotted it down (no home computer then.) I tweaked it to my taste, but it pretty much is the recipe shown on TV. You must be a mushroom lover to appreciate this one.

3 Tbsp evoo~extra virgin olive oil
1 or 2 sweet yellow onions (1 large or 2 small), chopped
2 green or red bell peppers, chopped
3 lb very lean ground beef (90/10 or leaner)
1 c fresh bread crumbs (or 3/4 cup dry crumbs)
3 large eggs, slightly whisked
1 can(s) condensed cream of mushroom soup or bechamel sauce with mushrooms
3 Tbsp worcestershire sauce
salt and pepper to your taste
2 Tbsp evoo
1 small yellow sweet onion, finely minced
1 or 2 clove garlic, finely minced
2 c thinly sliced mushrooms (shitake, crimini, white, whatever kind you like)
2 can(s) **golden mushroom condensed soup** see recipe for soup below
2 c beef stock (homemade stock is best, if you have it)
salt and pepper to your taste

Steps:

  • 1. ~~MEATLOAF~~ Pre-heat oven to 350^. In large hot skillet add EVOO. Heat on med-hi heat till shimmery~add onions and bell peppers. Saute' for 2 min or until soft. Remove skillet from heat. In large bowl break up beef; add eggs, soup or bechamel sauce, worcestershire sauce, bread crumbs, salt & pepper, and saute'd onion/bell pepper mixture. Work the ingredients together with your hands~if this freaks you out, wear disposable vinyl gloves. Do not over work mixture or it will be tough. Spray your pan w/cooking spray of choice. Form into 13"x9" pan, leaving a 2" gap between meat and pan on all sides. Place on middle rack in oven. Bake for 1hr & 30minutes if using metal pan; bake 1hr & 10minutes if using non-stick or glass pan. While baking meatloaf, prepare gravy.
  • 2. ~~GRAVY~~ In hot skillet, on med-hi, heat EVOO till shimmery. Add onions and saute' for 1&1/2 minutes or until translucent. Add garlic and mushrooms and saute' until mixture becomes brown and dry. Remove from heat. In large bowl pour in **Golden Mushroom Soup** and slowly add stock or broth , whisking all the while till smooth. Now stir into mushroom mixture in the skillet and s&p. Set aside. About 10 minutes before meatloaf is done, put gravy on med-hi heat till it comes to a slow boil. Remove from heat. Take meatloaf out of oven and drain if there is fat in the baking pan. Pour hot gravy over meatloaf. Return to oven 10-15 minutes. Serve with mashed potatoes and veggies of choice. ~~ENJOY~~

This is usually one of the 2 meat loaves that I make. You can use Lipton onion soup mix or one of the other flavors that they make. Even good with ground turkey. Leftovers make great sandwiches

2 lbs ground beef
1 1/2 cups fresh breadcrumbs or 5 slices bread, crumbled, i usually use oatmeal
2 eggs
3/4 cup water
1/3 cup ketchup

Steps:

  • Preheat oven to 350 degrees.
  • Combine all ingredients together in a large bowl.
  • Shape meat mixture into a loaf on a cookie sheet or 13 x 9 pan.
  • Bake uncover 1 hour (when center feels firm when pressed).
  • Let stand 10 minutes before serving.

This is a recipe I found in a Gooseberry Patch cookbook. I've modified the recipe a bit. Even my husband who doesn't particularly like meatloaf LOVED it. It can be frozen too!

2 teaspoons butter
3/4 cup chopped onion
1/2 cup red pepper
1/2 cup green pepper
2 teaspoons garlic, minced
2 eggs
3/4 cup ketchup, divided
1/2 cup milk
1 tablespoon Worcestershire sauce, plus
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
2 lbs ground beef
3/4 cup breadcrumbs

Steps:

  • Melt butter in large non-stick skillet.
  • Add onion, pepper, and garlic.
  • Cook Uncovered until soft.
  • Meanwhile, beat eggs with fork in large bowl. Stir in 1/2 cup ketchup, milk, Worcestershire sauce, and salt.
  • Add onion mixture, meat, and bread crumbs.
  • Mix until all ingredients are well blended.
  • Shape into a loaf and place in a 9x5-inch pan.
  • Spoon on remaining ketchup.
  • Bake at 375°F for one hour and 15 minutes or until meat thermometer reads 155°F.
  • Let stand about 15 minutes before slicing.
